- This video will show you how to cook the perfect tri tip recipe! USDA Prime tri tip smoked then seared over oak! Yeah, baby!!! This is my favorite way of cooking this tender and favorable cut of beef! Seasoned with just a few ingredients (recipe below), then let the smoke and fire do the rest. I cooked this in my Lone Star Grillz offset verticle: lonestargrillz.com low and slow over coastal oak, then seared them over the LSG's firebox using Grill Grates. This resulted in some of the best tri tip I have EVER had! Simply amazing!
Tri Tip Rub Recipe:
1/4 cup kosher salt (or sea salt)
1/4 cup ground black pepper
1/4 cup dehydrated minced garlic
1 1/2 tablespoon dried parsley

Thanks for the nostalgic memory of Pinnacle Pete's. I was really sorry to see that place go.
Fabulous color on those perfectly cooked Tri-tips Greg! I like mine with a little smoke and searing at the end also, so I really enjoyed this video. Wish I was there to help you eat that!!! Cheers brother!
Wow, those tri tips looked amazing! Great cook Greg!
I saw this video a little over a year ago, tried it, now it’s my go-to Tri Tip cooking method. Outstanding!!
Love Tri-tip, beautifully done.
Thank u sir for keeping it simple and enjoying it the same day!!!
Great cook definitely going to try it out. Thanks for the tips
Love Pinnacle Peaks! Great memories! Thanks for the video, will be grilling this weekend!
Wow!! You crushed this cook! The trip tips look amazing.
That is looking amazing and I like this cut too. Again a very nice video 👍👍👍
Those Tri Tips turned out great! That seasoning combo and grillgrates made for a awesome appearance and I’m sure the taste was right up there too! Nice video!🔥🔥🔥
Loved it. Beautiful steak with sear marks, and love that LSG firebox. Enjoyed Greg.
Love tri tip & one's going down tomorrow. It looked great Greg, as usual.
Great looking tri-tip Greg, thanks for sharing.
Great vid man. Amazing looking grub as always! 👌🏻
They look Great can't wait to see them
Looks amazing and I love the oranges growing in the background
Fantastic cook brother. Tri tip is my favorite cut of beef. Thank you sir.
That tri-tip looked so mouthwatering. Cheers, Greg!
Great Video as always Greg!
Tri-Tip is high at the top of my favorite cuts list. I’ve always likened it to a nice Filet Mignon type flavor, very beefy yet tender. Those were beautiful! It’s weird that sometimes we can get Tri-Tip here and sometimes we can’t. It also fluctuates a lot in price but I grab it every chance I have. That Lonestar really puts some beautiful smoke on everything I’ve seen you cook in it. Naturally the sear was excellent and I only wish I was there for the taste test 👍🏼. Cheers, brother! 🍻
Luckily in Ca. Tri Tip is as common as sunshine.
Thanks for the great video Greg. Funny that you mentioned Pinnacle Peak. I was a cook there for about 4 years in the early 70's. I worked in the El Cajon, Ca. location and that is where I developed my love for all things grilled and barbecued. I live in NC now but still remember the days of Santa Maria style cooking in the center of a restaurant surrounded by many hungry dinners! Loved your video and I am now a subscriber. Looking forward to more.
David
That’s a beautiful tri tip right there
It’s funny I just put tri tip on my shopping list and you put this incredible video on my tablet. You must be psychic. Thanks for the great video.
I bought your book “American Barbecue Sauces”. I can’t believe all the great sauces and dry rubs you have in it. I’m going to wear it out using it so much.
I love Tri-tip and I wish it was easier to find here in Florida.. we have to special order it most times unless we go to a restaurant supply place.. Nice cook Greg!
My favorite. Nice job
Can't wait to try it
Excellent cook. Making my first tri tip right now
Greg you make me hungry every time you put up a new video!
I have finally been able to find a local source for Tri-Tip and I'll be doing it more. Those Tri-Tips looked great!
Loved the video, Greg! I have exposed dozens of folks to tri-tip here in San Antonio over the past 5 years. At first, no one had heard of it, now it is readily available at our local grocery chain. I usually sous vide it at 132-135F for 8-24 hours depending on fat content/marbling and sear over hot lump charcoal or under a broiler. Regardless, I have made a lot of friends with this under-rated cut of beef!
Those looked awesome! I do tri-tips on my Weber Performer. Doing a reverse sear with coals or lump (and wood) is a bit more work, but it comes out great. Never used coastal oak. I bet it’s great. Thanks, Greg.
Nice Job Sir... Thank You for sharing
Beautiful, nice work 👍
Oh yeah that first cut/slice was perfect, just perfect. gotta hunt some NJ tri-tip down. another steller early morning watch. thanks bud and Enjoy your Sunday.
If you're ever in northern NJ you can go to any butcher shop in the ironbound section of Newark and they'll most likely have it available.
Piniacle peak. Loved that that place! Tri tip is now becoming more available in my AO. Pro tip makes great facsimile of carne asada tacos the next day. Great video Greg.
