Classic grilled cheese sandwich and tomato soup

    **TOMATO SOUP RECIPE, MAKES 6-8 BOWLS**
    1 large onion
    1 fennel bulb (you could skip this, or replace it with another onion)
    1 stick (4 oz, 113g) butter (you could use as little as 1/4 of that)
    pepper
    1 teaspoon celery seeds (very optional)
    1/4 cup flour (30g)
    2 28 oz (800g) cans of tomatoes (quality matters a lot, and I like Muir Glen in the U.S.)
    1 cup (237mL) white wine (very optional)
    salt
    water
    sugar (if the tomatoes aren't sweet enough)
    tomato paste (if the tomatoes aren tomatoey enough)
    olive oil, chili flakes and a garlic clove for the chili oil garnish
    Roughly chop the onion and the fennel bulb (reserving the stalks and fronds for later). Melt the butter in a big pot over medium heat and cook the onion and fennel in there for a few minutes until it starts to soften. Grind in some pepper and put in the celery seeds. Stir in the flour, and cook it for a couple minutes. Before anything browns, dump in the tomatoes. If the tomatoes are whole, you can accelerate their cooking by squishing them up. Stir in the wine, if you're using it. Simmer for at least a half hour, stirring and scraping occasionally to keep anything from burning on the bottom.
    For the chili oil garnish, put maybe 1/4 cup (60mL) of olive oil in a small pan and fill it with chili flakes. Drop in the garlic clove and heat it until the garlic just starts to sizzle. Leave it on low heat to infuse while the soup cooks.
    When the soup is ready, puree it and then add salt and water to taste - you will probably need a lot of both. Consider the addition sugar or tomato paste to enhance the flavor, or maybe some vinegar if you didn't use the white wine. If you want it super smooth, use a stiff spoon to grind the soup through a sieve, discarding the vegetable fibers.
    Serve the soup with a drizzle of chili oil on top and maybe some of the reserved fennel fronds.
    **CLASSIC GRILLED CHEESE RECIPE**
    Soften a lot of butter - maybe a tablespoon (30g) per slice of bread. Liberally butter each slice of bread on one side. Heat a nonstick pan over medium, and put in the first slice of bread, butter-side down. Lay on 2-3 slices of cheese (I prefer "American" cheese), and dust on a little garlic powder (that's not classic - just my trick). Put the second slice of bread on, butter-side up. Cover the pan with a lid or some foil and cook until the first side is brown to your liking. Flip, cover, and cook until the second side is done. (If you want your cheese to be very gooey, splash a little water in the pan before you cover it for the second time.) When both sides are brown, I like to uncover it and flip it a couple more times, just to get both sides hot and dry.

    Old fry cook here, you can melt your butter in the pan, then lay both slices down on that thin pool of butter and slide them around to soak it up, then lay cheese on one or both slices. When you put them together you’ll find the cheese has melted, even without covering. When that pool of butter is there, you can season it with garlic salt, etc. (Jane’s Crazy Mixed Salt is my fave for grilled cheese). Awesome soup recipe! Lauren’s right, triangles are always tastier. 😀

    Mom always buttered and grilled both sides of the bread, that's how I still do it. She served it with good old Campbell's tomato soup with the addition of a few shredded fresh basil leaves. Mom worked as a professional chef for a good part of her adult life but she knew a good short cut when she saw it.

    *Tip of mine for y'all to try:* I like to press (hard) the grilled cheese in the pan with a spatula. It makes the bread thin and crunchy all the way through. It stops the tomato soup from making the bread soggy.
    _Also try nutmeg in your soup, DONT OVER DO IT just a dab of it. Lots of pepper and garlic powder._

    Hi Adam, took me until now to try this incredible tomato soup recipe, and for any doubters out there, let me just say "WOW"! I used Muir Glen organic fire roasted tomatoes (fairly expensive here in Canada) to kick it up a notch, and had to use a whole can of tomato paste to achieve my desired sweetness. Not being a huge fan of cooking with wine, this worked out just fine. I left it unstrained for a more rustic soup that my son, who doesn't really like tomato soup, had two helpings of.
    Thank you for taking the time to make these videos. Although I've been cooking for my entire life, I really appreciate how you're showing folks just how easy it is to make delicious, budget conscious foods at home, much the same as Chef John and Mark Mittenberg.

    Back in elementary school, I would eat the sandwich first, and then drink the soup later. I never knew that you were supposed to dip the sandwich in the soup. I just thought it was weird when others dip it in the soup. It wasn't until middle school did I find out dipping it into soup was normal. It tasted so much better. Life changing.

    Or be a savage like me: Take the stick of butter and apply directly and generously to the hot pan in the shape of the bread you're using, then slap the bread on top of the sizzling butter. Move the bread around to soak up any remaining butter to fry the edges of your pan-fried toast. Fry two pieces at once like this. After one side is done to your liking, flip over and immediately add cheese between the cooked sides of the bread slices. Pan fry the two remaining sides of bread same as before.

      @@micahkessner5592 I absolutely do not enjoy heterogeneity in my food. I am very ocd about every bite being exactly the same, to the point where if a meal does have side dishes, I makes sure to get an equal amount of all of them in each bite. I get nauseous when I eat food that's too different in quick succession. I once threw up when I accidentally had a bit of crunchy burnt rice in my otherwise soft steamed rice.

    This guy is awesome. What a great idea to use, let alone, fennel and celery seeds in tomato soup but the white wine would put it over the top! Love how he explains the science of what is happening during the cooking process for each technique and each ingredient. He is awesome at explaining the "why" of why a certain technique works differently for different ingredients.

