holy f*****g s**t, i'm from umbria but this is the first time i see pasta alla norcina made using ricotta instead of cream, i think you sir have taken this traditional dish to the next level. Bravo! Also well done on choosing black truffle instead of white truffle, White truffle is the most expensive one and the most well regarded but this traditional dish calls for black truffle. BTW i like the truffle shredded more than grated. If you want to make this dish richer i think you can add porcini mushrooms or if you can find them PRUGNOLI mushroooms (also called SPINAROLI mushrooms)

@@MaxiRyu99 You can make many recipes with Gorgonzola (and there is both the soft sweet spreadable variant and the one with a stronger / spicy flavor). For example pasta or rice with Gorgonzola and walnuts, radicchio and Gorgonzola risotto. if you want, indulge yourself with gnocchi / pasta with 4 cheeses. (I personally love that type of cheese! I even put it on pizza! In fact, I always take pizza with Gorgonzola and sausage)

As I used truffle oil, added well chopped mushrooms to give more real flavor to it.

Vincenzo. I made Rigatoni Alla Norcina last night. Pecorino and ricotta cream. Chardonnay in the sofrito and to sip. Truffle oil to drizzle. It was fantastic!!!

I just clicked to another dude's video of this recipe. The first thing I notice is he had a measuring cup with heavy cream and just thought, "bro, that's wrong". Came here to see the correct way to do it. So satisfying.

Turns out that I've been making this for years but never knew it was an actual authentic dish. I was using cremini mushrooms and truffle oil because it was an easy weeknight dinner with supermarket staples and not a specially sourced regional specialty but now I want to make it the right way!

I once had a Mushroom Pasta from a men who came from Umbria- he had his Restaurant in Gardone Riviera. By far the best Pasta I ever had!

4:00 You can make the same sausage as Norcia in like 3 minutes. Just spread out minced pork on a cutting board, add 2% of weight of garlic powder, 1.5% table salt, 0.6% black pepper, a little nutmeg. Then put it in the mixer with 8% by weight of white wine. Mix it two minutes, stopping every 30 sec to scrape the meat off the paddle.

I had run out of white wine and was already started so couldn’t just run out for some but had some left over champagne from new years eve 2023-24 and ohhh my goodness it even was better then With the white one I had previously used soooo amazing. Ohhhh yum truffle haven’t been able to afford that since before the pandemic hit. Drool
Delicious pasta, my wife loved it! I have combined it with some nice Frascati DOC wine (had no Umbrese wine unfortunately and it was the closest one I could get) and it was perfect.

OK. Don't kill me. Used 4 sausages (toulouse france), and to save money for a big 500gr dish, added sliced parisian mushrooms, used mix riccotta / fresh cream. Used fancy truffle cream to add the truffle taste. Delverde pasta tho :)

If you are out of fresh truffle, when would you add the truffleoil? And would you replace the oliveoil with the truffleoil?
I'm delighted you enjoyed the dish! 😋 When substituting truffle oil for fresh truffle, you can add it at the end, just before serving. You don't need to replace all the olive oil with truffle oil; a small amount goes a long way due to its strong flavor. Drizzle a small amount of truffle oil over the dish to enhance the truffle aroma and taste. Remember, truffle oil can be quite potent, so start with a little and add more to taste. @@vincenzosplate thanks it was delicious! I didn’t think it was going to be enough so I doubled the recipe, only to realize how filling one “Nonna size” plate actually is. Now we have leftovers for another meal. Hopefully they keep. … Couldn’t find fresh truffles (at the local Italian grocery in Toronto area, Canada) so opted for GiGi Truffle Sauce. I think I used a tad too much. Had to make them gluten free, so used Granoro (imported gf pasta) Sedani con Farina di Quinoa. Best sub for rigatoni. Flavour is very close to regular pasta.
