For those of you who have never heard of smörgåstårta, it is basically a giant sandwich cake that's layered with different savory fillings and topped with mayo, creme fraiche, fish, and vegetables. It looks super cool and it's pretty easy to make!
This was my first time making AND tasting a smörgåstårta, and I was pleasantly surprised!

About the "Crayfish Party": The fishing season for river crayfish is August-September. Before 1994, it was forbidden to fish before the first Wednesday in August and stores were not allowed to sell river crayfish before that (not even imported) which resulted in "Creyfisch premiere" a big and important party in Sweden.
I cant imagine smörgåstårta without mayo in the fillings. Other than that, it seems yummy
The great thing with smörgåstårta is that you can basically make it any way you like
There are many many different recepies of Smörgåstårta. It's quite common for there to be a family recepie that get's handed down within the family. So there can be large variations every time you try someone elses. And it's quite common for people to brag about their families perfected recepie.
It seems like the "smörgåstårta" has evolved since I moved from Sweden back in the 80sand become "fishy", but the consistency has remained the same. I have a fond memory of while talking to an employee at a grocery store, I noticed someone shoplifting a well packed "smörgåstårta" by carefully hiding it inside his large leather jacket. When I told the lady employee, she said "Watch this!" and walked with a big smile up to the guy and gave him a big bear hug!!!
For any non Swede watching this, feeling weirded out by the concept of a savory cake, just imagine it's like stacking shrimp or egg salad sandwiches adjacent to each other to form a cake. Not really weirder than that. It's also worth mentioning that the spice "kummin" is actually caraway seeds in English, and cumin would be "spiskummin" in Swedish.
Kummin = Caraway Seeds
Spiskummin = Cumin
Yes I was really surprise the first time I saw this cake with fish on it! But when I learned that it was a savory cake and not sweet, I realized what a cool idea it was! By the way your CZcams name is hilarious!

It's just a giant sandwich with lots of the stuff us Swedes put on sandwiches. I don't like it.
I have my own variant with steak, lamb and pork with barbecue sauce in between slices. Don't think it qualifies as a smörgåstårta but who cares, it's savoury as all Valhallsmål.
You can also make a smörgåstårta with paté, roastbeef, cheese, gurkins...
The crayfish premiere on 7 August has its origins in a ban on crayfish fishing between November and 7 August. The day is the beginning of a festive period in Sweden, when we eat crayfish and drink schnapps. The origin of the cancer disc is the first decades of the 20th century. Crayfish were not eaten in large numbers in the farming community, but sometimes served as fast food. Crayfish Festival is one of the festivals most associated with Swedish identity. Traditionally, crayfish fishing begins on 7 August at 17.00 and thus the tradition that is usually called crayfish slicing. In 1982, the time for the crayfish fishery was changed to 5 pm on the first Wednesday in August. In 1994, the ban on crayfish fishing was completely lifted, but most people in our country still choose to start eating crayfish in early August. This illustrates that times are of great importance for parties and rituals.

I guess you already know. Its about harvesting crayfish and at the end of summer its a perfect time to catch them. And they are best as fresh as possible, hence we all sit down and eat… With alcohol of course:)
Back in the day before the pandemic when you could meet anyone outside your family for a party. Man those were the days.
About Smörgåstårta "Sandwich Cake": You can't do wrong !!! If you think it looks good and is beautiful then you have succeeded with the decoration, if not you have learned something for next time. And what you choose to fill it with is entirely up to you, if you just want different meat fillings then you have that, you want fish and/or seafood then you have that, if you want to mix meat, fish and seafood then you do that. If you wish, you can also make a vegetarian or vegan. So just start experimenting in the kitchen.
Good to know: That what is called “kummin” in Swedish actually is not “cumin” in English. What is called “kummin” in Swedish is called “caraway” in English. And what is called “cumin” in English is “spiskummin” in Swedish. ☺️These are two totally different spices. So probably you used caraway in your smörgåstårta - and not cumin (cause that would have been weird I think).
Yup! Good call!! There have been many mixups when it comes to these two over the years!

I LOVE SMÖRGÅSTÅRTA! But without shrimp. And not that dark bread... Never seen that before. Nor with rödbetssallad, but I love rödbetssallad so I gotta try that! Really weird smörgåstårta actually... it's missing a lot of classic stuff like leverpastej inside and ham, cheese, cucumber on top. But, a sandwich cake can basically be anything as long as you do it in this fashion. I do hope you get to try a more traditional one though.

