hi, i just want to know the difference between cooking the butter and mixing the butter with the rest of the ingredients? thanks and I loved all your recipes

Browning the butter elevates and deepens the butter flavor. For me, it makes cookies taste better.

After browning you'll end up with less then the required recipe weight...do u account for this?

hi, yes you will have less quantity of butter. You may add a little bit of water or ice cubes to compensate for the missing quantity. Hope that helps.
