I love Tri Tip. I live in the NW and they are in every super market up here. They have gone way up in price in the 25 years I've been cooking them as the popularity of the cut has taken off. I used to buy a nice sized Tri Tip for $5-$6. Anymore they are $16-$20 but they are still good and I still love to cook them for the family and neighbors. Keep on posting these videos Russ. I feel like I have a "why didn't I think of that" moment every time I watch one of your videos. I tell you what, if we were neighbors we could have some good cook outs. The other neighbors would be eating right. Take care of yourself Russ and keep on making videos.

This was a super sandwich. Never had tri-tip. Never heard of it all of my life until I started the YT channel. Don't see it here either. I did smoke 2 chuck roast yesterday. They turned out nice. We made sandwiches with Dukes and Horseradish sauce. Ended up adding some srirachi sauce to kick it up some. Probably freeze pint bags of the rest of it and bring out for Philly Cheese sammys later. Loved what you did with this though. That sauce was special, as well as the Juis. Thanks Rus

Thank you very much! Some people just don't get it, but cutting the tri tip or any roast in this fashion is paramount for the best experience in eating, as the thin cuts, cut across the grain will make a tougher cut of meat much easier to eat and chew, and appear more tender than it really is.

I'm kicking myself for not entering the contest but I've been pretty busy up here making ribs for firehouses and clubs as well as my 8th annual Father's Day Extravaganza last weekend. I am so hungry right now! well there goes the diet!lol,I do this very similarly, about the only difference is I add some rosemary chopped and crushed to the mayo mixture, give it a try let me know what you think
I only monitored the meat temp on indirect, and it took around 30 minutes total time to reach 130 degrees internal temp, before foiling, and I did flip it once in the process. After foiling it raised another 10 degrees in temp to 140 degrees. I did not monitor the sear temp either. No need to do so on either account, but I had the grill grates over direct coals for around 10 minutes to get them fully up to temp before doing the sear. The hotter the better. I know my Weber grill and how it behaves very well. I hardly ever depend on a thermometer for a cook like this, but I did want to monitor the internal temp on this cut of meat, but on a ribeye steak or other steak, I always cook by touch, feel and looks.
I still think you should tell the Butcher. He has his butcher shop in Long Beach Mississippi called Rick’s Meat Hook. He had to special cut this for me because tri tip is not sold in our area. I’m sure he would love to debate you on this. Their shop phone number is 228-265-7776
That's the cap of the top sirloin. I see meat shops trying to pass those of as tri tips all the time. Look up tri tips and you will see that you didn't get what you paid for.
Well, after recently doing another tri tip video and learning more about them since it's not a cut I can get easily, I do notice the grain on the one in this video is nothing like it's suppose to be on a tri tip or like the one I did a few months ago, so maybe ole Rick did rip me off. Oh well, it still made for a good sandwich. Live and learn right?
