Don't be ashamed of using the "instant" store-bought ramen packs (just make sure they are truly vegan) and add some amazing veg to the bowl to make it next level!

FULL RECIPE:
Serves: 2 (if using 2 portions of ramen)
Preparation time: 10-15 minutes
Ingredients:
1 packet of instant ramen noodles (throw away the sauce packets)
6-7 Brussel sprouts (trim the bottom, slice in half)
Tenderstem broccoli
½ a block of tofu (extra firm), one half - sliced
6-7 Smithy Shiitake Mushrooms, trim the end of the stem and slice in half
1 Orange, sliced in half
Fresh root ginger, trimmed and finely sliced into thin strips
Spinach
White beans - 1 can, drained
Miso
Spring onions, finely sliced
Black Pepper
Granulated Garlic
Salt
1 tsp Sesame Oil
Directions:
Pre-heat oven 215dc / over 400fc
Boil the kettle and pour into a saucepan, turn on the heat
Season tofu in a bowl, place slices in a bowl, drizzle a little oil to coat and sprinkle with black pepper, granulated garlic and salt.
Add a little oil in a cast-iron pan on a hot heat, and add tofu slices
Add mushrooms to the tofu bowl, add sesame oil, salt and pepper. Toss the mushrooms in the oil and seasoning with your hands. Add in the broccoli, a little more sesame oil and coat. Transfer to another bowl
Add brussel sprouts to the seasoned bowl.
Move tofu to a baking paper lined baking tray, add brussel sprouts to pan and toss to coat, leave to sear, toss when slightly crisp, add sliced ginger
Squeeze orange halves over the brussel sprouts to glaze, mix lightly and place sprouts and tenderstem broccoli next to the tofu on the baking tray
Put mushrooms in the pan, press them with another cast-iron pan, toss with tongs and press again
Add noodles to pan of boiling water
Place mushrooms on the baking tray next to the sprouts
Pop tray in the oven and roast
Drain noodles
Whisk miso paste in the noodle pan water
Plate up your noodles
Add a little oil to the pan, spread out with kitchen roll, place in the spinach, stirring occasionally. Turn off the heat.
Add white beans into the water
Take the baking tray out of the oven
Ladle on the miso and white bean broth beside the ramen, the ramen will soak up the flavour. Place tofu on the side, along with the vegetables and finally the spinach.
Garnish with spring onion. - Jak na to + styl

Same basic prep as the Hoisin Tofu. Nice. Just started using cast iron...game changer for searing and burner to oven cooking. A nice little trick for adding miso at the end is putting in a strainer basket, submerging in the water and whisking ...this eliminates any unincorporated miso paste.

A "less than 10-15 minutes" beautiful, delicious-looking Ramen meal all completed in 20 minutes.
That’s still really fast. Considering it’s mostly Whole Foods from scratch.
I guess you could just heat up a processed packaged meal (yuck)… but… why when you can have fresh deliciousness

I've been watching some of your 'wicked' cooking vids and most of time i've enjoyed it because it's so causal and it reminds me how i am apart from the amazing cutting skills.
Alas, this one was a bit weak/disappointting, probabaly because i'm Asian and so i have a bit better domain knowledge. But for ramen i would definitely recommend the long dried one (similar to spaghetti) over the dried instant looking ones because they are ALOT like the ones you have in the restaurant and has more of a bite.
For the soup if you're making it your own, i'd personally use a sweet soy sauce base with bit of white miso for the savoriness, seaseme oil for the nutty tasty and some japanese chilli spice.

We just want to help people feel more confident cooking plant-based and hope that once the recipes and techniques are in the toolbox, you can run with them from there!

Hi Derek I saw you for the first time a few weeks ago on TV with Greg Wallace talking about your new vegan mushroom steak. Best of luck with that I can't wait to try some! I went to find some of your products - I live in Ireland- and found them in Tesco. Delicious thank you! And then I stumbled upon you cooking for/with deliciously Ella this morning. Scrumptious and I'm making that for my family this evening thanks! And that led me to your page. My question, I seem to be allergic to tofu even though it's delicious, so I stay away from it, Any chance you could do a tofu substitute recipe please? I love the way you cook. Thank you! Caroline
Hi Caroline, thank you for sharing and watching! In regards to the tofu substitute, in most cases you can use whatever vegan product you prefer-depending on if you're trying to avoid soy completely, or if it just seems to be a tofu thing. Mushrooms are our favorite ingredient to use for "meaty" textures and flavors, but you can also try seitan, tempeh, chickpeas, beans, etc.

Shamiso Muzorewa Electric kettles apparently aren’t common in the States. I’d heard that before and couldn’t believe it! They use mostly hob-top kettles.
I think you bought the Shin Raymun packets judging from the seasonings you threw out there, which actually aren't vegan owing to their E numbers.
I don't even like brussels sprouts and those looked fantastic
