    *when using a NEW MOKA POT always make a couple of pots and toss them, this will prepare your moka pot (as the first pot or two will taste awful)*
    Spilling all the beans... I meant... the secrets, on how to make a perfect and delicious “espresso” at home with the classic Italian Moka Pot. Yes I know this is not the technical espresso you get at the bar from the high pressure machines. This is our home espresso, il nostro “caffettino”!
    From the bean, the grind, the water, the roast, the do's and the dont's, I am giving you all of the tips from Nonna and her always and consistently perfect espresso!

    Growing up in Long Island in the 1960s, our next door neighbors were from Italy, as a young kid I would go over to their house and they would always feed me (whether I was hungry or not, lol) I would sit on one their laps at the table and they would let me sip their coffee (expresso) before they drank it, they all drank it without cream or sugar, I must of been 6 or 7 when they gave me a whole cup to myself, I was so proud. They gave me my love for good food and drink, always to be shared and enjoyed with family and friends. They're long gone, but I still think of them.
    Thank you Annalisa for taking the time and effort to share the correct way of making Italian coffee, you're so right when you say ritual, aroma, memories and home, I think enjoying the simple pleasures in life is the secret to true happiness.

    I find that lighter roasts truly have more flavors than darker roasts. You taste more of the coffee seeds' natural flavors and less of the roasted or burned flavors.
    I actually never enjoyed the flavor of coffee until I tried a medium light roast with floral, tea, and coffee like flavors. It was very sweet, fruit acidic and lighter than any coffee I had ever had before.
    Just a thought for anyone who doesn't enjoy the "standard" coffee flavor.

      It’s amazed me how people have so much different taste of how they like their coffee. And coffee has all of its variety to please each individual different taste all the same

    You had to alert everyone that if they have a brand new Bialetti (everyone in Italy has a Bialetti Moka 😊) it's better to threw away the first two, three coffees they make. The first coffee of a new moka machine is ALWAYS disgusting! 😅 Your face is so satisfied and proud in this video! Lovely 💕

      If only Mr. Bialetti would know...at least twice I forgot I had my Moka on the stove and coffee boiled for an infinite amount of time...when I realized (the smell was so strong and yeah actually strange 😂) all the plastic parts of the Moka were completely melted...can you imagine how strong and strange was the smell? 😭🤢😂

    Thank you for making this video. Both of my Grandparents have died, joining my Nonno and Nonna, and I find myself turning towards the things I remember that they loved, their traditions and they’re hobbies. I’m going to make and drink a cup of Italian coffee that they would have all enjoyed from the espresso set my Nonna gifted me and Italian cookies. All while sitting outside with the lovely fig tree my Grandparents gave me in my garden. When my Mom visits again, this’ll be what we can do together to remember the good times.

    I usually pour in room temperature water.
    When I wait for the eruption, my coffee usually comes out bitter. Therefore, I take off the gas a little earlier. I don't let him overcook.
    Medium roasting, medium grinding.
    When I tried to pour hot water, the coffee often came out bitter, without any acidity.

    I love making a milky kind of coffee by making the Moka espresso, and then I heat an equal amount of milk in a small pan and then 'froth' it in a single serving french press, then the two are poured together into a straight sided cup from a height of about 6 inches. Yummy :)
    Once you've mastered the Moka pot, Turkish/Greek is really fun too!

      Whenever I'm in the Middle East it's Turkish/Arabic coffee or nothing!! I once ordered coffee in a restaurant in Israel and received a tepid, bland cup of coffee and when I asked what it was I was told "what you ordered, nescafe, coffee" Regular coffee is nescafe, you have to be specific, espresso or Arabic coffee...It's like Xerox or Kleenex, the brand name has become the generic name of the object... learned my lesson!

    My husband and I have our own Bialetti espresso maker. He prefers Illy Robusto espresso and I prefer Illy medium roast espresso. It’s such a lovely morning ritual. Thanks for sharing your way of preparing the espresso and the various espresso beans that you prefer. Lovely video.

      when you first get your Moka, make a couple of pots with a cheap coffee as you will throw it away (the first 2 or 3 are just to prime the machine and don’t taste good), after that use the good stuff and enjoy!

    I have a Bialetti who is 40 yrs old and still going strong, I just changed the gasket. My aunt told me to clean the moka once in a while with baking soda, then wipe it dry.

