For my fellow lazy gourmands; you can semi-meal prep this by making the sauce ahead of time. Then each morning, just out some in a pan with some eggs and a splash of water, cook til done and cover with cheese and herbs, etc.

I always add kidney beans to the sauce to make it more nutritious (chickpeas would probably be more region-appropriate but I just don't like it as much) and top it with fresh basil whenever I have it, or maybe sage. Should definitely try this recipe out though, it looks delicious

I made this for my daughter and myself when she was staying with me recently, and I can tell you, they were absolutely delicious!!! I made two variations to the recipe because I didn’t have the ingredients in the fridge. First, we used a little dollop of sour cream under the eggs and I used crumbled goat cheese on top instead of feta. Also, rather than cooking the eggs in the fry pan, I simply poached them and set them in the depression. I can’t wait to make them again, they were wonderful.
