Jennifer, I couldn't agree more! Sometimes I tend to over shop or I've grown too much and they got to get used up cut a bad spot out and they're good to go. I also hate wasting food. I grew up poor I went to bed hungry I will be hard pressed before I throw something away. I plan meals around what we have in the house and I try to make sure every bit of it gets used up and I especially try to not overcook because we tend to get bored with leftovers very quickly. But you would not believe how quickly some people throw out a zucchini because it has one little bad spot on it.

Soup and pizza topping are two of my favorite ways to use up food so it doesn't go to waste.
I tend to freeze stuff when I notice it going "bad" and I know I won't eat it soon. Even things like zucchini with lots of water (which will get mushy after thawing) are good for soups or sauces, just season and puree it, add some cream or broth and whatever.
Also, I take the ugly veggies and single bananas at the supermarket, they still taste the same 😊
my mom used to do "pantry cleanout" weeks/months where we didn't shop again until we didn't have anything left. my husband and i still do it to this day and we will use the extra money to apy down debts. it's honestly really humbling and also reassuring to stop and just check yourself and realize that you can do just fine with some beans and rice or a simple pasta dinner.
YES. My mom did that too and I’ve started doing it now that I have a family as well! 👍🏻
My family also does this! Doing it now as a matter of fact! Why shop when i have 3 bags of flour,sugar,baking soda,baking powder,and several other items?
Today for lunch,im thinkin since ive got a plethora of hot dogs,ill make a homemade "pigs in a blanket" type deal. Lol
This is great. I appreciate how you could appreciate what you have on hand, but I would actually advise against cleaning out your pantry till it’s all empty, because you never know if there might be an emergency where you can’t get to stores or stores are closed down. I’m thinking of weather emergencies such as the Texas blackout that left so many freezing cold, starving and thirsty, or local shutdowns. I would suggest you ALWAYS have at least 2-4 weeks of food(or more if you can afford it, or quick ready to eat soups as well as longer term dry goods, like rice, legumes, pasta, jarred sauces with protein just Incas you can’t get fresh meat) ALL the time. You can look up “working pantry” or “ prepper pantry”. You just never want to be left without any food at any time. Don’t forget to keep some gallons of water. 1 gal minimum per person per day. 🙂

This whole time I was doing it bc I was broke
I've started freezing Avocado! I buy them in bulk. Once they're ripe I cut them into quarters, toss them in a freezer bag, add some salt, pepper, and garlic powder, a liberal squirt of lime juice, and then mush by hand! Squash the bag flat and stack in the freezer. They stay green and thaw within 20 minutes. Then we're never without avocados and I don't have to worry about them over ripening.
Your recipes sound so delicious. Although my days of cooking are behind me, I'd like to offer a suggestion. For the chicken tortilla soup, instead of putting the onion and lime juice directly in the pot, I would saute the onion in the same frying pan that I'd cooked the chicken in, soaking up all that bacony, taco seasony goodness. I'd then deglaze with the lime juice to get up every last bit of flavor. Then add it to the pot. Just an idea.

Molly K. Yup. I am a big proponent of sautéing the aromatics first then deglazing. I also sear any meat I plan to use first, then sauté the aromatics and deglaze, getting all that lovely fond up. The Maillard reaction is the best friend for flavor, lol. I love her frugality, but cringe every time I see her using un sautéd aromatics, lol.
My mother gave me a box of food when they moved houses, among it was pasta boxes expired 02/2018. We ate some yesterday with sketchy broccoli and frozen ham slices cut up. Quarantine makes you creative!!!

I found you and Jen both from Marriage & Motherhood’s channel from a different challenge and I have been hooked ever since! You’ve given me inspo for a pasta dish and I’m so doing those air fryer potatoes for breakfast.
Keeping dry pasta dark and dry is not gonna spoil just like dry beans. It usually dont even have egg its just flour that had water in it. For flour or anything dry to go bad it needs moister to come in contact. Fat is the first thing to go bad and or get a weird taste from strong smells like chocolate but chocolate kept from strong smells Will keep for at least one year the white you may see is just the coca butter that has risen/ flower it is harmless. Other things like Tea, spices lose taste over time meaning it can be bitter or you need to add more.

Guilty here, but I have to get it by my 18yr old son.( Have had to for 4-5yrs now, my mom was ocd, and freaked if it was a day past..had to explain best by vs use by, and they want you to toss and buy more,)
I solved that problem by removing everything front their boxes/bags and storing them in big containers. That way I'm the only one who knows exactly how old it is since I do all the grocery shopping. 😂🤣😂🤣😂

Thank YOU -- for using the zucchini -- and just cutting off the bad! SO many people think that is not good - but I ALWAYS use up what I can just the same way.
If I'm afraid I don't have time...I'll cut off bad parts and chop and freeze for later dishes.
For many things that´s fine, but don´t try it with something like bread as the mold can spread though the whole loaf even if you only see it on one slice.
@@miekekuppen9275 cheese is literally made with mold. Before you buy cheese at the store they are completely covered in mold.
@@miekekuppen9275 Yes! It is quite safe to cut off moldy piece of some kinds of vegetables with low water content and eat the rest. Like carrots, parsley root, cabbage, bell peppers etc. In other cases the whole piece of fruit or vegetable might be full of mycotoxines. The zucchini is mostly water and toxines spread easily there so I would rather throw it all away. As well as cucumbers, tomatoes, strawberries...
Mycotoxines are especially dangerous to children and babies. That is why baby food is being tested for patulin. Do not underestimate the mycotoxines!

