SPANAKOPITA INGREDIENTS:
2 tbsp olive oil
1 cup chopped onion
2 lbs fresh spinach, washed and stems removed
1/4 cup fresh dill, chopped
4 large eggs
8 oz Feta, crumbled
2 tbsp Parmesan, cheese
8 tbsp unsalted butter, melted, plus extra for greasing the dish
1 lb phyllo dough, thawed, if frozen
