Crème brûlée❤️ Recipe in the description

  • Crème brûlée is a classic french dessert with a rich custard filling topped with a thin layer of caramelised sugar. I am not a custard person but this dessert made me crazy when I first tried when I used to study pastry. It is so rich in taste and coats your mouth with its texture and silkiness. It is super easy to make but is a bit technical when adding cream to eggs. Make sure the cream is not super hot otherwise the yolks will curdle.
    Ingredients
    180 gms heavy cream
    1 tsp vanilla essence
    2 egg yolks
    30 gms castor sugar
    For coating- 20 gms sugar
    Method
    1. Preheat the oven to 140 degrees celsius and keep some water for boiling for water bath.
    2. In a saucepan heat the cream with vanilla essence. Remove it from heat before it starts boiling.
    3. In another bowl add yolks and sugar and whisk both nicely.
    4. Add half of the cream to temper eggs so they don’t curdle. Keep whisking continuously and then add the remaining half.
    5. Add the custard to a baking dish, pour the hot water and bake it at preheated oven at 140 degrees for 30-40 minutes. To check if it’s baked- the sides should perfectly set and slight wobble in the middle.
    6. Chill it overnight and next day add a thin layer of sugar and caramelise it with a blow torch. Serve and enjoy!