I know you have a small gardening and I just wanted to let you know that I am using my last red cabbage from my 2019 Garden. No Lie! Talk about a vegetable that stores well. I watched a video on how to store the cabbage and you pick it and you do not wash it and you wrap it super tight in Saran Wrap and store it in your refrigerator inside a ziplock bag after it's been wrapped with the Saran Wrap and I got to tell you you pull the outer leaves off and you're left with a beautiful red cabbage underneath we had about 20 of them we've eaten about 1 a week I gave a couple of them away and I'm about sick of red cabbage to the point I'm not even growing it in this year's Garden. But just wanted to let you know because I know you always like to keep stuff around and you literally can keep it around for you know six months. Unfortunately the green cabbage does not last as long

I had some leftover potato, capsicum and onion from breakfast burritos... I never thought put to add a small tin of beans to make tacos. I’m going to have that for dinner =) I’m loving your videos. With the pandemic I’ve learnt to stockpile and this has given me some great ideas!

I do that with bell peppers. I don’t care if they’re all wrinkled I still use them. They make the dish taste a little special.

I love your videos and recipe ideals. If someone wants to save a step on cooking their veggies, I normally cook my frozen veggies with the pasta. I wait until a few minutes before my pasta is ready. Then I'll pour the veggies into the pasta pot and drain them together. Voila!

We love chicken tortilla soup, I like to add diced green chiles, tomatoes, and frozen (or canned) corn as well

Frozen veggies are actually better then fresh i stores because they are frozen right after harvesting but fresh are transported and may have been in the store a few days, meaning the frozen are fresher then the fresh ones as long as they havent been in your freezer for long.
I made quarantine black bean and potato enchiladas with green sauce. So good! We were surprised at how much we liked them. Could have been better with avo, sour cream, cilantro on top. But it’s quarantine rules and I was desperate for something original.

Everything looked delicious. I think you love your air dryer as much as I love mine. The tacos at the end I think I would of taken the sour cream with lemon or lime juice, maybe some garlic powder and made a type of slaw for the tacos. (I am in no way saying the way you did it didn't look delicious.) If you want to try something really delicious take diced sweet potatoes or russet potatoes, olive oil and either taco or fajita seasoning in a bowl. Toss the potatoes until they are coated. I like to add onions and peppers if I find them on sale. I toss it all in the oil with seasoning mixture. Put it in the air dryer until the potatoes are done. I put this in a tortilla with sour cream. It is delicious.

I'm having a pantry clear out this week. I made soup yesterday with the leftover veg in my fridge and I have black beans soaking so I can cook them tomorrow. I'm planning on making burgers with them and some fried rice. Tonight I'm trying a recipe using some extra minced beef I had in the freezer (it's not a full packet, just about 100g)- hamburger pasta 😊

Hey my mom and I love your channel. Today we were gifted some beautiful tri-colored grape tomatoes and some red bell peppers and we knew would never be able to use them all so....we reached to our inner Christine and said let's freeze it. So we roasted and made a home made tomato sauce to put in the freezer.

even though i'm vegan and a lot of your recipes would be hard to veganize on the fly, I absolutely LOVE your approach to food and your energy!
Just leave out the meat or substitute with tofu. I roast veggies and add to salads or serve with rice.

Ok thank you for this. Don’t toss “expired” foods unless of course their perishable and have perished. This will go a long way towards what we are heading towards. People need to learn to cook cheap, use what you’ve got. And waste not want not. I love all your videos but this one I love that you cut mold spots off (you’re cooking them anyway) and used expired pasta! ❤️❤️

Expired pasta can hatch bugs, grow mold, or go rancid (if it contains things like egg); but it is easy to see/smell if it is safe. It's best to go by expiration guides, but pasta is one of the things that is generally okay.

I've been loving seeing what/ how you cook. Tonight i'm making your rice and beans, all from my pantry as well. We eat pretty much the same stuff all the time, so I rarely shop for a certain recipe.... just shop my pantry. I'm so thrilled to find that you have a place with your environmental recipes written down for the rest of us!
Just so you know in the future you can freeze avocado and limes.
You freeze the lemons whole? Or do you cut them first? How do you defrost them? I'm very curious, never heard of freezing lemons before.
@@sandravasquez7628 you can definitely freeze the juice (you can make ice cubes, volume depending on how much you use at once) and if you remove the skin beforehand you can freeze that as well for use in baking.

This video was great! I always try to use what I already have in the fridge and pantry before I go grocery shopping. And I always buy what is on sale or on clearance. We are a family of 6 as well.
