The Division Bell was developed by Phil Ward for the opening menu of his mezcal bar, Mayahuel, in 2009. Ward worked at prominent NY bars including Flatiron Lounge, Pegu Club and Death & Company before opening his East Village mezcal bar. He's made other well known modern classic such as the Oaxaca Old Fashioned ( • Oaxaca Old Fashioned ) and the Final Ward ( • FINAL WARD Cocktail Re... ).

I just prepared one. I loved the kick of aperol at the end after the smokiness of the mezcal

Fun fact, the division bell is also the term used for the bell rung to summon members of Parliament to vote in the U.K.; they have 30 minutes from the signal to be in either the yay or nay lobbies for a given vote to be counted. The bell rings across the entire Palace of Westminster, adjacent office buildings and even the nearby pub! Our MPs are a bunch of booze lovers, that’s for sure…

Learned this one from Dave at Booze on the Rocks a few weeks back, and I've made it a few times since then. A new favorite of mine for sure.
On the May 18th episode of Vinepair’s Cocktail College podcast featuring the Division Bell, Phil Ward himself is the guest, and he goes with 1.5 oz of mezcal in his Division Bell. Rest of the spec is the same. I’ve made it and thoroughly enjoyed. I also love mezcal lol!

I’m not a fan of gin so mezcal is a plus. This has sweetness so believe I will like it. A definite must try. Thanks for sharing.

This might be my favorite new cocktail from this show. I love mezcal, and I've been looking for something new to use it in. This is perfect. Bonus, the wife doesn't like mezcal, but she loves this! Thanks for sharing!

It's my new favourite too! Up until 2022 I hated Campari/Aperol, until I discovered the Jungle bird, but now I love both. Up until 2023 I hated Mezcal until I discovered the Division Bell, and now I prefer it over Tequila. My new favourite cocktail contains two ingredients that a couple years ago I genuinely thought were disgusting!

Haven't tried but the Naked and Famous (sub yellow chartreuse for maraschino) is one of my favorite drinks. Maybe even THE favorite

Good call changing to orange! Otherwise you could acquire a grapefruit bitters too..
I prefer this over a Naked & Famous
Would Campari overwhelm the drink as a substitution? I have both, but usually prefer a stronger bitter appetitive.

If you're going to do a side by side comparison of those drinks, include the Oaxacanite. Very similar, and better than this one imo.

I doubt it.
It couldn't hurt to try- especially if your more of a tequila fan.
It just won't have the same smokey profile but could be delicious 👌 let me know if you do try it
@@StevetheBartender_ I'vre tried it. It's good and I love how the Maraschino blends in the cocktail and the Aperol with it's fruity notes...but it's not - making the face you did - good 😃 The problem is that it's hard to find Mezcal in my country. I've never tried it before...

My preferred spec is slightly different:
- 1 oz Mezcal
- 1 oz Aperol
- 3/4 oz lime juice
- 3/4 oz Maraschino liqueur
Do you find going a bit heavier on the maraschino sweetens it up a bit?
Or balances out better for you?
@@StevetheBartender_ yes completely, I usually find that mezcal drinks need a little extra sugar to balance out their dry/smoky taste. Or slightly less lime juice. For example I use 2/3 oz lime juice in the Naked & Famous, and leave the other ingredients at 3/4 oz. Maybe it’s just me. Thanks for sharing the video.
I enjoy Aperol and Luxado cherry. But I'm more a Roger Glover era Pink Floyd kinda guy. Sorry not Sorry.
It’s worth mentioning that, while this can be a relatively expensive drink per oz., it’s very good, and the specific branded ingredients are actually worth it in this case. Good mezcal can be kinda expensive, and there are more economical cherry liqueurs than Luxardo (maraschino), but they are both big value adds in this drink. (Aperol too, but I feel like that’s reasonably inexpensive, at least where I live).

A few years back I refused to fine strain too until peer pressure got to me.

Hot tip: Bruschetta has the hard K sound too.
You have a new camera, and your audio quality has improved as well. However, the light source camera left is too hot. You are getting a reflection off your forehead - it reads as a hot spot. Also, it cast shadows across your face.
I have been watching for years.
Nah, no new camera - I’ve had this one for quite a while.. and the audio hasn’t changed very recently.. the only thing that has changed is the introduction of the rim light (over my right shoulder). The shadows are intentional and I prefer it over even lighting. Thanks for the feedback.
@StevetheBartenderAUS that's interesting. The image quality this week looked like 4K UHD, and the audio was incredibly clear.
One trick for dampening reflection off a head is to brush it with talcum power. Use a blush brush, and a few gentle touches will do wonders for a hot spot.
This is not criticism at all.
I love what you do. Your friendly, unpretentious videos helped me get started on my cocktail journey during lockdown.

@@StevetheBartender_ Haha, I feel I'm mostly equal opportunity, but the Aperol (or Campari) are not winners for me. That said, I'd be lying if my collection didn't sport a large amount of scotch.