In Kansas we never have them in store but I need to try this. Looked amazing great cook.
Tri tip, first thing that comes to my mind when I hear or see California barbecue which a lot of people don’t associate the 2 words.
Man Greg!! I love your videos... I have to special order tri-tip here in Florida :(
Looks fantastic... everything you cook does my friend
You made that look almost too easy, fantastic end result!
Say, I'd love to see your take on a proper mixed grill, different rubs / marinades on an assortment of meats to make one mega feast.
Outstanding (Cook) Brouther that try tip looks so delicious. I cannot wait to try this recipe out. A lot of the time simple is the best way thanks GREG for sharing. Keep smoking T&T BBQ
Looks delicious Greg 🤤🤤🥩
Grill marks are a thing of beauty.
So glad I caught this. I just picked up a Tri and wanted to throw it on this weekend. I'll probably use a little USS Cow Powder but that is just me. Thanks. Enjoyed the video.
There’s a pinnacle peaks out here in Colton CA. Loved the steaks! Will definitely have to try their tri tip next time.
These are still super hard to find in upstate NY Looks great Greg!
Tri-tip is definitely underrated. Every time I cook one slow and low they turn out awesome, I’ve never smoked one though. Next time I see them in Costco I’ll be picking one up to smoke.
Good job
Those turned out perfect. Tri tip is very underrated here in Texas I am glad that some of the stores are starting to stock them.
It is one of the easiest meats to BBQ, only takes 45 minutes, Brisket and Pulled Pork 12 hours, you get a big rush at the restaurant Tri Tip in the evening. I do not know why every BBQ restaurant does not add it to their menu. It really is a no brainer. And just think all of those Ca. trans plants would love it, LOL
Like that knife. Nice job.
Nice, Greg.
As a native of Santa Maria you did us proud with those beautiful tri-tips.
Hey Johnny I'm in Santa Maria as well.
Hell of a job on that Tri-Tip Greg, you did it proper. I could almost smell the oak wood smoke and char. I'd love to collab with you some day.
That looks delicious!! A nice medium rare!!
Damn guy, I didnt know you had this channel. I searched tri tip and you popped up. Soooooo, naturally I subscribed!!
😂 I could eat it plain all day so good. Great video!
Nice and simple rub I like that. Let's that meat shine through. Another killer cook Greg! .
Thanks, brother! See ya' in February!
Absolutely Delicious. I love Tri Tip Off to Costco to get some to cook right now 😆😇😇 hahahahaha Thank You Sir
We're so used to tri-tip here I'm frequently looking for something else. And if my dinner ideas don't inspire, "OK dear, I'll get some tri-tip for dinner". It's everywhere here in So Cal, a go-to staple. So easy, indirect cook to rare then sear to medium rare, on almost anything. Weber kettles, firepits, even beach fires with a grill thrown over it work, but personally I think Santa Maria grills do it best. Nice job on that cook!
As for the cook.. Very nicely done sir!!!
I live by Pinacle Peaks used to go there all the time and have had my tie cut.
Okay so I waited until the end to give you a thumbs up. Being from Santa Maria I had see how you would do these.
Not too bad. The end result was acceptible. But it's still best to Q'm over red oak and a crank grill. You got the seasoning and temps correct. Good job.
Heck I was camping at the beach this weekend and had em in a Weber kettle with red oak chunks on the charcoal base to get it going. Gotta do what you gotta do.
I like the rocking tip for better sear marks.
Delicious looking rub on them Tri tips. Gonna throw one down on the grill grates tonight..might wear a tie and see what my wife does.
Pinnacle Peak in San Dimas ! Always had a great meal there ! What a place ! Bench seating , great friendly atmosphere, a true classic steak house !
I really miss Pinnacle Peak! I think there is still one open up in Colton, about 2 hours from me.
Dry Aged Tri-Tip video might make a good follow-up.
Scottsdale, AZ had a Pinnacle Peak Steakhouse North of town just below Pinnacle Peak Mountain, for many years. Same thing they would cut your tie off and hang it in the rafters of the restaurant. I remember when the central air would kick in, those ties moved like a field of wheat in a windstorm. The steak pit was outside and was huge......they used Mesquite wood.
I just picked up a tri-tip @ my local COSTCO (Atlanta, GA) for $3 PP!! Nice to see, when everything else seems to be going up Up UP in price…will be emulating this technique over the weekend!!! Bet this would be great with some fresh Chimichurri 😋 Cheers!💕
Tri tip is one of the underdogs of beef. Incredible flavor. The slicing is crazy important like you mentioned, but I love them. I like to sous vide with a quick sear on the Blackstone, but the way you smoked is probably even better for flavor.
Thank you, Roger. Sous vide works great, but you're right. The smoke flavor of this technique is killer.
I would go to Pinnacle Pete's while I was stationed in the Tucson area. As an Airmans on payday we would go out for a great steak. The bbq pit was in the center of the restaurant and cut off ties were all over the ceiling including a Air Force tie from us. I sure miss it.
