Japanese Mabo Tofu in Minutes, with Ground Pork, Miso and Dashi

    Japanese Mabo Tofu
    3 tablespoons cooking oil
    4 ounces ground pork (or meat of choice)
    1 grated garlic clove
    1 teaspoon grated ginger
    2 scallions, sliced, whites and greens separated
    2 teaspoons miso paste
    1 teaspoon doubanjiang
    2 tablespoons soy sauce
    1 tablespoon mirin
    1 tablespoon sake
    1 teaspoon instant dashi powder, dissolved in 1 cup water
    12 ounces firm silken tofu, cubes
    2 teaspoons cornstarch dissolved into 5 teaspoons water
    cooked short grain Japanese rice to serve
    Place a wok or skillet over high heat. Add the oil and once it is shimmering, add the pork and break it up to just begin to color. Add the garlic, ginger and scallion greens and stir frequently.
    Once the pork has lost all of its raw color, add the miso paste, doubanjiang, soy, mirin and sake and simmer together, stirring occasionally. Once it has simmered for about 1 minute, add the dashi and stir. Slide in the tofu and cornstarch slurry. Simmer together until it begins to thicken -- about 2 more minutes.
    Add the scallion greens and turn off the heat. Serve with warm rice.

    Never tried the Japanese version of this. I’ll have to try it. My kids love when I make the Szechuan style version. Also, the seasoning of that wok looks gorgeous.

    I love that comment. "defrost in the fridge, not the counter" i started cooking in the food service industry, rather than at home, so that whole 40 to 140 thing is a trigger for me. i would rather cook from frozen than leave raw meat on the counter longer than necessary.

      @@dontpanicpantry haha, yep. I was the health dept back in the day. Picking up stuff cleaning stuff, sweeping, mopping, rotating... alas. Fox's pizza is gone, the taco bell is gone, the Wendy's is gone, which really makes it hard to give references. All my bosses are dead or gone, and there are a lot of people with better references than myself with bosses still alive and in the area.

    Pork is a piglet killed in a most cruel way AND as I live in Japan, I know Mabo Tofu does not include meat in its cooking. Shame!
