    Great journey! Glad to hear another backpackers story regarding low carb diets. I too have been doing LCHF for 5 years and can’t imagine going back. I don’t refer to my diet as keto anymore as it usually brings the follow up question-“You don’t eat any carbs at all!?” The small amount of carbs I eat are from vegetables-broccoli, spinach, etc. I limit total carbs to about 10-40g per day. What is your daily carb limit? Do you eat similar vegetables?

      We eat about 90% broccoli and cauliflower. 10% a mixed veggies stir-fry. I'm on a strict low-oxalate diet due to kidney stones, so unfortunately can't eat spinach. Short follow-up video coming soon showing our meals. We're on the same carb count as you are...10-40g per day.
