FULL RECIPE
“Meat Lovers” Roast Tofu & Veg [Meal Prep]
Serves - 4
Preparation time - less than 30 minutes
Ingredients:
1 block of tofu (extra firm), sliced in half
4 cups prepared brown rice
1 cup BBQ Sauce
3 tri-colored bell peppers, cleaned, seeds removed, large diced
½ large onion, cleaned, large diced
300g chestnut mushrooms, sliced in half
200g spinach (1 package)
Handful of fresh coriander, or parsley
3 tbsp ‘pork’ seasoning blend (sage & onion)
Black pepper
Salt, kosher or sea salt flakes
½ tsp granulated garlic
Sunflower oil
Directions:
Preheat oven 200c (fan) / 375f convection or 400f bake
Place half cut tofu into a large bowl and massage tofu with 1 tsp of oil to coat each piece.
Add ‘pork’ type seasoning, salt-n-pepper, granulated garlic and gently toss to cover tofu with seasoning all over.
Heat cast-iron pan on medium heat until wicked hot. Add about 2 - 3 tbsp of oil.
Add tofu and sear on each side 2-3 minutes until golden crispy brown all over.
Remove from skillet and place on parchment paper lined baking sheet pan.
In the same hot pan, add mushroom halves face down, drizzle oil and swirl to coat.
Sear for 2 minutes to brown, before stirring. Press with 2nd pan (optional). Remove from skillet. Arrange on baking sheet with tofu.
Place cubed bell peppers and onion into large bowl, add little oil, pinch of granulated garlic, salt and pepper and lightly toss to cover evenly.
Add to hot skillet. Sear peppers and onions for 2 minutes, stirring occasionally. Pressing the peppers and onion is optional to add more even browning. Remove from pan and arrange on baking sheet with tofu.
Place baking sheet with everything in the oven and roast for 10-15 minutes.
Remove from oven when done, allow to cool for few minutes before slicing tofu.
In the hot skillet, add baby spinach and stir until wilted, roughly 1 minute. Remove from heat.
In a separate pot or container, warm the BBQ sauce, or your favorite sauce.
Plate 1-2 meals for now and pre-pack meal prep for later.
Remember to reuse plastic takeaway boxes, or glass containers when available.
Every little helps to reduce and reuse plastics is important!

Thank you so much for advocating for the animals!!
Advocating for animals is our greatest pleasure and such a huge part of our mission. Animal Welfare + Human Health + Protecting our Planet!! 💚💚💚
@@DerekSarnoChef, ❤❤❤❤❤
Of course another great video but I am in love with the person responsible for the clip of the kitten washing its paws when Derek said “I’m going to wash my hands” 😂
Best unexpected segue clip ever. I was overwhelmed with cuteness!!!
This was very helpful! I been a pescatarian for a few months but now I’m a vegetarian... soon vegan✨🙌🏽
@Kacey Balseca You got this! Most of us have grown up eating a diet that we didn’t choose, and whatever your path to eating less animals is, we support you!!
Kacey Balseca that is exactly the path that I took. Last thing to go was dairy and eggs. Best thing I’ve ever done. When you make the final switch, you will feel soooooooo freed. That said, I do believe that perfection should not be the enemy of good. All or something is better than all or nothing. That said, fully vegan is truly the best for me. ❤️🌱❤️ bless you.
@@DerekSarnoChef I loved this video & just subscribed. I know it was made a yr ago, but better late than never!! I saw you on Monomi' channel.
I found Derek Sarno's meals from Tesco very delicious. I turned the box to read the ingredients, saw his name and was happy to find his receipts and youtube channel. I am vegetarian for more than 30 years but would like to become vegan and these receipts are very helpful.
This may be 5 yrs ago but so great for today. Getting some really great ideas for my meal prep. Thanks for sharing your talents and creations with all of us.
Seriously, this is such an awesome meal prep idea
I made this last night (with some modifications based on what I had on hand). I’ve never been a fan of mushrooms and usually chop them small to “hide” them. My husband and I fought over who got the most mushrooms 💕 I froze, thawed, and pressed my extra firm tofu based on recs from CheapLazyVegan. It def improved the texture of the tofu in a recipe like this. Thank you for all the fantastic recipes y’all have done!
Veganism is extremely mentally satisfying. You know you've paid for the death of something that feels pain. That's if, you know...And that's not what i want to leave this world knowing. Sentience is real. Great video, dish. Always a pleasure to watch.
Very wise words, Allan, and thank you for sharing! Big love to you and we appreciate your support and kindness!
@@DerekSarnoChef Thank you, too. Great personality and to your comparisons with instead of using a dead animal, the true flavor comes from mother nature. The same thing animals live off of. Animals manufactured by man is not natural. They're placed in a hell before becoming food. Thanks for your great work.
Allan khad AGREED !!!!!
Allan khad AWE......yur sooooo awesome !!!!!!! ♥️♥️♥️♥️

