    Hi friends, today Elavarasi is preparing Punjabi samosa for us. In this video we can learn how to make perfect crispy, flaky & delicious samosas at home. Samosa is a potato stuffed deep fried snack very popular in India.

    Ingredients:
    Potato - Cut into small squares.
    Carrot - Cut into small squares.
    Beans - Cut into small squares.
    Turmeric powder.
    Fennel seeds.
    Onion - One chopped.
    Ginger garlic paste - 2 tbsp.
    Green chilli - 3 no, chopped.
    Coriander and puthina leaves.
    Wheat flour - 2 cups.
    Ghee -
    Salt -
    Carom Seeds - 1/2 tsp.
    Preparation:
    Firstly cook the potato, carrot and beans. When boiling add some turmeric powder. Strain the water and keep it aside.
    Make samosa dough
    To a mixing bowl, add wheat flour, ghee, carom seeds, and salt.
    Mix everything very well. Add water and mix the flour into a chapati consistency. Dough has to be firm, stiff and not sticky. Cover and keep it aside for 25 to 30 minutes.
    Making potato stuffing
    Heat some oil in a pan. Next add 1/2 tsp cumin seeds. When the seeds begin to splutter, add chopped onion. Mix it well and add salt. Add 2 tbsp ginger and garlic paste. Then add green chillies. Saute for 2 to 3 minutes and then add cooked vegetables. Sauté well and then add chopped coriander and puthina leaves. Mix it well. Set aside to cook. Transferred it to plate and allow to cool down.
    How to make samosa
    After 30 minutes, knead the dough for another 3 to 4 mins. The dough has to be stiff yet and not soft. Make small dough balls and roll it to circle. It should be slightly thicken and not too thin. Cut it in the center to make 2 parts.
    Join the edges to make a cone shape. Stick the edges from inside the cone. Fill the cone with potato masala. Apply water on the edge and seal the samosa.
    Heat a pan with oil for deep frying. When it is just getting hot add a small portion of dough in the oil. Gently slide the samosas one by one slowly. Keep stirring occasionally and fry then evenly until golden. When the samosas turn golden, remove them to a strainer. Our Panjabi samosa is ready.