    If your grilled cheese has a fishy taste after grilling with mayo on the outside- its probably the oil that was used to make the mayo.
    Some cookies that used to have every few days started tasting a bit fishy - turns out they'd started using a different type of oil in the recipe - so it's definitely a possibility for why you have that fishy problem.

    I inherited an oven top grilled cheese maker my Mom always made me grilled cheese with when it started getting cold. I love it.
    Also, try butter on the outside and mayo on the inside with a mix of American cheese and Parmesan. Obviously not something you should eat often, but it's good.

    One of my favorite combos was Swiss cheese and the store bought sourdough that's wide and has a bit more of a tender crumb. That's almost 2 sandwiches as one, and I can cut it into sticks of sorts, kinda like toast soldiers, to dip in my tomato soup. Slightly sour bread and sort of funky cheese, works good for me.

    I like to butter the bread but add a nice thin layer of mayo in with the cheese. It really heightens the flavor and mixes well with the melted cheese giving it a nice creamy consitensy

    I made the soup today. Fantastic. One thing I might add next time is a Parmesan rind and then I would increase the simmer time from 30 minutes to a few hours. Would love to hear other peoples suggestions for layering in more flavors.

      Seems you guys are new to the channel.     To me, this is late autumn food. For one of those days that are just cold and wet, and you stay cold and wet all day at school/work, and get home tired and grumpy. You also have a sniffle and a light headache, since this weather has been going on for a week.
    My dad would then get home with his backpack filled with damp bread, ham and cheese, and declare grilled cheese and soup for dinner. We kids would be commanded to make a grilled cheese station, whilst he took care of soup.
    Me being the big sis, would plug in the grilled cheese maker, before slicing bread. My little brother would lay them out and spread on ketchup, then we added on cheese and ham. As soon as the grilled cheese maker was ready, I'd get that one started grilling contiously.
    In the meantime, older brother had been chased out of his den to make soup. This meant freeze dried veggie soup, since he hated both tomato and fish. He might add in some leftover or frozen veggies to make mum happy. Dad would have dissapeared to get a warm shower and dry socks, least there be complaints of the stench.
    20 minutes after dad got home, we would sit down and enjoy our warm, filling meal. Mom would get home as we ate, pleased that a warm meal with decent nutrition was on the table for her.     I actually use both butter and mayo. I use butter on the outside that will be grilled and a little mayo on the inside with the cheese. I really like it this way!

      oof. the second I saw our currency in that font with an image of cheese slices, I not only recognised it right away but had flashbacks to when I used to plan before a school what I would buy on the day of the school trip. or that time I was craving cheese so I went to check prices because I only had a limited amount of money to spend. turns out mature cheese slices are a thing.

    When i was younger, and just sort of living on my own and cash strapped, as a way to save money on going out i would have my girlfriend at the time come over and we would make dinner together. Neither of us knew how to cook so 9 out of 10 times it was usually just grilled cheese and soup, but it was always the best meal of the week and still a fond memory.

    When I do grilled cheese I do a mixture of roughly 75-80% butter and 20-25% mayo. Gives it just a hint of a tanginess and helps with crisping a but better.

    I love my childhood grilled cheese & tomato soup. As an adult I occasionally will make one, the other or both. Since I don't make either on a regular basis I don't have a stock recipe. This ensures that each time I make either it's a new recipe (to draw from for the next time). My biggest "hit" with grilled cheese started with onion bread. Like you I smothered both sides with butter (homemade with dairy from a friends herd). I then lightly coated the inside of 1 slice with sour cream and the inside of the other slice with spicy mustard. Building the sandwich was a piece of romaine lettuce, a few thin slices of Campari tomatoes and the cheese - deli white american, gouda and havarti. My mother, wife, sister and my best friend loved it.

    Wow... and here I thought I was all alone in the world for loving rye bread as my go-to choice for grilled cheese. Was my favorite even as a 10-yr old. Those caraway seeds and the aroma of rye when paired with the butter and the melty cheese... Entire lives are altered by this one flavor combo.
    Also, always terrific -- just plain old rye toast topped with mango (e.g. avakai) achaar.

    For the soup, I always go with the toppings that a place in Cornwall, UK does (place is called The Hidden Hut if anyone is wondering). They add basil oil, croutons and cheddar. Adam's soup tastes near identical to their's, with a few tweaks it will be there.

    The best grilled cheese recipe: sourdough bread (buttered on the outside), manchego cheese, quince paste, arugula. Stole it from a grilled cheese bar at a Whole Foods after it closed, it’s still one of the best things I’ve ever eaten!

    What I’ve started doing with my grilled cheese sandwiches when I have them with tomato soup is cutting them into ‘sticks’. Cut in half bilaterally and then cut those halves in half. Perfect width for single bites and maximal surface area dipping. The last bite of the stick goes on the spoon and is submerged and scooped up.

      As a kid my mom used to cut waffles that way. (Ego frozen waffles either choc chip or blueberry, butter, peanut butter, & REAL maple syrup)
      Everyone always judges the peanut butter but its delicious and should be tried atleast once.

      An "unusual" combination is toasted bread (multigrain preferably) smothered with peanut butter, cut into sticks as you mentioned, and hastily dipped in coffee (it works best with a little splash of milk in your coffee and maybe a teaspoon of sugar, depending on the how your day is going). The way the fats of the PB interact with the coffee is creamy goodness that is too good to discover.

    I think the fishy flavor is the oil in the mayo starting to oxidize. Kind of like canola oil (which contains omega 3s) after you’ve used it to deep fry. Canola is common in mayo because it’s very neutral.

      Mayo can be used in all sorts of recipes around the world. A good cook plays with their ingredients, not restricting themselves to a single recipe.
