Li Hing Pickled Mango

    2 or more large green mangoes, peeled and sliced into long, skinny and thick bite-sized pieced
    1 cup rice vinegar
    2 cups water
    2½ cups light brown sugar
    3 tbsp. Hawaiian salt
    2 tbsp. Li Hing powder
    Red food coloring
    In a small pot boil 2 cups water, turn off heat, then add the 2½ cups light brown sugar and salt and stir to to dissolve it. Add more water if needed to loosen it up. Remove from heat and add Rice vinegar, Li Hing Powder, and just a few drops of the red food coloring, to the point where it has a dramatic red color to it. For the Li Hing powder, go by taste.
    In fact, go by your own taste with EVERYTHING. If you want it more sweet, add more sugar. More acidic, add more vinegar. Use that recipe as a basic guideline and go from there. Once the finished Li Hing Pickle Mango "juice" is completely stirred and incorporated, let it cool in the fridge (or quickly in the freezer). Place peeled and sliced pickled mango in an appropriate sized jar and tightly pack it in to displace as much volume in the jar as possible, then pour cooled Li Hing Pickle Mango "sauce" into jar with green mangoes. Enjoy!

    Yes! Whenever someone tells me they dont like mangoes I tell them to taste one straight off the tree & then get back to me lol. There is nothing like FRESH! Enjoy the mangoes for you & me :)

    I love pickle mango! My mouth waters when I think about it! The pickle mango I pick up by Kipapa Gulch has the li hing seed inside, so I think I'll substitute it for the li hing powder when I make this.

    I haven't had this in ages. My favorite thing to do is to take a leisurely drive and stop at the roadside stands people set up and buy pickled mango and eat it all up as we drive around the island. You should try it with shoyu, vinegar and pepper (especially good with common mango) though it may be kind of rough if you don't care for vinegar. But it's soooo ono. You are making my mouth water and now I am craving mangoes!

      +islandgirls When I was growing up, we used to get bags and bags from friends and family. Now, not as many trees, or not many people sharing like they used to. I have to actually buy my mangos now, but I'm picky HA!

    The ripe ones should make Shoyu & Vinegar with it :) I make mine with Soy Sauce, Vinegar, Brown Sugar, Black Pepper and a little bit of Sesame oil.

    Interesting recipe! I have never heard of Li Hing. Will have to google that. I do liked pickeled vegies, but have never done it with fruit either. We have good mangos in our store...$1.25 each. I think that is a good price and they are so delicious!

    Ugh what I would do for a good mango right about now. The ones we get here in NY do not compare to the mangos back home in the Caribbean & im sure Hawaiian mangos too

    that does not look very appealing to me, but i have never tried it so who knows. i thought i would hate pickled eggs and i enjoy them so i should give this a shot :)
