If people are mocking you for putting milk in bolognese, they don’t know: 1. It’s traditional, and 2. What they’re missing out on. Seriously, it’s so damn good.
@@LadZeroUltra I’ve tried a few Bolognese recipes over the years and have created a fusion with some of my own tweaks. I use the traditional recipe from the Italian Academy of Cuisine as well as the one from Not Another Cooking Show, and one from a restaurant in Sydney. I take cues from each one and after 8 years of working on perfecting ragu alla Bolognese, I’m finally happy with it. Milk is essential. Use pancetta instead of pork mince. Thyme is the only herb I add and it really makes a difference.
Milk is used essentially for consistency of the bolognese and balancing the acidity of the tomatoes and red wine, it does absolutely nothing for flavour. There's also people who don't know they're lactose intolerant, and some people just don't like the creamy texture of bolognese with milk in it. Just isn't worth it imo.

But during studying only for months I actually cooked your cannelloni recepie. And that really was something for me. Normally I'm a passionate cook but the studying killed that. And it was the only time I actually took time and effort and made my self a blasting meal. Thanks for being who you are and the the room to breathe and laugh you gave me. Now my relationship is breaking apart because my partner can't take no more of depressed me and again your vid actually made me laugh and not feel alone! Been putting gnocchi off for ages because whenever I see someone make it, they have a bunch of Italian approved tools that I "have" to use. And there you go just making it. Cheers mate, I'll make it the first chance I get.
Gnocchi is a killer dish if you have kids. Get them to do the roll a sausage and cut the gnocchi bit. It's like playdough you can eat after and the little fusspots eat better if they've helped make it.

Bolognese isnt even a tomato sauce traditionally, youd maybe use 1 tbsp of tomato paste for 4 servings and thats it, not 2 cans of the stuff

You're a thousand percent correct on induction cooktops. They're awesome but also a pain in the ass. I've burnt the crap out of plenty of things to somewhat learn when you can trust to turn your back on it or when you need to be watching it like a prison guard.
