FULL RECIPE:
Serves 2
Preparation time: Less than 30 minutes
Ingredients:
6 Eryngii Mushrooms, ‘pulled’
1 dozen small potatoes, halved
1 regular size bottle BBQ Sauce
3 TBS beer
2 soft burger buns
Fresh parsley to garnish
3 tbsp ‘pork’ seasoning blend (sage and onion)
1/2 tsp Salt, flakes
1/2 tsp Cracked black pepper
1/2 tsp Granulated garlic
1 tsp Vegan butter
4 Tbsp Sunflower/veg oil
Directions:
Pre-heat the oven to 200c (fan) / 275f convection or 400f bake.
Shred the mushrooms by running a fork along the fibres, away from the cap. Pull apart with fingers and place in a large bowl.
Add BBQ sauce to small bowl and whisk in splash of beer (optional).
In the large bowl of mushrooms shreds, add granulated garlic, ‘pork’ seasoning, salt and pepper and toss to coat evenly. Heat cast-iron pan on med-high heat until hot, add oil. Add seasoned shrooms and cook until brown on all sides, stirring occasionally. Once the mushrooms are hot and crispy, transfer them back to the bowl and add BBQ sauce, stir to coat evenly. Place sauced shreds onto parchment lined baking tray, spread out evenly and roast for 10-15 minutes until browned and caramelized and cooked well, stir mid way if needed to evenly cook.
Place the halved potatoes into large bowl, add a touch of oil, salt, granulated garlic, black pepper and toss to coat. Add additional oil to the hot skillet, then add the potatoes in face down to brown and cook for about 3 - 4 minutes. Turn over potatoes, they should be crispy and golden brown on the flat side, then place pan in the oven and roast for 10-12 minutes until potatoes are done, when you can pierce with a fork easily.
Butter rolls lightly on each open faced side and place on hot skillet for 1 -2 minutes to grill until golden brown on the bottom.
Assemble sandwiches. All the extras, optional!

you really are the shroom kings 🍄👑 can't wait to try this x
@Lewis Watson thank you, Shroom Prince!! We appreciate your support!!
@@DerekSarnoChef how about shredding it in a food processor?
@@face1647 we haven't tried that method yet and would be worried that the mushrooms would get over-shredded. If you try it, please let us know how it turns out!
@@DerekSarnoChef ok
@@DerekSarnoChef I've tried this two times now, but my mushrooms come out a bit chewy. Any advice to change that or am I doing something wrong? I really like this recipe & want to keep making it.
I'm moving steadily down the path toward being vegan and really appreciate your recipes, your cooking style, your personality....Thank you, without you I'm like a wild goat just foraging around in the woods, not knowing what's good to eat, how to prepare anything, etc you're my hero.
I love the fact I can use the same bowl, cutting board, knives, etc for prepping everything I want to eat for that meal without worrying about issues from animal products, contamination, etc. I also love the fact that it is no biggy if something is slightly undercooked. I mean what is the worse that will happen with an undercooked plant? A bit tough? Not going to poison yourself!
Apart from things like cassava or morrells you arent gonna poison yo self if its a bit raw yes
Our entire kitchens are more sanitary because we don’t bring raw meats in.
Lovely my mate! Catch up soon
Thanks Gaz! Means a lot. It's been too long.
You guys should so do a collaboration together. 😎❤️💚
Can we get another collab? Lol
Being vegan for the 1st 15 years of my life I thought it Would be harder going back to being vegan but it's really easy. I'm 30 now being vegan for 2weeks now I feel the healthiest I've felt in 10 years
You go, Trickxus!! SO happy to hear your story!! You got this!
👩🏽🍳👩🏽🍳🫶🏾👩🏽🍳👩🏽🍳…. I made some tonight, and am absolutely mind blown! I used Cluster Oyster Mushrooms, which are super expensive and Super Hard To Find Here In Phoenix, AZ but just wow!
Thanks for your videos, I plan to go completely meatless by the end of the year, and your channel definitely helps eliminate the excuses bckz I love cooking, just needed to know how to remake my favorite dishes! 🫶🏾
You’re the Bob Ross of cooking! (The tone, the relaxed style, etc.) :) I’m really happy that I found your channel&great recipe!
That is high praise, indeed! The legend of Bob Ross speaks for itself and to be mentioned in the same breath is beyond my wildest dreams. We’ll keep feeding you videos!! Thanks for watching!!
