    Shakshuka is one of my favourite breakfast and is so wholesome and delicious. It is a middle eastern breakfast with poached eggs in a tomato based sauce. Shakshuka was introduced to me from a close friend of mine and after that there was no coming back. You can cook the eggs to whatever consistency you feel like but I like the yolks little runny. I can drool over it anytime. Shakshuka is meant to be served in skillet with the crusty bread and is meant to be enjoyed hot.
    Ingredients
    1-2 tbsp olive oil
    1-2 medium onions chopped
    7-8 garlic cloves chopped
    1/2 red and yellow bell peppers chopped
    3 medium tomatoes chopped
    1 tsp salt
    1/2 tsp Kashmiri mirch
    1/2 tsp cumin powder
    1/4 tsp black pepper
    1/4 tsp white pepper
    1/2 tsp oregano
    3 eggs
    Chopped coriander
    Method
    1. In a saucepan, heat some olive oil. Add onions and garlic and sauté it for 2-3 minutes until pale in colour.
    2. Add both the peppers and let it heat till soft.
    3. Add chopped tomatoes once the peppers are soft and all the spices too.
    4. Mix everything well and cover it with the lid for 10-15 minutes on low heat until the sauce thickens.
    5. Make small wells with the help of a spoon or a spatula and crack open three eggs carefully without breaking the yolks.
    6. Cover the skillet and let the eggs cook in the simmering sauce for about 5-7 minutes, or until the egg whites are set but the yolks are still runny (adjust cooking time for desired egg consistency).
    7. Sprinkle with chopped fresh coriander and serve with crusty bread.