I made this dish on this last Sunday and it was delicious. Thanks for showing how to make this dish.
I’m definitely trying this! Looks so good
I love this guy and I love this series. Great idea on how to cook tofu. Cannot wait.
Made this for dinner tonight and it was a hit! My family and I have never before made a tofu dish we enjoyed. This was a feast for the eyes and our palates. This is the second of your recipes I've made. The first was the BBQ pulled mushrooms - so delicious we had beat back the carnivores. Thanks so much for sharing!!
Amazing, thanks letting us know and for watching!
Ramsay is fired

I just made this meal tonight. It was delicious 😋. Thank you for another great recipe.
this is hands down the best recipe ever. especially for a meal prep, THANK YOU!
Let me guess, you've just starting cooking?
I have never known anyone who is as much of a mushroom lover as I but Derek and Gaz Oakley come close! Thank you for your videos.
Each one of your videos is not only informative and easy for those of us who 'try' to cook lol but the funny bits have us in stitches!! :-D Thanks guys. You're the best!!
Love your videos, they are very easy to follow, thank you! ❤️
I ran across your videos while on my 3 month plant base journey. And, I must say that I’m totally impressed with your cooking skills and presentation. I’m definitely trying this recipe for Sunday’s dinner. I never ate mushrooms as a child or young adult, but now I eat them all the time; they’re so delicious and versatile. Btw, I’ll also be purchasing your cookbook. I think I saw your cookbook being displayed in the background. Thanks for sharing your creativity Chef Derek!☺️👍🏽☺️
Thank you for watching!
Your videos are high quality and the food looks soooo good! Thanks for all you do.
Thank you so much for that nice feedback!! We appreciate you!
This looks delicious and mostly healthy (sans oil). I've been plant-based for years and still look for great ideas and channels such as yours. Thank you! I may try it with a peanut-ginger sauce tonight!
I made a version of this tonight. Used Montreal Steak Spice.. think I’ll use a finer grain seasoning next time, or grind this one down more... but wow, super simple, and more healthy than most takeout. Hella cheaper too! And now I have 2 more meals! Yaaasssss.
The way you teach cooking mushrooms, the cast iron press method... LIFE CHANGING. I made some Crimini and they were amazing with the tofu. Thank you!!! Love your channel
Yay! Love this cant wait for more 👍🏻
Thanks, Christina! We'll keep 'em coming...thanks for watching!!
I've apparently reached that magic age (whatever that is) when I no longer wish to eat animals. The magic, chemistry, and artistry of vegan/vegetarian cooking is like a new drug. Thank you Derek, I'm in!
Can I just say Thank You!!! I made the deep fried tofu from the BBQ meal prep video. Omg! Just incredible...came out just like you said! The tip about cooking them all together at the end in all the oil at the bottom of the pan is genius! Staple recipe!!!!🙏🙏🙏
Awesome!! It's great to hear these sort of comments and happy that it was a hit!!
Derek, you really killed it with this one. Thank you so much for this! Apart from the delicious recipe, I particularly liked the way you distributed the meal in the food containers. I'll definitely steal that idea. Cheers and stay safe! Much love, Sebastian.
You think that was good you need to check out bento boxes! They'll blow your mind!
so excited to find your site.... very straight foreword and easy to follow. p.s. love the tats and the sandalwood beads !
I’ve ended up with pancreatitis every time I’ve eaten meat or meat products since I was 13 so it awesome that you have this amazing channel to give myself and all new vegan great ideas for cooking. Thanks heaps
Very colorful presentation! And it looks yummy! I’ve seen several other videos from this channel. Really like the pressed method of cooking mushrooms I’ve seen him use in other videos and wonder if the same can be done with tofu.
Thank you so much for your amazing food and your heart of gold, what a great inspiring message to start a video
Thank you so much!
This was really entertaining. Thanks for the laughs! Oh and The food looks great.

Made this tonight, cooked right along with you. 4 meals under $13! I subbed aquafaba for oil on the tofu and used a non stick pan. Delicious!
Love the format Derek - i've got a copy of the wicked healthy book and the fresh tofu pasta recipe is out of this world. Works great with my cavatelli maker too (grandma's old and trusty one) Looking forward to more of these!