I’M SCREAMING-why am I just now finding you and your channel. I’ve been obsessed with mushrooms lately and wish I had more variety. Oyster mushrooms look divine.
Thanks, Caroline! We appreciate your comments and love knowing that there's more and more people coming around to understanding the amazing variety and versatility of mushrooms! That's definitely a part of our mission, so stay tuned for plenty more videos that show our favorite recipes and techniques when working with mushrooms. Thanks for watching!!
Derek, I’m not gonna lie... I came for the food, but I stayed for you. 🔥
LOL...I'm flattered!
Such a fox!
Came here from Gaz’s channel. I’m glad to find a pulled pork recipe without jackfruit because I’m not really a fan of the olive taste but I love mushrooms. Great swap!
Liyah Mariee me too, how have I never heard of him??? Love the soothing sound of his voice, great instructor😁😁😁
Thanks to you both!! We are so happy to have you and big thanks to Gaz for introducing us!!
Jackfruit tastes like Olives??!! I dont like olives.. guess i gotta suck it up since I already bought 8 cans of it -______-
@@JayBoooks jackfruit tastes a bit salty/fruity to me but after you drain/rinse/smash the pieces and seeds, mix in some BBQ rub on them, a couple drops of liquid smoke and a splash of tamari and let them marinate for a bit before you cook them with the sauce and they'll taste more meaty... better yet, mix the mushrooms in there too with the jackfruit and then you'll have the best of both worlds. 😎
Gaz could learn a lot from this channel!
I love how he cleans as he goes! The food looks amazing as well.
Can't wait to make this! LOVE the nostalgic clips of some of my favorite shows!!😄👍🏽
Wonderful. Thank you Derek!
The sound effects are fantastic 😂 I just ate dinner but now I'm hungry again. Seriously looks so amazing 🤤 The commentary and movie clips are pure gold. Thanks for the amazing content, Wicked Healthy team!!
Annaliese, you rock! 💥 Thank you for watching and leaving such a nice comment!! You're the Bomb! I thoroughly enjoyed your cooking shows (amazing recipes, great presentation, awesome photo shoots and very funny videos, dispersed throughout the videos... "Wickedly Ingenious!" ).
So this was delicious! I left the mushrooms in the pan a bit longer (didn't bake) and then added it to a wrap with Lettuce , rocket leaves and some vegan mayo. This was one of the most delicious thing I've ever made. Thank you! 🙏🙏🙏
I made this last night. It is fantastic and super easy. So good...I've made vegan BBQ before with jackfruit. It can't compare to these king oyster mushrooms seared on the cast iron skillet. Hats off to Derek. He is doing great things!
Thanks you for your time and effort in making this!!! And posting the recipe. Greatly appreciated sir!!!
I really enjoy your channel, can't wait to try all your recipes! Ordering your cookbook. Keep up the great work, D!

I’m originally from NJ, now living in the UK. This brought back so many memories - culinary and entertainment!!! I’m slowly trying to convince my meat-obsessed husband and son that veggies can be delicious. Thank you so much for creating food like this!!
Unbelievable. I love this recipe so much I’ve made it twice in 2 days. Thank you guys!
LOL!! It's totally addictive!!! I'm the same...hard not to love the way these shrooms come out!

Thanks, Ruth...those words mean the world to us!!
Used theese tasty mushrooms the same way but with a homemade mango jerk sauce, soooooo yummy. Loved the press idea to bring out more flavor.
Thanks! Love hearing your riffs on the sauce!!
Awesome!!! Can't wait to try this. Thank you. :)
Wow! This is wicked in all ways possible! Thank you 😊! A definite must try. Way easier than the pulled pork of my past. Thank you ❤!
Yes !! This looks awesome. I will be attempting this recipe soon.
Love watching ❤️
You make me happy 😊
Awesome brother, keep it up. Love the skits!! Very Wicked!!!
Just made one. With beer and buttered bun ) Tastes amazing! I was also lucky to find organic King Oyster in the shop (i'm in Ukraine now, obviously that wouldn't be an issue having a Wholefoods (or Tesco for that matter) around the corner. I didn't expect them to have King, was going to settle for regular oyster, but i was in luck, i guess. I'm really crazy about organic, so the fact that they were really cheered me up :) Thank you for the inspiration!
Thanks for sharing, Alex! And that's awesome you found the organic King Oysters in your neighborhood shop!!