    Beautiful. This is how they make it Puerto Rico. At least one of the ways. My grandma always had this in her stove. 💗 It’s funny she would just drink black coffee, most have caffe con leche ( with milk). And I told my daughter couple years back to freeze the left over coffee because she makes her iced coffee and it’s just so watery lol Great minds think alike for sure! ☕️

      I too have been tamping down the grounds, which I will now stop. Otherwise, I've been doing it right. Over the years, I've had to replace the Bialetti a couple of times due to melting the handle!

    Grazie mille Annalisa! We have a Moka but, when we have made the espresso in it, it was never quite what we know it to be when we enjoy it in Italy. This was a really good instructional video on how to do it right. We'll give it another try. There's nothing better than a hot, delicious espresso first thing in the morning. When we were in Rome on our last visit, we stayed in a lovely apartment right near a tiny little bar that served amazing espresso and cappuccino and wonderful cornetti. I could hardly wait for the sun to come up so we could enjoy our morning coffee. A presto! 😋❤️

    That was so sweet. Perfect instructions for moka pots. There are quite a few clowns on CZcams advising that you preheat the water (to save time? It's the same in the end!) or to add an Aeropress paper filter, which ruins the flavor by absorbing flavorful oils. You have it right, the real Italian way, thank you!

    Thanks to you Annalisa, I can once again enjoy my coffee - black or milky! After watching so many CZcams videos on how to use the moka pot, I was almost on the point of throwing the pot away as I didn't see the point of pre-heating the water or running the pot under cold water etc to enjoy a good cup of coffee. I just wanted an easy way to make good coffee. I follow all the steps you mention except for two. I don't use filtered water, just use water from a carafe of tap water left at room temperature and I also use Lavazza organic coffee (for Amazonia). The results have been amazing!

    Ooohhhh. That was fun I really haven’t had espresso coffee. But I like the ritual. Because of the ritual alone I’m going to buy a pot and start to have an espresso with friends. Americans have a coffee on the go,run. The Italian way has you slow down take time for relationships then go to the next step for your day. Really enjoyed your video, as usual.     A very honest and not pretentious video about how to make a great Espresso.
    My new afternoon ritual is to make myself a Ciococcino… I believe I made that up not a Chococino but a Ciococcino!
    I take a square of at least 70% dark chocolate or a Lindt truffle ball of 60% dark chocolate and make it melt in an espresso cup. I pour the espresso coffee in that same cup mix it well and top it off with 2 tablespoons of warm 35% whipping cream (or heavy cream).
    It tastes amazing.

    Thanks for your take on the stove top espresso maker…and happy to see you use the Bialetti. I have a good collection of Bialetti’s and find they are superior to many other brands….no issues and no drips! I never thought of stirring just after, and before serving so I thank you for that!     I had a chance to use moka pot at my parent's house during christmas. They didn't know how to use it cause they prefer their coffee simply brewed in a cup but I personally hate the taste and feeling of "non filtered" coffee (like with grounds in your cup). Now as I have time I was simply curious how to actually use this device. And just wanted to tell you how happy I got when you said that one of your favourite coffee is the one that I personally looove (Lavazza Crema e gusto). ps I adore your vibe, so calm and happy, it's relaxing to listen to you :>

    So sweet, thank you. I have my own ritual of a vegan latte (made with oat milk) every afternoon around 3pm which I love - it is so nice to take a true (albeit) short break and it gives me energy during the afternoon slump. But I'm going to try the coffees you mentioned, give it a bit of Italian flavor (literally!)

      No, it won’t work. Make it and put the leftover in ice trays and make coffee ice cubes for when you make ice coffee!✨

    I just bought one and I am trying to get it right. I have never liked coffee, but I think part of it is as an American, I think our coffees are too much in quantity. A little espresso is just the right amount for me. I have noticed that all of the non-Italians suggested filling the reservoir with hot water, but none of the Italians do. It's funny that over a few times of making it, the ones I have made with hot water were SUPER bitter which is the opposite of the reason people were saying to heat it first.

    Hello , I found a different way to make my moka , in a very stable way , day after day, so I want to share it with everyone
    I only use Sidamo Ethiopian, with a coarse ground ( same as with the french press) . I used hot water ( here the water is. Very good).
    I use the same amount of coffee as you do. As soon as the bottom of the coffee pot is covered with coffee, I take it out of the stove, till it doesn’t flow anymore. Then back on a gentle to finish , I stop again when it is gurgling again. I get a very nice flavour , and a taste that is reminiscent of the Turkish , or Greek coffee. Pardon my broken English! Oh yes, and I only use a 3 cups Bialetti. Bernard.

