Next Time, don't use parchment paper only for grating cheese on it and then throwing it away! Use it again or better grate the cheese directly into the bowl. Consider the environment and the thoughtful use of things.

Props to the chef, mixing pecorino and parmiggiano/grana is a great idea if your pecorino is very salty. In Italy you can get Pecorino romano at the correct level of saltiness so I use only Pecorino

To clarify: carbonara with spaghetti is a no go for traditional carbonara, instead use rigatoni, because it can contain the guanciale, etc
I LOVE that chef Boylee used Luciano’s method. Big ups
Alberts pasta looks more flavoured(because of the extra ingredients), I’m sure it taste maybe a little better but I prefer the “correct” way. Never heard of carbonara with pease, I love authenticity too. I choose Kevin even though I’m sure albert is a genius in his own way. I appreciate your “twist” - american way.
@imadepooh Yes, that’s what I said. I like Gordon Ramsay “tweaks” for example. I prefer the authentic way. But I’m not against little “tweaks”. I do them too, when I cook. Like put my fingerprint on the dish.

from a italian, in guanciale you have to cut out only the orange part, the black part is pepper and become so nice and crunchy after cooking

peas aren't traditional, but it brings a nice color and sweetness to the dish - ditch the cream & stick with egg yolks, cheese, fat and pasta water for the sauce