A little late to the party but wanted to say this dish is totally fabulous. Its also fast and fun! Thank you very much for sharing the magic with us.
Derek, I have been "vegan" for 2 months and this is by far the best thing I have had that reminds me of meat. I live in a very small rural town in Kentucky but I found these mushrooms at an Asian market near me. They get them one time a week. So I tried this tonight paying close attention to the times you mentioned and the seasoning. It was awesome and this will be a regular for me. I also found some blue oyster mushrooms and will likely do those tomorrow night. Thanks for your contribution.
Can't wait to try this! Looks amazing!! I have made vegan oyster with these mushroom. 🤤
Awesome! How often do you do videos? Can’t believe I just discovered your channel 🙌🏼
Hey Lilly, thanks for watching and supporting! We are planning to release a new episode of The Wicked Kitchen every week, and hopefully sprinkling in some bonus videos here and there when we have fun things happening that we can share with you all. We appreciate you!!
Making this tomorrow!! Love the cookbook!
Thanks, Kenny! Glad you are loving the cookbook!! Any specific recipes from the book you are most fond of?
That looked really tasty and I can only imagine the smell!🤗 I love your style of cooking, chef-y but still just a guy making great food! The edit and cut aways were hilarious. 😂
I'm old enough to get all your references! I just subscribed to your CZcams and started following you on Instagram today so I'll be trying to catch up. You Rock!🤘🌱💚
that girl in okc Thank you! We will always keep it real, and always keep you guessing with our crazy videos, but our mission is to bring plant-based deliciousness to all!! Thanks for watching!! 💚💚💚
I love this style of video (glad to have found you via Gaz). The sandwich looks incredible! Subbed and looking forward to going through your content!
Thanks, Crystalline! We're happy to have you over here and big thanks to Gaz for the amazing collaboration the other day!
I'm totally gonna make this this week 🤩 I love king oyster mushrooms!
Yes, Crystal! Dig in and make some larger-than-necessary BBQ sandwiches!! 😂 Thanks for watching!
Awesome recipe man, can't wait to try this!!!!
Thanks Steveo!
I am absolutely in love wit this recipe! I have tried it with king oyster mushrooms, enoki and oyster mushrooms. The first two are great but with oyster shrooms is so so.
Really enjoyed that...especially all the flashback scenes!
Glad you enjoyed it!
FINALLY! I found a king oyster mushroom and 2 blue oyster clusters at my farmer's market 5 minutes ago. I'm making this and the BBQ mushroom steak tonight.
Yesssss!!! Get ready for a flavor party!! 🎉
Just cooked this using oyster mushrooms and it was delicious... the kids love it, healthy and easy to cook in a short amount of time. Thanks much for sharing. Will be ordering the cook books.
Every time i rewatch this video you’ve added more “memes” lol 😂
Love the history!
Thanks 🙏
Love love your channel. The movie clips are even more awesome and remind me of being a child in the 80’s. I miss my BMX bike now.
Oh man, Paul...don't even get me started on how much I miss my BMX...we're going to do a 90s mix on an upcoming episode, just to brush out the cobwebs a little more! 😂
I absolutely love this! I'll definitely try it out tomorrow with oyster mushrooms. I hope it's similar to how you showed it, I mean I'll try to fork them apart but I guess I'll have to cut some of those tops in slices too. I don't have an oven though, so I'll just fry them some more in my cast-iron pan. Thank you so much!
And by the way, I love that you included a bit of Bob Ross, because you are so similar to him! It's very relaxing to watch you cook. :)
Hey Sebastian, let us know how it turns out! This recipe is one of the best!!
Thankyou for the effort of making this great video. Spreading ethics, health and happiness. All the best to you.
Thank you, Jane!! We appreciate your support!
Such a great idea. I am looking forward to try it out. 😍
Cheers Chefy
I’ll serve this bad boy up for staff meal one day.
Love from Melbourne
Wicked! Thanks Chef!
Lucky staff! Just don't let your customers see, they'll just hound you to death asking why they can't enjoy some too.
Wow! So excited that the CZcams algorithms finally recommended your channel. My daughter and I both have had your cookbook for awhile (one of our faves), and I didn't know you had a channel. Just subscribed. Love from the NW USA! ♡
Hey Martian...so glad Google finally introduced us!! And we're incredibly grateful that you're enjoying the cookbook! Much love to the NW!
