    Hardest thing about winning a meat tray: catching the train home, hammered on beers, and the stray dogs chasing you home and you can't find your keys at the door. Then your brothers couldn't be arsed opening the door for you. Good times!

    Here you go, the ingredients in the order he added them:
    2 carrots diced
    4 celery sticks diced
    6 cloves garlic
    1 brown onion
    600g chuck beef/beef mince
    600g diced pork shoulder/pork mince
    500g Italian sausage mince or 300g bacon/pancetta
    Sprig Rosemary
    1 1/2-2 cups red/white wine
    800g crushed tomatoes
    3 tablespoons tomato paste
    1 cup milk
    1 1/2 cups chicken/beef stock
    Salt and pepper
    Bechamel
    100g butter
    3/4 plain flour
    1 liter whole milk
    1/2 teaspoon nutmeg
    300g mozzarella (half sauce in the sauce, half on top)
    80g parmesan cheese
    Recipe:
    Dice Onion, garlic, carrot and celery and put them in a bowl
    Dice meat (if necessary) and combine in a bowl.
    Melt butter and oil in pot. Add and fry veggies/onion, cook until tender, remove from pot and reserve in bowl
    Add the meat mixture to pot and brown. Then add back the veggies/onion.
    Add rosemary
    Add wine and cook off the booze while deglazing the pot
    Add tomato sauce, tomato paste and milk. After a few minutes at chicken sauce.
    Simmer for 3 to 6 hours.
    add salt and pepper (AFTER THE LONG SIMMER)
    Bechamel sauce:
    Melt butter in pot, slowly add flour to melted butter. Cook into paste
    Preheat oven to 400
    Slowly add milk and whisk constantly. Add nut meg. Add 150-200g mozzarellas
    Construct lasagna:
    1. Meat sauce on bottom of pan
    2. Layer of lasagna sheets
    3. layer of meat sauce
    4. layer of béchamel sauce

    This is drastically different from the lasagna we have in the states. Theres no veg aside from tomato. It's basically just marinara, sausage, ricotta, mozzarella and obviously the pasta.
    You say it's not too healthy. But, compared to the garbage we eat here in the US, you're leaps and bounds healthier due to the carrot and celery.
    Thank you for showing me that a few basic ingredients is all it takes to make awesome food that isn't going to give me heart disease or diabetes.
    For the past 2 weeks I've used your culinary guidance to make dishes that are not only different than the typical bullshit I've always made. But, they're also healthier and taste fucking amazing!
    My last experiment was a pork shoulder and it is by far the best tasting meal I've ever made. Can't thank you enough broseph!!!
    I used to say, "I'd starve if I didn't have a microwave or a phone to order takeout."
    You've helped me transform from a lazy slob to at the very least a novice chef. You're the man.

    Greetings from London! I followed your instructions (no meat tray here so it was beef & pork mince + smoked bacon lardons) made the ragu on Sunday then the sauce yesterday before putting them together for an absolutely banging lasagne. The best one I've EVER made! Two of us had it for dinner last night and I now have a whole load of single serving containers of it in the freezer for days when I can't be bothered to cook. 100% worth the time investment that went into in making it.

      I was going to add this comment too - it freezes really well. I usually add a layer of spinach or other greenage as well for extra health points. you need a high sided pan though because it takes up a bunch of room and then cooks down to nothing. If you can be bothered steam it first then dump it out on a tea towel to dry off a bit because a lot of water comes out when you cook it. My better half makes a terrific vegetarian lasagne - I dont know whats in it I just eat it.

    This is a heart wrenching episode: been years since I had lasagne (wife doesn’t eat tomato and my favourite cuisine is Italian 😭); and I haven’t heard lingo like this for over ten years since migrating to Amster of the dam-Ed. So thank you for providing a small but regular dose of Aussie-ness into my otherwise fairly Aussie-less surroundings. Needless to say, I’ve just binge-watched maybe 20 videos now. Thank you covid!     I'm sure it's been said, but you're constantly dropping legit, wise cooking techniques left and right. Great practices with salt use, common stuff in the kitchen (despite mismatched lids, lol), and temps. You drop a lot of knowledge for viewers in a short time. Great videos, mate :)

    8:24 a good tip there also, is to put something under the tray in case. You good either put the lasagne on a cookie sheet, or line the rack below it with aluminum foil!

      @@cathdodd5072 Bars, fundraisers, VFWs, sometimes churches or church fraternities, etc. might all put one on. Usually works like your standard raffle. See a product you like, by a ticket or five. Sometimes they'll have a limited number of tickets available, say 30, and then they have a numbered wheel they spin to select the winner instead of doing a drawing.
      Minnesota is a little special in that as long as the event is held for ≤5 days out of the year, the event holders don't need to buy a gambling license. So anyone could hold a meat raffle if they have the product.

    6:12 with béchamel you can throw it all in together and stir and it'll work out fine .. don't have to do it bit by bit .. as long as you stir constantly (which you have to do either way)

    I've attempted lasagne in the past and failed miserably every time. Then I followed your simple straight-forward instructions and made a lasagne so good, I couldn't believe I had made it. I haven't had sex in a long time, and eating this lasagne made me forget about that. Thank you so fucking much.

I made the humorous comparison of that practice to other traditions that were also once practiced and are now considered barbaric. It's funny because I've placed the former on the same level as the latter, which is quite ridiculous. You may now laugh at my wit.

    * looks around furtively and whispers * you know you can add zucchini and eggplant if you want. I usually put all that veg in along with the classic veal/pork mince. And it turns out quite healthy. In the bechamel sauce I just add fresh parmesan (for that kick) and some nutmeg or allspice. And Robert's your father's brother. :D

      You could try this with boiled cauliflower crumbles. Shape the crumbles between 2 layers of baking sheets and there you go! I make them for pizza.

    I have literally never seen a lasagna use a bechamel cheese sauce as it's middle layer cheese, middle layers are always done with fresh grated mozzarella...
    this is a completely new universe for me and I'm confused

      I live in the UK and my mum always used bechamel made with cheddar (mornay), mozzarella was too expensive back then.

    Being from Texas we call bechamel milk gravy and we usually substitute the butter for bacon drippings. Traditionally eaten on mashed potatoes, chicken fried steak, or "biscuits" (read plain, savoury scones) for breakfast. Love it with lots of pepper!

    Yummo! Hey you don't need to pour the milk in a little at a time though. Dump it all in once the butter & flour is crumbly (and a little browned) then whisk on low heat until it's thick. It looks like it won't happen (like making meringue from chickpea can water) but it does I promise.
