She teases too much with that. You can see he clearly feel offended or disrespected. Her behavior is a glaring example of why everyone hates Americans - condescending, infantilizing view of anything not American.
I’m now 63 years old, have been out of the armed forces since 1990, and I can honestly say that the highlight of my *entire life* were the 2 years I was stationed in Naples, Italy. Every weekend was an travel adventure, enjoying the local restaurants, and seeing the sights of Campania. Man, I truly miss those days so much it makes my heart ache.

@@jefft6975 For those two years stationed in Italy I took FULL advantage and travelled quite extensively - countless number of weekends even just going to Florence, Rome, Venice, or Capri, longer rail trips all around Europe, hit Oktoberfest in Munich twice, and one amazing week-long trip to Egypt on a Nile River cruise. It was simply the greatest two years of my life.

Thank you for your service. How wonderful you got to experience that time in Naples. The poem by Alfred Lord Tennyson stated "Tis better to have loved and lost than never to have loved at all." My heartache is that my father's heritage was from the Naples area and I have not and will never get to travel there in person. As a consolation, I have been watching Italian travel videos and they have been comforting.

I truly love that the chef heard there was a real Italian in house and made a traditional Italian pasta for Carlos. As if to say "I know. Believe me, I know. And I'm sorry. But as you can see, i just work here" 😂😂😂

My understanding is that what they make in Italy is pasta with butter and cheese (parmesian). Thete is no creme or meat or seafood as well. People make this at home when they want an easy dish for themselves or their children. It is not something that you would go to a restaurant and order. My cousin's grandmother was from Rome and she made spaghetti and meatballs. Maybe it was an adaptation from living in the states - I don't know. Comments?

@@josephwalukonis9934 cooking in Italy is very regional so it's a complex matter indeed. There are definitely certain pasta dishes that are classic for home eating. Olive oil or butter with parmigiano reggiano is common. Cacio e pepe is a big one. Of course carbonara. In Western cooking they're overly complicated heavy dishes with ingredients coming out of everywhere. Carbonara to the average westerner has cream, peas, mushrooms, sometimes chicken. And parmesan smells like feet. To an Italian it's a simple process of frying up some cured pork, mixing some egg with grated cheese and pepper and emulsifying together with some pasta water. It's very simple, delicious cooking. Then there are more complex dishes like meatballs or lasagna. Still very traditional but not as common. For every ragu de bolognese there is the simple tomato puree reduced with onion, fresh basil and seasoned with salt. Enjoyed with fresh parmigiano cheese on top and maybe a nice crusty bread to mop up leftovers.

As someone who worked in bertuccis for 2 years- 99% of what you fed him was fully cooked, frozen, and reheated in store. The dough and shrimp are the freshest things- even the cheese was frozen, and the sauce was a giant can of tomato puree and a jug of canola oil to the point it was rainbow sheened on top; other sauces were out of a jug. Meatballs, sausage- precooked. Chicken strips, precooked

Yeah I worked at an italian resturaunt and they did everything fresh and homemade. I mean coming in at 5 am to wrestle the cows down to kill and process them was horrible. Collecting the eggs from 400 chickens we had in the back was a big job too. Are you saying the expectation is that everything is processed in house by a cook? Is a can a=of tomato sauce such a horrible thing compared to mushing up tomatoes?

Same in Vietnam with the bread and the French, I don't feel offended by Vietnamese making weird bread and sandwiches, at the opposite I'm happy that the French cuisine is getting bigger with different influences. You should feel the same with USA and Italian food.

Or maybe it's just that smell and taste are related. If your food has no fragrance it might taste bland, if it doesn't smell good it might taste awfull.
When I was a child my nonna would say that her son and I would smell some food before eating. As the above comment indicates taste and smell are related . I could usually tell if I would like it just by smelling it.
I thought I recognized that chef that came out! The chef who gave them the off menu pasta is actually a pretty well known chef here in NY. Christian Petroni won Food Network Star and was the founder of the Fortina Restaurants in NY and CT. Just looked it up and apparently he started working with Bertucci's in January as a consultant.

My Mom was Italian "passed" , My Dad Half Italian and half German. Anyway, After eating her Italian food most of my life, it's hard to go to the restaurants and have Italian. I can still remember the smell of the sauce when we walked in from school and her cutting pasta on our big kitchen table. Miss that

I think its very hard to find an international restaurant with authentic versions of that country. Im from Mexico and every time I go to a “Mexican” place it is not really mexican, its the American version of what they think its the Mexican dish. Most of the times its actually good but I do now the difference and how it should be made. At least they are trying to give us some of our culture and I appreciate that. Hopefully one day I can open a restaurant with 100% mexican dishes 🥰

Recently here in Lincoln, Nebraska a Hispanic place opened up called ABELARDO'S. Its menu & food quality is like no other place I've tried. I am by no means knowledgeable as to what is/isn't authentic but I don't hit any other place anymore.