OMG.....ARE YOU KIDDING??????!!!!!!!! THAT LOOKS SO DELICIOUS!!!!!!!! THANK YOU SO MUCH FOR THIS RECIPE AND VIDEO TUTORIAL!!!!!!!❤️Kathy
You are soooooo welcome, Kathy!! Thanks for watching and sharing!
You bet!
I think I’m gonna turn this recipe into a pulled pork taco recipe 😋
Yes!!!
Ohhhhhhhh that’s interesting!!!!!!
Hi Derek - awesome work you are doing - love this channel - I was at the checkout in my local Tesco's here in the UK and stocking up on Wicked Kitchen Oyster Mushrooms (a much longer shelf life compared to others) and the checkout lady, who was super nice, commented on how nice they looked and that she could not get her two children to enjoy the meat substitute she uses (begins with Q - no prizes for guessing) - next minute I'm raving about your pulled pork method, pointing to the Wicked Kitchen label and telling her all about you being the Tesco innovation chef - she had no idea - I spent a while telling her your brilliant method and then realised I was holding up the queue who seemed very interested, so I got a bit embarrassed and cut it short - but she did not know about Wicked Kitchen and she works there! Anyway, she can't wait to try it for her children so I'm spreading the word! Keep up the amazing work and thank you.
BOOM goes my head! I just made this and minds were blown! Sensational recipe. Much thanks.
Thanks for watching, Jeffrey!! It never fails...super fun to make this for people and get that reaction!
DUDE! I happened upon this video after watching you recently with Gaz Oakley. Love the format (and the food
DUDE!! We are so happy to have you over on our channel, and we are so grateful to Gaz for introduction you to us!
I think you and your brother are among those who are central to the establishment of a Vegan culture.

Just made this... 😱 my wife and I are speechless to how tasty and even better than meat it is. Well done Derek, well done.
That is awesome to hear, Carlos!! And, for the record, we agree with you completely!!

22 minutes I sit here, it’s so disappointing I can’t just get a taste at the end of the video lol
LOL...I'll make sure to take a bite of things at the end from now on!
Literally was thinking the same
🤣🤣🤣
Just went out & bought all the ingredients for this. I cannot wait to try it. 🍄🍄🍄

I love Derek Sarno. Yall this guy is the man. Keep watching him. He's amazing. He's taught me things and I've been going strong this 21 years
High praise, Tasha! Humbled and grateful for your kind words of encouragement. 💚
Great video glad I found your channel. Looks delicious so I’m trying to make tonight if I can find the king if not oyster. Just enough funny infused in video 👍
Thanks, Yanya!!
Omg I was thinking about that artist at 2:37 the other day! Too funny! Great recipe!
Made this yesterday. Super yummy even found Elvis Juice in Ann Arbor, Michigan! I probably over cooked the mushrooms in the cast iron pan as I was trying to get some brown on them - they turned out quite chewy, rubbery. I #'d Wicked Healthy with my IG pictures. Thanks guys - love your stuff!!
That's so beautiful, I have to look at it for a while! Sight for soar eyes! Reminds me of my childhood, but in the best way! :)
Thanks, Anna! Just because we choose to give up (or consume less) animal products, doesn't mean we have to sacrifice flavor and deliciousness!
Try rice bran oil. It's thicker like the consistency of melted fat, and it takes on the flavours beautifully. 😉 Also it's high vitamin E, which is good.
I made the barbecue pulled mushrooms for my dinners, exchanging the potatoes for green beans and asparagus for low carb diet. This is absolutely delicious. I had to stop myself from eating the next day’s meal! You’ve gotta try this!
This was my dinner tonight, absolutely delicious!
(a great way to spend my quarantine..... lol)
Was yours chewy? I'm trying to get rid of that chewy texture?
@@LadyDivine mine was chewy too! I found that if you bake them first, with only seasoning until every piece is crispy, it won't be chewy.
@@treasurevalleysalsa thanks
Looks so good, thanks ) Less cuts would be appreciated but some add character. Enjoy!
That is so awesome!
Just made it!!! Delicious..... Thank you!! 😋
Glad you liked it!!
It's so true, when we make Vegan food, we have to take a picture of our creations...lol It's absolutely marvelous ....hahahaha!!!
😂😂 so true...
This was great. Thank you!
Great recipe , fabulously unique technique. Love your show
I made this today for lunch. Omg,it's so freaking delicious. Can't stop eating, and the mushrooms have so much flavor.. happy eating!!
