4 Corn Classics From Korea And Mexico

- With Mexican and Korean being my favorite cuisines, I decided to make four of their foods centered around corn. Korean corn dogs and corn cheese, and Mexican elotes and elotes en vaso, all popular street foods or restaurant foods, and favorites enjoyed worldwide.
Ingredients:
Korean corn dog:
-1 cup flour
-120ml warm water (1/2 cup)
-5g yeast
-5g sugar (1 tsp)
-Pinch salt
-Russet potato
-Panko
-Beef franks or any thin sausage
-Block of mozzarella cut into hot dog shape
-Toppings: ketchup, mustard, sugar

Korean corn cheese:
-2 ears corn
-1/2 yellow onion
-2 green onions
-1-2 jalapeños-1/4 cup kewpie mayo-150g mozzarella-2 tsp sugar-salt and pepper to taste
---------------------
Elote:
-4 ears corn
-3 tbsp mayo
-1/2 lime zest and juice
-Chipotle chili powder and/or tajin
-Cotija cheese
-cilantro
-flakey salt
---------------------
Esquites:
-2 ears corn
-2 tbsp mayo
-2 tbsp butter
-2 tbsp Cotija cheese
-1 jalapeño
-1 clove garlic
-salt & pepper to taste
-juice from 1/2 lime
-handful chopped cilantro
-chipotle chili powder
Serve with more cheese, chili powder, cilantro, and lime wedges on top

These look amazing. So for the second corn cheese one did u boil the corn first before cutting the corn off? Or it has to be raw
I actually used canned corn again but yes I think it should be raw since you are sautéing it
