Level up your sausage casserole with one SIMPLE trick

  • A proper sausage casserole is solid hearty comfort food, perfect for rainy days, sad days or just filling your face days. Obviously it stands to reason that great sausages make a great sausage casserole, but you can use whatever sausages you like! There is a trick though that will elevate your sausage casserole above all others, and I'll show you how.

    To make my sausage casserole you will need:
    Serves 4
    ►8 thick pork sausages
    ►4 med sized potatoes
    ►1 med sized onion
    ►3 med sized carrots slices thinly or 1 small tin of carrots
    ►2 bay leaves
    ►3 small cloves of garlic or 2 large
    ►1x400g can of plum tomatoes
    ►500ml of chicken or vegetable stock
    ►Splash of red wine or water for deglazing
    ►Salt & pepper
    ►A little oil or fat for cooking
    Serve on it's own or with a side of veg such as green beans or broccoli.

    Video quality is proper good these days mate. The lighting, camera, bodycam, etc. is working really well, esp since moving to your new place. Makes your channel look a lot more professional without being too polished.

    Hey Adam,
    There are a couple of reasons whole tomatoes will taste better than chopped (including quality of produce) but the main one is that chopped tomatoes have firming agent added (usually calcium chloride)
    Chopped tomatoes need this or else they will break down when pasteurised during the canning process
    However, chopped tomatoes are useful when you want those chunks to remain through a longer stewing process

      @@Adam_Garratt will do but having some scones with jam and cream so will wait till this evening to cook the casserole but with a scone do you jam on top or cream on top ? I always jam on top as I believe any other way is just wrong

    I cooked a sausage casserole this week I put a tin of green lentils in too (as they had been in the cupboard for a couple of years ) what a fantastic addition I used Cumberland sausage from the butcher as I live in Cumbria not those imitations ones from the supermarket 😎😎😎

    Australia Saturday 29th 6.30pm...Hi Adam...made this for tea today...absolutely scrumptious...it was everything I thought it would be like and taste...it is definitely going on our "make it again" list...and now I won't have to resort to boxed sausage hot pot with goodness knows what in the seasoning packet...yeah just loved this meal of yours...I didn't make it with wine just water as you said and I cooked it in olive oil not lard and I just used organic diced tomatoes yet still it turned out thick like a hotpot...so impressed can't wait for our winter to fully kick in so I can make this on a dark; cold & rainy night...try it everyone it's as good as Adam is saying

    Fabulous tips there Adam.
    You're absolutely right about the sausages going soft when overcooked.
    Squeezing plum tomatoes reminds or the lyrics to a Led Zeppelin song.
    I prefer to use canned Cherry tomatoes. Without too much vigorous stirring during cooking, they hold their shape rather well.
    I've saved this video's recipe to my cooking library.
    The wide angle footage from the body cam is good. A great idea 👍

    I love sausage casserole. I stick some pre-fried cooking bacon in mine at the carrot/potato stage, and a teaspoon of smoked paprika. Completely agree about putting the sausages in at the end. This is also a banging slow-cooker recipe 😊.

    This looks terrific Adam. I have all the ingredients so can try it over the weekend. I remember you did a sausage stew maybe a year ago which was fantastic. That was one that was done on the stovetop. And I think you did a Spanish style casserole with meatballs & cannellini beans? I hope i didn't just dream that up.     Looks great Adam , how long in the oven before you took the lid off ? As you put it in with the lid on and then when you took it out to put the sausages in the lid had gone. 😋👌🏻

      Yes sorry forgot to mention. I left the lid off for the last 20 mins cooking the sausages. Just helps brown them and reduces the sauce a little

    Great recipe Adam and very comforting for spring too. I wonder what you think of my recipe? Like you I brown my sausages and add them for the last 30 minutes of cooking but when I use a pork meat I sometimes add a few crushed fennel seeds for my casserole with a little dried sage. To my veg I add large chunks of apple as pork loves apples and I deglazed with sherry or vermouth before adding the tomatoes. I like my casserole to have a nice unami flavour so I make my own seaweed seasoning by crushing dried nori sheets ( you can get them in Lidl really cheap) with rock salt. I also add a few dried mushrooms in there liquor. Tasty 🎉

    Adam, 👋. At what point did you remove the lid during the cooking? It was on when you put the dish in the oven, but not when you removed to add the sausages. What was the reason for removing it? Thank you.

      Just for the last 20 minutes cooking the sausages. Helps brown them more and reduces the sauce a little. You can leave the lid on though, it's not 100% necessary

Unfortunately I've just been diagnosed with acute pancreatitis so almost a 0% fat, 0% processed meats, brown foods diet😢 so won't be able to recreate this but it does look banging nom nom.       I think they were Lincolnshire sausages. You could use brats, but the flavour is nowhere near like an English sausage. Would still be good though I reckon

    I always coat the sausages in a little oil, paprika, pepper and whatever dried herbs I have to hand and let them sit for a while in the fridge while I prepare the veg etc. Imparts a lovely flavour to them. If I'm in a hurry Colmans does a decent sausage casserole mix too.

    I haven't any lard, but I do have both "vegan ghee" (coconut oil & some other oil, and it really does taste buttery despite the lack of dairy) and a cheap olive oil blend (mostly sunflower oil, I think). I assume those would work too? It sounds like the main thing which "levels up" the sausage casserole is NOT putting the sausages in with the other ingredients straight away, so they don't overcook and get mushy. I see that you don't slice the sausages into chunks before adding them to the casserole, either; that probably also helps prevent overcooking, and each diner can easily slice up their portion of the sausage while they eat.

    I always buy whole plum tomatoes over chopped. I think its something to do with the best grade tomatoes being kept for the whole ones and the lesser quality ones are used for chopped tomatoes

    Won me again ol' mate. Back in the day I worked a couple of months in a Cannery, won't say which one. Well they used to separate tomatoes in big bins...some were Green, some were Ripe, Some were over-ripe (pretty messy). Green were stored, Ripe was Canned Whole, and Over-ripe were used in Canned diced, the rest was Sauce. That could possibly explain the taste diference. Cheers mate.

    How long into cooking time did the lid come off the casserole dish please? I assume to thicken the sauce?

    Looks amazing! One thing I would change is trade the table salt for a good salt like sea salt or Himalayan salt.

    One simple trick... "cooking is 100% improved when your p!ssed". I couldn't agree more!!! Trouble is you can't replicate the recipe when sober. My cooking is great. Always accompanied by El Vino ❤

    How long did you leave it in the oven with the lid on before taking the lid off? I noticed the lid was on when it went in but was already off when you took it out to add the sausage, thanks

      I took it off for the last 15 mins or so. This just reduces the sauce a little but you don't have to do this step

    The only way to level this dish up is to use sanmarzano tomatoes. and maybe a little splash of worcester sauce to zing up that wonderful gravy.

      Awww I miss him too. My neighbours cat pops over sometimes and acts like he owns the place 🤣. So he may make an appearance at some point

    I'm gonna do this for tea today, got a friend coming over and there in lies the problem..... she's a veggie so it will have to be veggie sausages (which I hate) but maybe this sauce will pimp them up a bit?? Thanks for another good vid

      You could split the sauce in half and cook the 2 different sausages so you can have meat, friend could have veggie

    I love a sausage casserole. Plum are best because they less acidic, plus the chopped ones are usually all the crap bits of cheap shitty tomatoes like those salad ones.
    I've made some great dinner whilst pissed 😂❤ xx

      Nothing worse than an out of season bland tomato. I'm growing a load this year so if they go well, expect a lot of tomato based recipes 🤣
