I think I figured out why soba! Jaime has been on this huge 'cooking healthy' thing for years, and when he went to the market (or sent his shoppers) he was probably looking for 'healthy noodles'. Then he saw that soba was brown, and using Western Logic ™, he decided that made it healthier for you. We do it with bread and eggs and almost everything else, so we know your game now, buddy!

I know ramen can be creative and subjective, especially the toppings. There are so many interesting takes on ramen in Japan. I was also willing to give Jamie the benefit of the fact that his ramen can be ramen, but that doesn’t mean it tastes good…. But the soba… that floored me. It’s just… literally not even ramen…
You put cooked soba in a big bowl of ramen broth, it's going to turn into a soggy mass in about 15 seconds flat.

When you're making a brown broth or a dark broth you roast the bones first. Reason being when you are making your broth roasting it gives you the opportunity to have the least amount of scum on top. If you're making a white broth then you don't roast because you want that clear color.
Edited to add: the roasting also reduces the amount of time that you have to boil it. It's already parcooked

D'you know who loves spinach? I love spinach. Like, a lot. My old signature noodle soup I used to make had spinach in it.
The difference is sautéed mine down with sesame oil, pepper and a tonne of garlic (only no salt because, between the Chicken Bovril I used as cheat stock and massive amount of fish sauce, any more salt would have rendered it totally inedible to most people) so it was soft and flavoursome before it went anywhere near my _damn_ soup. I didn't just squeeze it into a big frig-off ball and call it good.

Even as a white American, I see what Jamie Oliver makes and I get pissed. I was raised by a chef, my dad and he is one of those who taught me to cook using the ingredients from where the dish is from. I have formed friendships with people who work at all those little ethnic markets where I live since I am in those stores more often than the regular supermarket. There’s one near me which is an Asian market run by a family. They know me by name and if I ask them about a dish I’m making, they will direct me to the correct ingredients. The mother who runs it always says that if I have leftovers, then I didn’t do the dish right.
