Crockpot Green Enchilada Chicken Soup
-3 boneless, skinless chicken breasts
-15 oz jar Green Enchilada Sauce
-1/2 carton chicken stock
- 4 oz softened cream cheese
- 2 cups shredded Monterrey Jack Cheese
-1 cup heavy cream
-Salt & Pepper to taste
-toppings such as shredded cheese, sour cream, tortilla chips, cilantro, etc!
Add chicken, stock, and enchilada sauce to slow cooker. Cook on low 6-7 hours or high 3-4. When chicken is tender, shred with 2 forks and set aside. To slowcooker, add cream cheese, shredded cheese, heavy cream, and salt and pepper. Stir to combine. Add chicken back into slow cooker. Cook additional 30 minutes or so, until all cheese is melted. Optional - Add more chicken broth to reach desired thickness of soup. Serve with toppigs, tortilla chips, or cornbread!
Buttermilk Jalapeno Cornbread
Jalapeno Buttermilk Cornbread
1 1/2 cups Yellow Cornmeal
1 Heaping Tablespoon Flour
1 Cup Buttermilk
1 Teaspoon Salt
2 Eggs, Beaten
1 can Creamed Corn
2 Tablespoons Pickled Jalapeno
1 Medium Onion, chopped
1/4 Cup Melted Butter
10 oz. Cheddar Cheese
Mix all ingredients and pour into greased 9x13 ban. Bake at 350 for one hour.

These type of videos get me in the mood for fall and being all comfy and cozy is oversized sweaters . . . . . . then I remember I live in FL, lol. That's one thing I miss about growing up in PA. Le sigh.
Re the Swiss chicken...I make one of my mom's recipes for Deluxe Chicken casserole & it's delish! In a 9x13 pan, prepare 2 boxes of stuffing mix. Spread in the pan. Top with thinly sliced deli ham. Top with shredded cheddar. Spread over 2-3 cups cooked & shredded or cubed chicken. Finally, add 2 cans Cream of Chicken soup. So good!!

Thanks so much for slow cooker recipes. Beef, chicken, pork, any recipes done in that sweet little cooking machine are a plus for me! Desserts and sides would also be great! Cheese grits? And it keeps the kitchen cooler during the summer.

I recently tried a Poblano Soup at a restaurant and it was the best soup I've ever had at a MX restaurant. It was light and creamy with just a hint of spice. It had cheese and shredded chicken. Just lovely flavors. I found cream of poblano pepper and cream of jalapeno at HEB so I bought both but I was still unsure of how to start that soup. Also Swiss chicken was THE church dinner when I was growing up. I remember layering giant steamer pans of that stuff for hours on end in kitchen with all the ladies of the church. Fond memories.

I made the Swiss chicken and used pepperjack cheese b/c my guys like a bite to their food. Turned out fantastic. Definitely going to add in the binder to be made many more times to come.

I would use the disguilded broth from the First Dinner for/with Soup Broth. Maybe a Vegetable Soup.

I’ve got to try that potato soup! I once made broccoli potato soup for my family. I used my immersion blender. They said it was like baby food!! They wouldn’t even taste it!🤣

I use my crockpot in the summertime a lot, because it’s just too hot here in southeast Texas for the oven. Sometimes it’s even too hot to be cooking outside over a hot grill. Crockpot, inside with the A/C going is the way to go! These are really good recipes. 😋

Try saving the broth from the first recipe in the freezer. Defrost and use when chicken broth is needed in other recipes. I thicken soups with a little dry instant mashed potato flakes on occasion.

I just made your potato soup in my crockpot and it turned out great but I used Turkey bacon which next I think I will trade for real bacon…it’s still good just needs more improving that’s all…My family loved it especially my hubby so thank you 😊

#We have tried the olive garden pasta and it was good altho i agree it most likely doesn't need all that italian dressing it almost made it a tad bit "too rich" but it still was ok bc everyone actually enjoyed the leftovers more than they did when i made it for some reason it didnt taste as rich...BUT i found that the recipe almost just like this one except u use the buffalo wild wings garlic parm sauce instead and OH MY it was absolutely delish!!! I 100% totally recommend yall give it a try if u enjoyed this one u absolutely should enjoy the buff wild wings recipe

I can still read the ingredients and the amounts, but I was just curious. Thank you for more delicious recipes❣️ I know many people in the southern states are really anxious and excited for fall to arrive, but I definitely do not share their enthusiasm. I live in Michigan at the very tip of the mitt. What we refer to as the Northern Lower Peninsula. Summer days with beautiful temperatures have barely begun, so I’m not in a rush to see the leaves 🍁 🍃 on the trees begin to change color. Don’t get me wrong, I love fall/autumn, it’s so pretty. I’m just not ready for the freezing 🥶 cold and all the snow ❄️ it brings with it. Keep bringing the delicious 😋 meal ideas ❤️ and thank you 🙏🏻
