  • Salmon is a quintessential healthy weeknight meal base, so this is a simple quick miso-marinated salmon dish with garlic ginger rice and some grilled zucchini, paired with an optional but delicious mango salsa.
    Ingredients:
    Miso Marinade:
    * 2 salmon fillets
    * 2 tbsp miso
    * 1 tbsp soy sauce
    * 1 tbsp mirin
    * 1 tbsp hot honey
    * 1 tsp sesame oil
    * 2 cloves garlic
    * 1 inch knob ginger
    * Sesame seeds for garnish
    Garlic ginger rice:
    * 120g jasmine rice
    * Water
    * 1 tablespoon sesame oil
    * 2 cloves garlic, minced
    * 1 teaspoon grated ginger
    * Pinch salt
    Grilled zucchini:
    * 2 zucchini
    * Salt, pepper, olive oil
    Mango Salsa:
    * 2 ripe mangos, diced
    * 1/2 red onion, finely chopped
    * 1 red bell pepper, diced
    * 1 jalapeno pepper, seeded and minced
    * 1/4 cup fresh cilantro, chopped
    * Juice of 1 lime
    * Salt and pepper to taste