I love Carlos expressions when he experiences things for the first time in this country it’s like looking at my father when we took them out for Father’s Day he starts talking with his hands and talking in Italian expressions I feel that way like brothers

Italian meals are very structured, we have a first course, a second course and fruit or sweets at the end. On holidays we also have an appetizer called antipasto (that means before the meal). The first course can be a pasta dish or risotto or soup in winter. The second course is meat or fish with always a side of salad or vegetables (yes, salad is a side dish in Italy). The only time you have a single course is if you make a polenta dish (the kind that is served as porridge). Bread is eaten only with the second course. The final course is mostly fruit (at home) and on holidays (including Sunday) we have dessert.

Old-world Italians really have a hard time understanding that "Italian food" in the US means people who left Italy 100+ years ago (meaning there's a century of independent culinary evolution), not people who left last week and brought dishes as Italians are eating them today.
Bingo. Most of the Italian-American food that Italians from Italy look down their collective noses at was primarily invented by poor Italian immigrants in NY, NJ and CT who still needed to feed their families but were in a new country with new ingredients. I think they did a pretty good job with what they had. I've had both authentic Italian food from Italy and Italian American food and as long as they're prepared well with good ingredients, I love them both for what they bring to the table. Oh, and I put cheese on fish dishes, so sue me. Yeah, I know, I'm a barbarian. Whatever.
@@bdwilcox Italian food is poor people's food. A magherita is nothing more than dough, tomatoes, basil and some cheese (with the occasional salt, pepper, and oregano like in almost every dish). A putanesca is noodles, anchovies, tomatoes, olives, onions (according to the name it was a dish prepared by the ladies who got paid for intercourse and anchovies are super cheap food)
Italian food is the every man's food. Nothing fancy. Plain and simple.
Every italian food is just what they had made into some really cool dishes. A Carbonara is just ham, eggwhite, and some black pepper. It's nothing special, but it's made with passion.
And in the Us there are other ingredients available for the poor man. So they made their own variants of it.
It's not italian. It's amrican-italian. There is nothing wrong with it. Except, the name. Call it what it is.
as an italian living in italy i personally don't like the statement "old world italians". i dont get it. italy is a country, it exists to this day and progress like the US and the rest of the world. Unless you're teaching the history of the 1500's theres no reason to remark america is somehow newer. you can call europe "old world" if you want but out of context it just seems disrespectful. our cuisine definetly didnt stopped at the time we imported it in america. it evolved as well.

You guys should spend a day or two at Federal Hill, Providence. Especially Venda Ravioli. I'd be curious about his thoughts about the quality of restaurants, as well as, see how many people speak Italian and Sicilian. I think he would find SOME dishes closer to the way it's made in Italy then let's say Boston. I can't recall the restaurant, but my mom ordered something with sausage in it. The waiter came back, apologized that the kitchen had run out of sausage, and asked if she would mind waiting a little while because they make all the sausage from scratch. Some, not all restaurants, pride themselves on the high quality, fresh ingredients that the motherland is known for.
I'm Sicilian and my great grandparents came her from Sciacca. I was fortunate enough to be close enough to the old country to experience the family values, culture, cooking in the kitchen since childhood. etc. When I was a teen I started to realize that not everyone knew how to cook, which was a shock to me. I thought every child learned how to cook and spent time in the kitchen with everyone prepping and cooking. Also, a shock to me was why anyone would go to an Italian restaurant and pat triple for something you can make at home. Although, some Italian foods were new to me, being Sicilian, so I would try to order things I was unfamiliar with. I recall the sentiment Carlo feels when he goes to restaurants, and it brings me back to those days. (I'm 51)

Italian salads are remarkably simple. Usually, it is lettuce (sliced very thinly), tomatoes, cucumbers, maybe some olives and olive oil, salt, lemon, or vinegar. Sometimes you can add capers. In Sicily, they have a special salad made of oranges, vinegar, and salt. There is nothing like Italian dressing, that is an American invention.

I lived in Cordenons Italy for about a year and worked in Aviano. The food is amazing in Europe. Got to eat a lot of food off base and it was incredible. Cannot find food like that here in the states. It is all Americanized. I miss the morning walk to the farmers market and getting fresh eggs and everything to make breakfast.

He’s using salt to dry it up. Like at a garage that spills oil, they will use a kitty litter to get it up.. and keep from “staining” something with an oil.

