    I started working with wheat berries about 10 years ago. However, as a Southerner, I grew up making biscuits and yeast rolls and learned the feel of dough that is going to bake up well. That translates neatly to the feel of good bread dough so, if you can make good biscuits and rolls, making good bread is just a step away. A little trick, put a pan of water on the bottom rack of the oven, helps the rise. I learned to do so when making sourdough and tried it once with store bought yeast bread and it worked so well I have done it ever since.

      @@homewithkim you can also try diagonally slashing the tops of the loaves 3 or 4 times just before putting them in the oven - also helps them rise. I use a kitchen scissors, but the real pros use a special blade. :-)

    I was told by an old retired baker keep yeast in freezer and there’s no expiration date for it. I’ve followed that advice and used yeast that date said expired three years ago works fine guess yeast can’t read! I just put towel over the bowl depends on day sometimes takes another15 minutes and after shaping I found a plastic lidded container that hold three cast iron loaf pans if I need that much and let second rise there to inch above pan top edge then turn on oven and put loaf in( don’t waste my propane with preheating) as it heats up I get oven spring that’s wonderful beautiful loaf. Heard this tip from another fresh milled lover. It works and it saves fuel too.

    It looks like you have a double oven like I do. The top one is smaller so that’s why it gets a little hotter. I just got my wheat berries so I’m so excited to start my bread making!

    Hi Kim! Im so glad you have a channel! I've watched for a little bit.. I've watched Adams channel for about a yr and a 1/2??? He's really funny! Love ur family and told him I'd like to hang with you guys! 😂 I have 5 grown kids, worked with teens in youth groups for 30 yrs or so, so I love kids! I only have 2 grandsons that live 8 hrs but in northern Idaho with 4 seasons I don't get to see them as much as I like! You should have Adam have a contest and whoever wins gets to come spend a day with you guys! But of course I'd like to win! 🤣
    I have the grains now bought locally and I've seen the videos with the grinders. Right now idk if I wanna spend $300 on the one you have and I was looking at the cast iron ones and they say you have to oil them like a cast iron pan. That sounds like to much work. Have you looked at a lot of them and/or do you recommend one that is a good hand grinder? Or one I found is electric for about $45. It looks like it has a big feeder but looks more like a coffee grinder??? So I'd love your input if you've checked them out.. thanks and God bless you and your family!! Love and Prayers🙏❤

    I always keep my yeast in the freezer, and you should try locking your mixer and the dough looks too sticky. I use a heating pad with a towel folded four times over top of it and then cover the bowl. You might like bread beckers. They have a CZcams channel and a website. Her cookbook is great and the bread recipe is the one i use all the time.

    Also another point is this is the first time I come accross a bread recipe that adds yeast after mixing the flower, this is new to me.

      That is because it’s better not to add the salt and the yeast at the same time. Salt can kill or inhibit the yeast if added at the same time. If you are using a more natural salt than the highly processed chemical laden salts on the market, for example when it rain it pours types of salt, then the natural salts can be bigger or coarser granules and adding them with the warm water allows the salts to melt. It’s very important especially when you use a bread machine to add the salt with the warm water and the yeast on top of the flour for best results.

    Love your videos. Just got my first bag of grains. Going to be trying soon. I have my own sourdough so I don't use additional yeast unless I'm in a hurry. One suggestion I would have is do your window pain test at the end of your rise bfor going into your pans. Mine starts out shaggy just like yours but I go back, do some stretch and folds till I get the softer dough feel I'm looking for. Don't be afraid to punch it down a couple times and then continue to rise. I do not knead my dough. Another thing that can affect your crumb is temperature. I cook at 400 till it comes to internal temp of 200. If you take it out to early it can be a little spongy and rubbery. I'm going to try some rye bread soon. Thanks for the videos.

    I keep my yeast in the freezer. I also have an extra package that I keep in the freezer. After opening a package, I just place it in a ziplock freezer bag and grab it when needed. The yeast has always been good to the last teaspoon. I also like to use the paddle attachment just to mix the dough to a rough mass and then switch to the dough hook. I think the dough hook for Kitchen Aid stinks for mixing. I love the flour sack towels and they were fairly cheap at Walmart before the inflation.

      Me too, I have several pounds in the deep freeze and a Ball jar I keep in the refridgerator freezer. The yeast is about 5 years old and still proofs right up.

    If you have any concern about the viability of your yeast, ensure it is at room temperature first. Then make a poolish or similar yeast starter to test the viability. Then, when it is fully active, pitch it into your bread recipe. Adjust for the liquid and flour used in the yeast starter.

      You don't have to butter it, but it is an option.

    Well..... I just finished my first loaf of bread! It's TERRIBLE!!!!! LOL!!!! 😂😂🤣 I'm gonna try again soon. I'm sure it'll be better next time.
    I followed the basic yeast bread recipe but something clearly went wrong! I'm not discouraged though! Looking forward to trying agin!

    Nice bread, I could almost smell and taste it. It's often overlooked as a given, yeah, boring bread, or dry (often at restaurants, etc). Home made bread with butter, one of the best foods. Hott Fuzz fans I take it.

    Coconut oil is a high heat resistant. Heart healthy fat.
