2¼ Panko breadcrumbs
1/2 cup chopped onion
1/2 cup seeded and chopped red bell pepper
2 cloves garlic, minced
Salt and pepper
2 tbsp fresh parsley, chopped
5 eggs, divided
1/2 cup mayonnaise
1 tbsp red wine vinegar
1 tbsp Dijon mustard
1 tbsp capers, drained
2 tsp hot sauce
1 lb lump crab meat
Vegetable oil, for frying
Lemon wedges, for garnish
Tartar sauce, for serving.

My mom used to make saltimbocca but hers was like a jelly roll & she used ham (cuz prosciutto in the 80s was for fancy folk) & cheese then rolled in flour/egg/breadcrumbs & baked them. I wonder if it would be overpowering if you did a lil chiffonade of more than just one sage leaf & placed between the prosciutto & chicken? That sauce looked heavenly!
A little extra sage would be great! It's always kind of pleasant burst of flavor when you finally make it to the sage! Extra sage for us!!!

Could you substitute salmon for the crab in this recipe?
