Fried Chicken Gizzards & Onions

- 2 lbs. chicken gizzards
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/4 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
vegetable oil
1 large onion, sliced into rings
Rinse well, plus trim and discard as much connective tissue from gizzards as possible.
Place gizzards in a slow cooker cover with water, add seasonings, put on lid and cook on low for few hours.
This helps the gizzards get good and fork tender.
When done cooking, drain well.
Then roll in flour seasoned with salt and pepper.
Slice up an onion into slices your going to fry the onions with the gizzards.
In a skillet cover bottom of the skillet with vegetable oil, and put the skillet on medium heat.
Add some of the gizzards and onion slices to the skillet and fry until down on both sides.
The onions get nice and brown and tender and the gizzards get crispy and brown.
Your going have fry them up in batches cause you don't wanna crowd them pan.
Remove them from the pan with a slotted spoon and allow them to drain on paper towels if needed.
My italian grandmother would cut the gizzards up and cook them long and slow in olive oil, a ton of onions and just a little tomato sauce or crushed tomato, some hot pepper flakes, salt, pepper and a touch of water. It would make a rich broth that we would dip italian bread in and the gizzards were melt in your mouth tender.

I love chicken gizzards. I used to eat them with my father. He has passed, but the memory is strong. Thank you for being genuine and being true to yourself. They really look awesome....they just need to get into my belly! Lol 😂❤
Great southern food, my Dad also liked to eat these. My Mom made it much the same way as Sara, but she didn't precook in the slow cooker, so they were a bit chewy. I am going to try it this way. Thank you Sara, for sharing this tip.

Sara, what a great recipe. I love chicken gizzards and chicken livers. I never thought about cooking them in the pressure cooker or slow cooker. Mmm crispy chicken gizzards are what's for supper tonight.

Deep fried chicken livers dipped in batter of flour, milk and egg.
And my all time favorite chicken feet cooked in chicken broth then fried in a skillet with sour cream.

My favorite part of the chicken growing up! And exactly the way Mom did it. To the naysayers: people gag at certain meats. Game meat, certain parts of popular food animals, etc. First of all, chicken is so popular in this country. But they will literally eat almost anything! And the gizzards, liver, etc are no dirtier or cleaner than the rest of it.
With the current high cost of food this recipe can help people save some money. 😃

I love chicken gizzards l would clean them!! Cut in pieces put in big pot with chicken broth lots of onions celery cook until nice and tender and then thicken them cornstarch and served with mashed potatoes or rice reallyyyyy delicious

For gizzards, those look pretty appetizing. You do get a good one out once in a while Sara I'll have to admit.
When I was about 6 years old I bit into a piece of chicken gizzard that was in gravy and about gagged. I know a lot of people love organ meat but I cannot be around it because the smell brings back my memory and gags me. I do, however, love learning from your videos about how different foods are cooked. ❤

I have never had them this way... I have always had them either deep fried or grilled on a bbq in a foil tray with bbq sauce...

Hi Sara. You know, at the beginning of your video there was an old man standing behind you with the laces on his shoes untied. I hope you have home owners insurance. If you don't, and he trips on the laces, falls, and breaks his hip, he could sue and ruin you. Just thought you should know.
She would not be liable. She has to have created a hazardous condition such as loose stairs, slippery floors etc. if he trips because his shoes are untied, that is on him.

I've never tried American hillbilly cuisine, but I might try this. If you like things like this Sara, you should try sweetbreads i.e. pancreas (or thymus) of a lamb (or calf).

No. Nothing like liver. More like the dark meat on the drumstick.
