- Southern Hoe Cakes
1 cup self rising yellow cornmeal
1 cup self rising flour
1 tablespoon sugar(optional)
¾ teaspoon salt
2 eggs
¾ cup buttermilk or milk(you might need a little more)
1/4 cup vegetable oil
1/4 cup bacon drippings or vegetable oil-for frying
butter-for frying&serving if needed
Combine flour, cornmeal mix, sugar, and salt in a medium bowl.
Measure buttermilk in a glass measuring cup. Add eggs to measuring cup and whisk egg and buttermilk together.
Pour into bowl with flour mixture and mix to combine(if you need to add a little more buttermilk you can if it's too stiff).
Heat a cast iron pan or nonstick skillet or griddle. Add a little bacon grease and a pat of butter.
Pour batter into pan to form hoe cakes, using a 1/4 cup measuring cup and fill it
Cook until bubbles form on top, flip over and cook until bottom is golden.
Repeat with additional batter, working in batches so that you don’t overcrowd the pan.
Serve with butter.
Optional add-ins: chopped jalapeno peppers, grated cheese, chopped bacon.
Hoe Cakes are old-fashioned cornmeal griddle cakes, and they're the most basic of Southern breads. Also called "Johnny Cakes," they are traditionally served as a quick bread on the side of a lunch or dinner entrée. Hoe Cakes are great for soaking up pan juices and gravy, but they're also tasty with a pat of butter, a drizzle of maple syrup or honey, or a smear of apple butter.
Hoe Cakes are typically either served for breakfast like pancakes or with a bowl of greens (typically collard or turnip greens). When served with greens, they are used to mop up the pot licker, the tasty liquid that the greens are cooked in. Try spreading pimento cheese on them for an amazing appetizer.
Hoe Cakes are made from self-rising cornmeal, self-rising flour, a touch of sugar, eggs, and buttermilk. I use bacon grease to fry these Southern Hoe Cakes in but it’s more common to use vegetable oil. Feel free to do so.

I used to eat hoe cakes with my grandfather. A cup of black coffee the stronger the better. The hoe cake had butter and honey or he used to make a hoe cake sandwich. Cut the hoe cake in half with bacon, egg and fried green tomatoes. Man I miss my grandpa. And of course don’t forget the bugle homemade cigarette while eating on the front porch.

The reason they are called hoe cakes is back in the days of slavery, the field workers would cook these in the fields over an open fire, using a hoe blade or a shovel for the cooking surface.

My grand daddy from the Ozarks told me as a child, "they call them hoecakes because the Civil War soldiers cooked what batter they had over a fire on their mini shovels" - which were sometimes available to the better equipped southern troops. I later saw this described in a book about life in the CSA, for the common soldier. I guess shovel cakes would have sounded worse anyway!

I'm from Georgia and grew up on hoe cakes. We ate them like cornbread with beans, soup, or just as a side. I also love them with buttermilk and a slab of raw onion...yep, it's country, I know. 😋
Hey Lori, I'm with ya on that!! Lol I grew up in Alabama and I just remember them as fried cornbread but ya always had to have a chunk of salted raw onion on the side! Haha We still eat cornbread and milk and how about that banana sandwich with mayo...so good!! Have you eaten one? If not, just give it a try. Yeah, that's country but you'd be surprised on how many people I've made LOVE that banana sandwich with a tall glass of cold milk. My grandma and uncle loved onion sandwiches. I'm from Europe/Austria, so naturally I had no idea what hoe cakes are! But I got the ingredients three days a go and followed your recipe (I also added finely cut jalapeños and chives because why not to them), and they turned out deliciously! I froze the leftovers and thawed them in the toaster for a quick snack with some salad today for lunch, hoe cakes will definitely become a beloved guest in my kitchen. :)
It's interesting that you organically were drawn to adding diced jalapeno. Down South that is actually not uncommon in cornbread and hush puppies (similar fried corn flour recipes). Also in North Carolina a lot of places will serve these kinds of items with jalapeno butter, too, which is basically putting the diced jalapeno in butter rather than the dough mixture. @@TheNikOnder I was doing lots of Tex Mex/Southern States cooking lately. I believe once you acquire the taste of a region you just start to realize which flavors go together for that area. We do have something like hush puppies in Austria too, love them! Also thanks for the jalapeño butter idea, sounde amazing, will definitely try it. :)

My family is from the south on both sides. My paternal grandmother called them hoe cakes my maternal grandmother called them hot water cornbread. Both would make them with savory dishes like collard greens.
I was also taught hot water cornbread
My grandparents always called them fried cornbread
We never had hoe cakes until my sister started making them when she got married. She learned to make them because her husband grew up eating them.

We use Southern Biscuit brand, formula "L". Try and find it at your store, or you can buy it online. Country ham makes it great.

I've not heard of Hoe Cakes so I admit to being a little immature when I saw the title of the video! They look great though and I've learned something today 🙂
The name came about when people used to cook over fire and they would use the garden hoe and heat it over the fire and then pour the mix on and put them back over the fire to cook.

I looove hoe cakes! I grew up with my grandparents and we'd have them with butter and molasses. My grandmother remembered watching her granddaddy cooking them on the open fire by the cotton field when she was a little girl. He cooked them on his actual hoe he used in the field.

A hoe cake in my area was also called hobo bread. It was a thick mixture of flour and milk baked in a hot cast iron well greased pan.
We have them all the time. Normally they were just a substitute for cornbread. But I love a bowl of pinto beans with my hoecakes with some green onions.

I grew up in southern Ohio which is basically a bunch of hillbillies moved north out of KY. We called them cornbread fritters but they weren't made with self rising flour. I loved just sitting with a bottle of tabasco sauce and eating them the day after. So Good!

I remember the first time having a Hoe Cake, Odd name but I can safely say this, This biker has a soft spot in his heart for southern cuisine, thanks for sparking old but fond memories. Im 75, my mother in law made hoe cake. She made her biscuit dough with self rising flour ,lard and buttermilk. Instead of rolling them out for oven cook she used half in a iron skillet the size of the pan and let it cook untill done. She fipped it over 1 time.her dough made 2 large hoe cakes. We ate them with vegetables. She could flip them over perfect. I had to use a plate to flip mine. I really enjoy your receipes. You are such a sweet person. We are in South Carolina

I've fixed hoe cakes most all of my 62 years, helping my mom cook them as a kid, but I never really paid attention to how she made her batter. Yours look more like hers than mine ever did. I never tried batter as thick as yours before, but I think I will today.
