A show-stopping Potato Wellington, tender Butternut Squash "Filet Mignon" style, Iron Roasted Herby Tofu Steaks, Horseradish Peppercorn sauce, an amazing Kale, Avocado & Grapefruit salad, and Roasted Veg with all the trimmings!

Good thing he is my favorite. Benefit of lockdown is that the mushrooms are being delivered to me by a local mushroom grower that I was not aware existed before.

Butternut squash is one of my favourite squashes so it's great that Derek is doing a Butternut squash recipe. It's unfortunately that Derek's stuck(self isolating)in the United States but his and everyone's safe and wellbeing is more important. Maybe he will have to do his Tesco's job from home in the United States.
