I've been cooking shanks for 35 odd years, and never had the need to put sweaty sock juice in them. A tablespoon of plum jam now..... rich, sweet, and no sweaty sock stench.
@@professornuke7562i literally just said this to mum. Dont boil meat with a lid on it goes sour. Also if you can smell the meat in the room. Your losing flavour! Brown the meat then cook as long as you like at 90 deg. It will never boil dry and you dont need a lid.

Thank you for being so open about your mental health journey and for highlighting the importance of recognising small victories. We're in our late 40' early 50s and life has certainly been a jouney for my wife and I. You've got a refreshing way of getting your message across on this topic and it really does reasonate with me, and clearly so many people across the globe. In the past I delt with depression (most of my teenage years and early 20's) and I've struggled with anxiety and the rare panic attack for a while, you're doing a lot of good stuff and metal health is important to me and should be to everyone. It doesn't take a Physiatrist to be there for your mates or even a stranger that needs to be heard for 5 minutes, it can and does save lives. EVERYONE HAS THE POWER TO BECOME A CHAMPION! ROCK ON NAT

I hadn't had lamb shanks since I was a kid, then during lockdown I remembered that slow-cooker lamb shanks existed, so I popped down to my local butcher and got half a dozen nice big meaty lamb shanks and whanged them in my slow cooker with all the usual stuff and roasted about 2 kilos of spuds in the oven to go with them, and fuck me DEAD if it wasn't an absolutely spectacular feed. Plus, as previously mentioned I bought 6 shanks, so the misso and I got to enjoy the meal three times. Genuinely fantastic.

I've made lamb shanks before, but this version is just magic. Don't skip the balsamic, it'd be like leaving milk out of the bolognaise.
