- Hello, sweet friends and welcome to another Foodie Friday! In today's video, we are continuing with our easy weeknight dinners with a fan favorite in our house - Chorizo Chicken! And the perfect vegetable pairing, Mexican corn. I am so excited to have you give these a try! I hope you enjoy!! XO - Tiffany
// CHORIZO CHICKEN //
Chicken breast
Pork chorizo
Ranch seasoning
Salt
Slice chicken breast thin. Season with Ranch (or seasoning of your choice) and salt. Cook on stove top. Cook chorizo on stovetop. Layer chicken and then chorizo in a casserole dish and bake or broil until warm and bubbly. Top with cheese of your choice, lime juice, avocado, sour cream and cilantro.

Corn on the cob
Mayonaise
Sour Cream
Lime juice
Chili powder
Cumin
Salt
Cotija Cheese
Cilantro
Shuck and cut corn on the cob. Bring water to boil and cook 5-6 minutes. While cooking, mix 1/4 cup mayo, 1/4 sour cream, a splash of lime juice, and a dash or 2 of chili powder and cumin. Salt to your liking. Once corn is done, add sauce, Cotija cheese and cilantro.

Love this recipe! Creative! Love to find people who use ingredients very familiar with me and my family in a different way and share them with everyone! In Texas we eat a lot of chorizo and this is a delicious take on chicken. Just found your channel (I am late🤦♀️) but enjoying it. Also, a pop up camper family 😂.

Try sprinkling some Tajin on your corn! It’s a chile-lime seasoning, and goes very well with the creamy, cheesy goodness. I usually strip the corn from the cob and char it in a skillet before adding the rest of the ingredients. So delicious! I am really loving the Foodie Friday content along with your regular videos. Hi Tiffany this looks so yummy. You should try seasoning potatoes with salt pepper and oregano they taste delicious. Even mashed potatoes the oregano takes them to a whole new level. Thanks for all the foodie videos ☺☺

I only wash potatoes if they're filthy, like right from a field or garden filthy. 😉 they crisp up more nicely if they're super dry in my opinion. 🥔🍠

I’d like to see some steak meals. For some reason I only like skirt or flank steak cooked at home and we are trying not to eat out anymore and I love steak!
I used to love chorizo scrambled with eggs until I found out what’s in it then nope!!I bake corn on the cob in the oven,it’s so much better and not water logged,why do you add sugar?!or I grill it -I always wash my potatoes and pat dry them-they are so dirty especially the brown ones but I agree the red ones aren’t as dirty-fun ideas.thanx for sharing

Wondering if the terizo is spicy or peppery at all. I can't do anything the least bit spicy or peppery but if it's not I would love to try the dinner, it looks amazing.
No ma’am. This particular chorizo is not spicy. I can’t speak for other kinds but this one isn’t spicy. My children wouldn’t eat it.
