MUNCHIES: Chef's Night Out with State Bird Provisions

State Bird Provisions, the wildly successful San Francisco restaurant birthed by chef/owners Nicole Krasinski and Stuart Brioza, is hands-down the most exciting restaurant we've ever filmed in; watching them open the doors for business is like the scene in The Wizard of Oz where they let Dorothy into the castle. When you walk inside, you're presented with a barrage of carts topped up with the most delicious assortment of appetizers and cooks circling around with trays heaping with incredible food that was prepared just seconds ago in the open kitchen. This dim sum/cocktail party vibe was so great that Nicole and Stuart had to pry us away from watching the spectacle so that we could go to their favorite places to eat, like Ramen Shop in Oakland, where we sampled most of the menu and took down a good portion of the Japanese whiskey behind the bar, and Amnesia in the Mission district. We ultimately headed back to State Bird Provisions to watch Nicole "roll the shit out of the roti" and Stuart serving up his favorite late night dish, oxtail curry. Enjoy.

This place is rocking it out of the park. "Tapas" concept is not meant for this kind of volume. It is a miracle they are able to maintain their high quality plates.
So many comments about people complaining about this person being boring or that person being hipstery or this other person being annoying in some small, silly way. Am I the only one who watches these things for the food?
For some reason watching chefs drink and eat food always entertains me.
I've been to Ramen Shop a number of times and I have to say it's the only hip restaurant I've been to that was worth the money. Superb ramen every time, and their pickles are delicious. Awesome Japanese Single Malt selection as well. My sample size on hip restaurants is small to be sure, but I've been to enough to know that Ramen Shop is one of the real deals and makes me hungry to try State Bird.

This is one of these episodes that I really enjoyed a lot.
State Bird Provisions is the best. We went there twice in a week; we loved their food so much and Stuart is just the nicest person ever and we loved his staff. Everyone is super dedicated and passionate about food.
SF bay area is just awesome!
Love the style and concept. It's so obvious how amazing the flavors are, to see Americans using kimchee and fermented elements as flavoring agents shows incredible evolution in the American style and pallet.
Growing up in the Bay Area we have so many different cultures and food here it really like no place else.

What a great series! Have a few drinks while watching these pros and I get some great ideas to use in my own kitchen. I love that smoked trout quinoa, but I'll use salmon 'cause that's what I have. Thanks for the entertainment and the good ideas!

Seven years late to the game but of all the cno I've seen, this one looks like the one I would go crazy for. It's 3 am and I may or may not have smoked some gas weed, so I may or may not have the Munchies! I lived in Austin Texas for 20 years and got to know a lot of the chefs from the divine independent restaurants of that time.

Because it's the -hipster- "in" thing to do. To call others hipsters means you're cool and unique as you are rebelling against something that has become mainstream.

Seems like a lot of their recipes just rely on the ingredients to work. Of course a pancake would taste nice if you put umi over it. They just combine a lot of different foods from different backgrounds and cook it that way.