Crayfishing have been very regulated and the party happened after the second wednesday in August. Regulations does not exist anylonger but the party tradition stil exist because it's another fun gettogether to get drunk. The way it works is, not buying crayfish in a grocery store but, fishing yourself by swinging out cages with lure in them in rivers or lakes and check them after 2-3 hours.
As for smörgåstårta there are several different types. I prefer
Ham and cheese
Beef and tomato
Tunafish and egg
Turkey and roastbeef
All really Good!

Smörgåstårta har jag gjort många gånger. (Have made mamy times) Det är gott å jag brukar ha smetana eller creme fraisch, gravad lax, svart kaviar, räkor och dill) smetana, gravad lax, shrimps, black caviar and dill! Great video!
Small tip also for this video. When you essembled the cake cut the sides with long knife so it is easier to spread coating next day and there aren´t such big gape to fill or hide. There comes good opportunity to get little taste of the cake for advance 🙂.

Naw fish and prawns on a smörgåstårta is not for me, although I’m Swedish. Rather chicken, mayo, avocado between white bread, covered in creme fraiche and cucumber plus cherry tomatoes on top and some nice green lettuce leaves to cover the sides. Although I absolutely love warm smoked salmon served cold, I just don’t want it in a sarnie. I’ve never seen a smörgåstårta with beetroot. I would imagine that would taste too sweet. Beetroot salad is delicious with meatballs though and is especially loved on our table at Christmas time. For future cakes, don’t make the mistake of mixing fish and meat in the cake like some people do over here. The cake generally tastes better if you make it either a fish or a meat cake, or why not veggie, rather than mixing the flavours. Less is more also when it comes to vegetables. Make sure you like the veggies together in a salad, if you don’t, they will not likely taste good together in a cake either. Did beetroots and radishes go together? Good job though for being your first smörgåstårta.

There are so many different ways of doing this "cake" and I am sure that every family that makes Smörgåstårta has their own recipe.
It is quite strange that it is called a tårta - and yet - not associated with anything sweet at all...
...but I don't know what we should call it instead. Sandwich Tower??
It was quite fun to hear you use the word "frosting" when you applied the topping... all of a sudden it didn't feel like a Smörgåstårta anymore but more like a cupcake.
Actually... I was very impressed that you made the fillings and put it together in the layers on one day - and finished it the day after!!
So many families don't understand the NEED for that... and serve it as a very DRY and BORING Smörgåstårta.

Not sure why. But when I see the word Smörgåstårta. I think Smorgasbord cake. But something is telling me some fresh dill might be good on that.
I never really liked smörgåstårta, except the one that were built like a subway sandwish :P, meaning lots of meat tomatoes, salad etc with not much of the wet stuff

@@KimberlySorce Your smörgås tårta did look nice and I bet it was nice to, the only thing I meant about the slices of cheese was mererly for decoration. You do your own smörgås tårta after your own taste.
You have to decorate it mutch better, with ham, salmon, kiwi, shrimp, fishrom etc. And you can even use mayonnaise and pate (leverpastej in Swedish) etc. when making it.

Smörgåstårta is one of those 'use what you have at home' -dishes, so not a single one will be the same and there is not just one way of making it.
I think it looks great and I dont even eat smörgåstårta.

No No No not grov bröd, Thats not the way to go.
Well done, but it is not made in the right way, according to me. Dark bread, that is not good - it does not get yummy when married to the other stuff. Letting the base rest in the fridge over night, that is good though. Then everything inside is supposed to "marry". The day after, you decorate it, but never ever with complete crayfish. It is supposed to be cut and eaten without any problems, and crayfish with the shell on - that is a problem. A good thing not shown here is that you can make vegan, vegetarian, meaty or seafood variants of the smörgåstårta. BUT. Some kind of mayo needs to be in there! There is vegan mayo too, just get that if you are vegan.
I think it's insanely disrespectful to smoke a cig at a dining table with guests around.
I am sorry but your Smörgåstårta aren't even close to traditional one. I can understand it's confusing and not easy, please I wanna see a Smörgåstårta 2.0 or you really trying out a traditional Smörgåstårta or bake it.

@normnorm If you in a way are making a cake to show some food that are a trademark for a country you should definitely do it traditional. What people eating are up to them. To show traditions you have some sort of responsibility not to manipulate to be something else.
But vegans can definitely enjoy their Smörgåstårta but it's not what a Smörgåstårta are about. A smörgåstårta drowning in things with face's.
Same thing if you have a Smörgåsbord and you put hot food there, it's not traditional.
