Use the pork belly recipe , turned out really well , I am going to use the cranberry as well this year , got a nice gammon in the freezer some outdoor organic raised pork . Going to poach it with onion / carrot/ celery/ star anise/cloves ... then slice skin off and roast it off ... haven’t decided what to put on it , probably marmalade ??? Any comments anyone ?? Suggestions ???

Shit i need to have christmas dinner in the uk. Stuffing is 98% meat compared to this lack luster shit we eat in the US.

Yeah, often stale cornbread is used. And some call it "dressing" at least here in the south.
"Dressing" usually when you don't actually use it to stuff the bird.
Me, I make a sausage and chestnut stuffing that's just fantastic. Yeah, there's bread in it, but I also use "artisan" bread cubes from a local traditional bakery, so even that's pretty tasty.
But that's for Thanksgiving. I'm making a standing rib roast with Yorkshire pudding for Christmas this year.
Instead of bitching about it on the internet, why don't you just use a different recipe? In this day and age, you can find millions of recipes online, plus no one is holding a gun to your head forcing you to keep eating the same "lack luster shit" year after year.