It’s lovely to hear Carlos accent. My daughter took me to ROME this April and we actually went to the restaurant that invented fettuccine Alfredo. It was a lovely tableside service. The story is that the owner of the restaurant made it for his wife. That’s how it was invented. The name of it is Ristorante Alfredo not that far from the Trevi fountain. The food is delicious there! We also went to Napoli. It was so interesting to see that they actually have a law about how to cook pizza there. They have the best pizza I’ve ever eaten in my life there. The margarita pizza was amazing. We also went to Positano that is just lovely beachside paradise. 🇮🇹🤗
That story Is Just marketing here in Italy we know. Fettuccine Alfredo is an american invention. Roman people try in 1000 ways to attract american tourists in their restaurants

I believe the stories there pictures of their books and it’s the name of the restaurant which is been around for quite a few years. But whatever you’d like to say. @@LittleLulubee I am sure the food itself is great. It is just not Italian food. But to be fair, it is extremely difficult to get actual Italian food in the US. So while it might taste great, to Italians that is sacrilege, because they tend to value tradition so much. Again, that doesn't mean it is bad, just bad for an Italian. So he might have done something off the menu, to make something that is actually authentic.
That happens everywhere, foreign food is always localized, even if it is done by migrants. So it is not to say it is abd because it is american, it is just different.
And I can understand that, as a Mexican, whenever I visit the US and have "Mexican" food there, it is so mild, that I do not enjoy it at all. Like I can tell the food is good, but I know what the real deal is, and it just makes me crave real Mexican food. And not the bland version I am tasting. But I can objectively tell it is good, I would recomend it to people that have had not tried the real deal. But if you have tried it, it just makes you crave the real deal, and it is a bittersweet feeling.
So, I never try nor order any mexican food because of that, whenever I am outside of Mexico... I always end up dissapointed. For Italians, it might be similar to them.

I was born and raised in Massachusetts. I moved to Texas 22 years ago and every season I miss the air, the atmosphere, the ocean in MA. I love Bertucci's and I loved the Feast of San Antone that you went to in the North End of Boston. Oh and BTW I am 100% Italian. I totally understand and love your videos.

Unfortunately, the music doesn't match the theme of the restaurant.
I explain it for the Anglo-Saxons: in Italy there are different types of pizza, there is the Roman one which is higher and more leavened, and it is like the one you see at the beginning. I am Umbrian (in the center of Italy) and "pizza at plate" (not in pieces) is usually less thick. if you go to campania (naples to be clear) you will find every citizen who says that his recipe is the best.
Actually roman pizza is the thinnest, as well as the crunchiest.
Because Napoli pizza is the best. 😁😁

Actually fettuccine Alfredo (or fettuccine all'Alfredo) were invented in Italy (in 1908 or 1914, the year is disputed), but the original recipe was very simple: pasta, butter, parmesan cheese, that's all. In Italy we don't call this very simple pasta dish "Alfredo". We call it just pasta al burro or pasta al burro e parmigiano. The fettuccine Alfredo served outside Italy are an American variation (and I prefer not to comment it).

And personally I've always called it "pasta in bianco", also because sometimes I don't use any butter but just olive oil and parmesan cheese! I think one thing that surprised me most when I visited Italy was how totally different the food is from our Americanized version of Italian food. To be honest, I like the way Italians prepare their food but I also like our version. They’re both good, as long the pasta isn’t over cooked, just vastly different. The food in Italy seems way less full of fat and cheese and the ingredients are so fresh. Seems a lot healthier.
I am Indian but I like American Italian better, perhaps the ingrediants are better in Italy, but I am also looking at the taste and quantity, this is where American wins for me
I see people get mad at Sarah for taking him to places like these but I realized she does it out of love it’s hard for someone to leave their home out of country and miss it Sarah does it to keep him happy it can be difficult because it obviously won’t be the same but she tries and it’s beautiful

The smile carlo had when the executive chef brought him fresh pasta that was literally still spinning in the skillet. That alone was precious and very kind of the chef.I worked for an italian man at his restaurant for 17 years until he retired,and for the executive chef and or owner to do that for a guest shows the utmost respect. Im happy he enjoyed what the chef made 4 him
O btw I was the server bartender n manager. I couldn't boil water if I tried. I miss working for him but am happy he is enjoying his much earned retirement 😊😊

This was so funny! It reminded me of when my Corsican/French boyfriend came to live with me in Brazil for 1.5 years. Poor man was so disappointed with the bread and cheese available and he never had a good croissant in the many large cities we visited. Forget about pâté or good frites too (to his expectations). But he loved the amazing fruits at least!

Napoli has best pizza in the world. Period. I have found one place near me in the U.S. that makes pizza very similar to the way it is done in Napoli. The place is owned by a immigrant Egyptian family. Go figure. 🤣

I grew up in New York and the one thing I never did while living there was eating in corporate restaurants. There are too many mom and pop places to go. When I moved to Texas it was a real shock. For the most part it is corporate restaurants.