Grill Grates are a game changer, takes a frustrating gaser to a new level.
pinnacle peaks is dope
These look great wish I was your neighbor 💪🏽💪🏽 and those grill marks 👌🏽
That's a good beer! That's the Cali Cruzin
Looks fantastic
I’m making a tri-tip this afternoon on my Pit Boss pellet smoker, using the reverse sear method also
Nice job Greg! I wish you Californians would quit eating up all the Tri-Tip so we could get some in our area. 😁 Those Tri-Tips were cooked perfectly. Those grill grates fit perfectly on top of your firebox. I'm gonna see if my Yoder Grill Grates fit over the opening of my Frontiersman firebox. Great job buddy!🤘
@@maddawgnoll 😁
Tri Tip has been a west coast staple since i was a little boy. can remember when people on the east coast and other countries didnt know what I t was. Used to an inexpensive cut but now that in such high demand tha price has doubled
@@Just4CaliJames I started cooking it about 10 years ago when I lived in Arizona. It's really popular there as well. I'm sure it was the Californians that brought it over. 🤘
Awesome! Looks delicious! How long did you sear em on the grates?
Fricken Delicious looking Tri Tip 👍👏👋💪...we have Pinnacle Peak here not far from Los Angeles in San Dimas and yeah they do cut your tie in half if you wear one 😀😄😁..its hilarious and yes they make a great 16 ounce Rib Eye that I love !!!!
ay I used to eat their as a kid!
Sir, just discovered your channel, luv'in it! Minor suggestion, for me, I swapped out the course salts for course gray sea salt. OMG what a different taste. Give it a try.
Looks amazing. Ever had the tri-tip sammy in SLO? Firestone Grill. I cant wait to try your method. Thanks.
I remember Pinnacle Peak. There was another steakhouse up the road a-piece that my dad used to take us to. OMG. I forget the name. I don't think it was the original Pinnacle Peak. It was the best. I little bit of a drive from where we were at 32nd St and Camelback but so worth it. Always a treat.
Tri tip doesn't need a lot of help, and you can tell that is prime when you cut into it, nice job buddy!
GreenhornBBQbeer is tri tip lean or fatty? I saw on a website that tri tip is a lean cut but I’ve heard from others that it has a high fat content.
I remember this restaurant being featured on an episode of frasier!
You gave it away pinacal peak is such a great steak house in phoenix, grew up their.
Great stuff! I think they actually started in Arizona. I miss Pinnacle Peak!
Kind of a different way of doing it. Looks sweet.
Yes, those do look really good. Pinnacle Peaks was at it's finest when they were on the corner of Magnolia and Bradley.
YES! That's the location I remember so fondly. They still served up a good steak in Santee, but it started to go downhill. When they moved to Lakeside, it was over... Cheers David!
How funny you mention pinnacle Peak. I live 5 minutes away from that place and they are still grilling on those big open pits. Nothing like seeing a 36 ounce T-bone get dropped onto a huge open pit 😋 those tri tips looked great and that Lonestar offset you have is my dream smoker, love that thing
Are you in Arizona or up in LA county? Ours was in the East County of San Diego and closed up shop several years ago now. Loved that place!
San Dimas/Glendora is the one I go too. Didn't know they had other locations.
Only 2000 likes this is a nice video , Have a great day buddy I’m trying mine right now
Great job Greg, I'm deciding which way to go 24x36 offset or the 24 vertical any input? Also what size are your grill grates Thanks
Love the videos and I’m subscribed but doesn’t the parsley burn? Thanks for the great work!
Why am I watching this when I'm hungry and have no way of getting a tri tip. This is pure torture! :D
I live on the central coast by Santa Maria. I adore tri tip. People who love BBQ need tri tip in their lives. Oak is very necessary, although your grill is very non authentic. Suzy-Q spice rub is a great basic authentic rub.
Where did you get those grates for the fire box?
Smoke always improves the flavor of grilled foods. Even if they are only exposed to it for 15 or twenty minutes, it's still worth it. It's dinner time here in Michigan, fix me a plate, please.
I like tritip blood rare cooked direct fast and hot. It rests into cooked. It isn't as tender, but the umami flavor is MUCH better hot and fast than slower.
I have been to pinnacle Pete's in Arizona. What a hoot
Yeah, I guess the owners of the restaurants were from AZ. They ended up getting divorced and the decline started. Bummer...
That looked fantastic! Would you tell us about those wireless thermometers? Is the wood base unit custom or is it something one can buy?
I was testing that unit to see how it would work in this pit. Worked great! meater.com/?gclid=EAIaIQobChMI1aSq_42Q5wIVgtdkCh33IwciEAAYASAAEgJgsvD_BwE
Looks AMAZING! Did you say Coastal Oak as your wood? Where do you get that??
It grows naturally out here. I have a friend how is a ranger that hooked me up.
I have been going to Pinnacle Peak for 45 years. They have always used mesquite to my knowledge.