    I've had my mokapot for about a year; it makes a good little cup of coffee. I got a few tips from you that I will try. I will try filtered water, and stirring it in the pot before I serve it. Also I will stop washing it out with soap, and just use water. It didn't dawn on me that the patina of coffee might help the taste. I also will keep the lid closed; I had been doing it with the lid open so I could see how full it was. Thank you for your advice. I love coffee. I have been using Starbucks ground esspresso, but I will try the Italian brands you suggested.

    Coffee is important as well, I do have the same as you with illy, I love it and have been using it for a while.

    Thank you so much for this! I have another brand of this type of coffee maker, and I followed your instructions in real time- I got a perfect, strong cup of coffee (finally!) My grandfather used to spend a few hours every week making very super-strong coffee on his little machine. He called it "essencia", and he would fill up four cleaned ketchup bottles with it. When we wanted coffee, we would put some essencia into our cup and add hot water. I liked to make mine very strong. Now I can have that memory every time I make a cup. :)

      Turkish coffee or Armenian coffee as I prefer is very easy to make, you do need the irbik or jasveh. They are available on Amazon. You will need coffee as well the coffee mentioned in this video is good but you will need to grind it a bit more until it is almost powder consistency.
      To make the coffee fill the Demi-tasse cup to the top with room temperature bottled water and pour it in the jasveh add about a teaspoon of sugar to the water then with the same spoon a heaping teaspoon of coffee. Leave the coffee to float on the top of the water. Place the coffee on the heat. Medium heat is best. As the water heats up the coffee will start to mix and dissolve when it is completely incorporated into the water give the coffee a good stir from then bottom then let it finish. You will see the coffee climb the sides of the jasveh and gather towards the center. As it reaches the center it is done. Immediately remove from the heat. You can now pour. Each cup should have a layer of the coffee foam on the top, so with the teaspoon divide it between the the cups then gently pour the coffe to fill the cup. If there is coffee left in the pot that is okay- it is the jasveh’s portion.
      The coffee can be made black but traditionally it is sweetened, medium sweet is best.
      For multiple portions just increase the coffee water and sugar for was cup. Three coffees - three demitasse of water, three teaspoons sugar and three heaping teaspoons coffee.
      Lastly- never ever turn you back on the coffee while it is making- it will overflow and make a horrible mess. Enjoy what is arguably the best coffee in the world equal to the Moka.

      For Anna: if your Bialetti is brand new, Follow this tip as well; when you first get your Moka, make a couple of pots with a cheap coffee as you will throw it away (the first 2 or 3 are just to prime the machine and don’t taste good), after that use the good stuff and enjoy!

    I really appreciate your video. My husband mentioned the other day how the lattés he's been ordering haven't tasted that great. I thought I would look into an affordable way to make it at home and found your video. I immediately purchased a Bialetti 3 cup, Illy Classico and made his favorite latté at home. He was thrilled with the result! It tasted so much better than at our local coffee shop! I also enjoyed the process of making it. I don't think we will be going to a coffee shop for a long time now.     I just came back from Italy and I had the best coffee there at Sant’ Eustachio il Caffe in Roma. I’ve always used a moka pot (in Puerto Rico we call it greca), but I’ve been using it all wrong 🙈. I fill it up with water all the way and put it on high heat. I’ll try low heat and the stir to see if I notice the difference. Thanks for the tips!

    Dear Annalisa, awsome video. I bought a bialetti moka pot a few years ago and made coffee in it but it eas too biter for me. I supose I did something wrong. Now I gave it a new try and after I saw this video, and made as you show, I taste my coffee diferent, much more better. Than you revive me the old moke pot. It is a real good tool to apreciate coffee as it is, black and wonderfull.
    Lavazza is my favorite too. It is very affordable and taste amazing.

    This is my coffee method as well, I have a pot in every size! I never use soap on it either, never was told that but somehow knew it instinctually. I drink this coffee all day long, I am a true addict, but I can not drink the regular kind of coffee anymore. Thank you for the other tips, I always bring it to a boil quickly, I will try your way.
