Argentina Steak Tri-Tip with Bourbon Cream Sauce

- What's your favorite way to prepare tri-tip?
Follow along in today's video as I prepare this beautiful two-pound tri-tip from Porter Road by seasoning it in advance, searing it on the PK Grills PK300 Aaron Franklin edition, and then making an off-the-hook bourbon cream sauce to finish it off!
The ingredients I used for the sauce are as follows:
1 stick (8 tablespoons) of unsalted butter
about 1 cup of sliced baby bella mushrooms
2 cloves of finely chopped garlic
1 tablespoon of Atlanta Grill Company Argentina Steak seasoning
1/4 to 1/2 cup of bourbon
about 1 to 1 1/2 cups heavy cream
This sauce can be whatever YOU want it to be! Important note though... this sauce needs to be used IMMEDIATELY. It will not hold up for reheating later....

Why wouldn't you indirect cook with fat cap up so fat doesn't fall away?
I suppose it's just my personal preference. Most of the fat that is going to render has rendered by the time I move to the indirect side of the grill. The indirect portion of this cook was rather quick.

Why not use a cutting board to score the fat? It caused me physical pain to watch you do it in the tray. Also that meat didn't look dry aged at all.
