Lentil tacos with lime crema

- One of Lauren's weeknight standbys - cheap, easy, healthy and tasty.
**RECIPE, MAKES 8-10 LARGE TACOS / SMALL BURRITOS **
1 cup (200 g) dry lentils
1 small onion
1 small red bell pepper
1 ear of sweet corn (or 1 small can of corn)
1 4 oz (30 ml) can of chopped green chilies
1 heaped tablespoon (a 1.25 oz packet) of taco seasoning (look for one with starch in the ingredients)
1/2 cup (120 ml) sour cream (or vegan sour cream, or 150 ml real crema or crème fraîche)
1 lime
oil
salt
water
8-10 medium tortillas
Cover the lentils with at least an inch of water in a pot, put them on high heat and boil them until tender - about 15 minutes, depending on the type and how firm you like them. Drain them when they're done.
If you have real crema or crème fraîche, mix it with the juice of the lime. If you have sour cream, mix in the lime and enough water to give you a saucy texture. Season with a little salt.
Chop up the onion and the pepper. If using fresh corn, shave off the kernels. Put some oil in a big pan on medium heat and cook the onion and peppers until almost as soft as you want them, 5-10 minutes. Put in the corn, canned chilies and drained lentils.
Stir in the taco seasoning, and any additional water if it doesn't look saucy enough. Taste for seasoning - it might need additional salt.
Warm the tortillas, fill with the lentil mixture, and top with the crema (plus maybe hot sauce and/or cilantro). - Jak na to + styl

A: I dunno, with something like this I kinda think that's a distinction without a difference. Get whatever size tortillas you want and fold them however you want. This is certainly not trying to be anyone's "authentic" recipe.

Q: Why did you pronounce "crema" that way?
A: I've never heard an American not of Latin-American descent pronounce it any other way. I think if I said "CRAY-muh" or something like that I'd sound like even more of a pompous ass than I already do. I don't think you honor people by trying to fake their accents. People who watch my videos know I hold real Mexican cuisine in the highest possible esteem. It's easily one of the top 3 food cultures on earth, IMHO. This ain't real Mexican, and it's not trying to be - nor am I.
Hey Adam loved the video. Whenever I mention vegetarian/vegan recipes online, I get a whole hoard of nonsense about my "agenda" or protien. Why is that?

I opened CZcams last night specifically looking for veggie recipes and this was literally the first video in my recommendations. I made it today for dinner (at 3pm, because I’m 75 years old) and it’s delicious! And super simple! Thanks Lauren & Adam for helping me feed the vegetarian I share my life with!

For me it's just to ensure that I don't get something I react to. Couple of decades ago I was sick all the time. Tummy issues. When I did an elimination diet. ( You eliminate most food allergies food from your diet) I found that alot of convenience items caused issues. With from scratch no surprise stomach issues. It's funny I saw that packet and had a waive of yuck. Not because it's bad but because my experience with foods like that caused all kinds of discomfort. If I need cornstarch I use it. If I need cumin I use that. No uncomfortable surprise.
I really appreciate Lauren taking the helm on this video. The one thing that a lot of cooking channels fail to show is how normal people cook. I always try some seemingly simple recipe that ends up being WAY more complicated than it seems. This recipe is awesome because 1) it's easy for literally anyone, newbie or not and 2) it is something that I could reasonably whip up on a Tuesday without creating a huge pile of dishes.

I don’t think many people are actually “born chefs” maybe people are more in tune with what they like and what people like. I think cooking “skill” is really just knowledge and making it once already, everyone is a “normal person.”

Last night I made this for my family and they loved it! Myself being a vegetarian and them being meat loving omnivores I always try to get meatless recipes I think they'll like. After dinner I always ask them how the meal was and for meatless dishes it typically goes along the lines of "it was good/okay but I really missed the meat." Last night no such words were uttered. I try to make my dinners frugal, meatless, + yummy and this is that plus more. Thank you and lauren for sharing your recipes and I hope you do more meatless options in the future. Happy 2020

Ah, yes. The Sandra Lee Creed for ALL cooking.
Lauren actually has a big part of knife skills figured out from how she cuts the vegetables. A little tip for anyone who hates chopping: most of the knife skills you need is in the grip of the knife! Use your thumb and pointer finger to hold the actual blade while the rest grip the handle. It gives you much better control and makes you exert less pressure on the knife to cut stuff.
After you get your grip down pat its all up to muscle memory. Practice slowly and safely, the speed will come later.
All that is nice to say, but let's be honest. If you don't have have a fucking proper knife, nothing will really work.
I had all the ingredients and made it on my own just now. I used a red onion because I didn't have white and celery because it was going bad instead of bell pepper. It was incredibly tasty thank you for the cheap dinner Adam I wouldn't have been able to pull this one out on my own.
Just made these tonight; they're fantastic. Thank you so much for posting realistic, easy, fast, healthy and delicious recipes online! It's especially nice to have the video to elaborate on the recipe's instructions. As someone newer to home cooking, it's so much easier to develop skills when there's a visual element and plenty of description about everything. I especially liked the "knife skills" discussion; few other CZcams cooking channels are so geared to the home and so many showcase ridiculously-fast cutting that would be dangerous to replicate without years of experience.

I will however use my own Taco seasoning, because packaged seasoning contains wheat and my wife has Celiacs Disease. So that substitution and some corn tortillas, she'll be set.

I love how patient Adam is even when someone isn't a pro-chef, a trait a lot of more experienced cooks lack. It's also nice to see him examine the efficacy of a normal folks cooking, and recommend ways to enhance it further

I added a pack of stew meat and cooked it like steak with some salt, pepper, and garlic powder in a little bit of olive oil, then I threw in the vegetables with some water to deglaze in the fond. And I used a little more corn too, and a bit more taco seasoning to coat the extra stuff.
Turned out great... Made a LOT of taco filling.
I make this recipe every now and then and come back to this video to see if I forgot something.
Probably the recipe from this channel I make the most!