Nice video! I liked what you did with the mushrooms! I could almost smell them!
I’m still relatively new to vegan cooking. Have not tried the tofu yet. Just bought some. I too love cooking in cast iron with the rainbow peppers. 😋

Thanks for watching, Kasey! It's amazing how easy it is to transform a block of tofu into a savory treat with a little seasoning, fire and cast iron! We appreciate you!
Wicked Healthy I’m glad it wasn’t Worcestershire then 😂 love your channel, love your recipes and love your influence on Tesco, great work ❤️
THANK YOU SO MUCH FOR SAYING THAT!! Comments like this keep us going!!
Wicked Healthy no worries! It’s the truth ;)
Thank You so much💓 I can smell the deliciousness pulsating the screen🤸
I don't like mushroom but I know they are super healthy and help prevent cancer, and the way you made these look makes me want to try this. Yum!
We hear comments like this a lot-many people feel the same and have mixed feelings about eating mushrooms. But I promise you, if you try them the way we show you in this video and some of our other ones (especially the Pulled "Pork" Sandwich, "Chicken" Noodle Soup, and BBQ Mushroom Steaks), you'll have a completely different opinion about mushrooms!
❤️ Thank You ❤️
Is there a full video of the Smithy Mushroom trip we can watch anywhere, Derek? Thanks for these videos! Love them
Awesome video man!! ❤️❤️
Thanks, Steven!! We appreciate you!!
❤️ Watching Again ❤️ Love Your Sense Of Humor ❤️
so, innovative and delicious veg meals..👌😋
I use the discarded veg to make broth. Nice video.🌼
Awww...I've just recently discovered you! And am so pleasantly surprised...and it brought tears of joy (with sadness of course being an empath) to hear you say those beautiful words about NOT including animals (and the reason why...which is extremely important) incorporated into your cooking videos. Thank you SO VERY much for doing this...for our animal family!
Thank you for sharing in our mission, Cher-Ami! Compassion for animals is such an important part of what motivates us, it's great to hear comments like this!
Great video!
That looks so delicious, I always cook extra meals.
I've made this so yummy, but I did some vegan butter, chopped chillies, spring onions and garlic in pan nice source for the tofu x
OMG. I had my fork ready. Sure wish we had taste-avision! Thank you for all these tofu recipes...I'm tired of the same old ones. You are bringing new life to tofu!
Excellent! Glad you like them, Linda! We'll keep 'em coming!
Great recipe video, LOVED that kitty moment lol ;)
LOL...thanks, Poe! Those little cameos are the only time animals will be appearing on our show!
I. Use the se of the peppers and regro them. In my veg Garden so good and organic my vegs tank you I love you food vegan God Bless you
I know in some of your or Chad's videos you mention an "oil free" option. LOVE your videos. Just wish you'd show more with the oil-free option!!! Thank you for doing these!!!!
I don't know if it will work for you but sometimes I use vegi broth in stead of oil♥️💚
My kids eat the center of the bell peppers!! I have the least picky children. Being vegan is the best! 😁
Hey, Guys! Heard of you guys via Rip Esselstyn's podcast/interview with Chad last year, but never viewed any of the Wicked Healthy videos until last month. Great how-to videos in almost-real-time and good humor! I am a desktop chef at work, and lately I've been cooking vast amounts of sauteed or seared mushrooms into my meals - potatoes, stir fries, and even salads, so I looked you up. I love the technique of searing mushrooms on their flat sides until they turn golden brown. It works well for me, and I don't even use oil, just a few seasonings and the mushrooms' own moisture. I am on the lookout for those large king oyster (?) mushrooms you use in your "meat-like" recipes. Would love to try those, but I've yet to find them in any stores here in Washington state. I am so grateful for what you are doing to "be the change," and I wish you the very best!
Thanks, Dave! Glad to have you on the channel...we are big fans of Rip-such a good dude.
Do you have a specific cast iron pan set aside for pressing? Also, do you have a guide for cast iron pans? How to season, clean, etc. Thank you! Love your stuff.
WOW yummy and delicious Mushroom and Tofu so very amazing

Italian style cooking👌
Informative and laugh out loud entertaining, loved it but expect nothing less from you...!!
Thanks, Dawn!! We'll do our best to keep up the double-impact of information+entertainment!
IDEA FOR A FUTURE VIDEO............Wonderful channel! Just found you. I wonder if you could do a wee series on how to do things with veggies that arrive seasonally in a veg box?
I'm a pretty good cook. I enjoy seeing what arrives and thinking up something delicious to make. I feel fortunate to have this skill. It would be great to promote not only veganism but buying veg with no packaging. Mother earth needs us to stop single use plastics. I live in scotland so root veg is in the main in winter but spring summer...... all superb. Id like to learn more things to do.
Thankyou.
Loved this! However, just FYI, I can't seem to access the Perfect Brown Rice link in this video, or find it on your channel page.
Hi Shelley, the Perfect Brown Rice (and other videos referenced) are coming soon! We'll have all of the referenced recipe videos linked in the next few weeks. Thanks for watching!
Looks delicious 🙏🏼😇💯👍👌
Thank you so much
Funny boy...love watching your videos. And listening to your clapperutencilinstrument🤣
