A fervent believer in giving folks what they ask for, I recently polled my readers for the next dish they wanted me to make. The winner was chicken and I felt it only fitting to finally put one of my favorite recipes that in my Lighter (blue) book on the blog. In fact, it's called Jeffrey's Favorite Chicken for a reason and seeing how it's tender cutlets in a light, yet rich and hearty lemon-wine sauce loaded with mushrooms, spinach, artichokes and sun-dried tomatoes, can you blame me? It can also easily be keto, paleo, gluten-free and dairy-free!

Hi Jeff. I just finished making this dish and am literally eating it as I’m posting this comment. Fantastic! So far I’ve cooked about 20 meals since receiving my IP in December. You’re the man!
I'm eating this as I type. This is every bit as good as it looks! I used all boneless skinless chicken thighs.
We really enjoyed the flavors and that it was minus cheese or heavy cream. It was light, tasty and refreshing. The leftovers reheated very nicely the next day. Served it with orzo simmered in chicken stock. Only thing I did differently was to quick sear all my cutlets in a 12" skillet, then deglazed and added to the Pot as it was much quicker. Husband said be sure to make this again, which was a surprise, because he prefers thighs.
I just ordered an Instant Pot last week, which will be here tomorrow, and I just saved this as my Bookmark for my first cook. The only thing don't have is lemon juice and spinach, but I will get that tonight. Anything with sun dried tomatoes and mushrooms in a white wine is my jam! Thanks for the vids!

There are definitely some other good recipes and resources for the instant pot out there but, to date, none like you!

OMG Mr. Jeffrey. Have all your books and the new one on pre-order. This looks incredible and I happen to have all the ingredients. My stomach literally started growling at me, LOL. I think if you want to go meatless for a day that would be great with beans (garbanzo) instead of chcken or beans with the chicken. Love you, your books, and your channel. Thank you for all the videos, really enjoy them.
My family LOVES your recipes! We are all huge fans! When I'm cooking, they ask is this another Jeffrey recipe, and I usually say of course it is! I have a special request. Can we go to Morocco? How about doing a Moroccan chicken or tagine recipe. My mouth starts watering at the thoughts of what you could do with all the flavors that would be combined in such a dish. I have put off and put off buying "The Blue Book", but I'm thinking it might be worth it for this recipe alone! The mushrooms! The sun-dried tomatoes! Oh! 😉 I don't remember any recipes from this book so I'm wondering if they were demonstrated on your channel? 😊

I love your lighter more healthy recipes. I won't use things like better than buillon etc. so skip some of your recipes because of that. Arrowroot is much healthier than corn starch. I can't wait to make this!
Be careful with coconut flour as it really loves moisture and needs more liquid, unlike all-purpose flour. I use cassava flour (not as easy to find unfortunately, although Thrive Market started to sell it) as it works well as a substitute for all purpose flour or almond flour (if ppl are nut allergic). I use it in a lot of recipes that call for almond flour.
The blue book is the only one I am missing.

My Instant Pot died. A few months later, I bought an Instant pot duo. It lasted 3 months and also died. So bummed because I made so many of your recipes.
Where is the lemon? I thought it was lemon cream sauce. This btw looks ama3.

To consider this recipe keto, you need to substitute something else, such as xanthum gum (would start with 0.25 tsp) for the cornstarch. Also, sun dried tomatoes are loaded with carbs.

I've made chicken marsala in my 3 qt. Also use it for rice, quinoa
Will not work for soups like gumbo or shrimp boil. If you watch his videos, you can see how full his 6 qt. gets, then judge.
Can you sub tapioca starch instead of corn starch?
Can you tell me which Instant Pot you're using here? I purchased the Duo Evo Plus in 2020 off your recommendation but this doesn't look to be it. There's a Pro and a Pro Plus model out. Would this be one of those? Thank you! Love your books, BTW!

This is a lighter recipe!
You have to season the cutlets before you dredge. Otherwise you need to add about 5x what you put in the flour.
Maybe for some recipes but that’s not at all required here.

Hey Jeff, love your channel man!! It's been my go to recipe channel since Christmas of 2017 when I had received one for a Christmas present!!
I have found that garbanzo flour works great for us keto folks. I buy a 5# bag of dried beans off Amazon and mill it down to flour with my ninja. Works great as a coating for my eggplant parmesean.

Recipe sounds delicious. However, the picture used in the thumbnail of this video is really ugly; you would get more views if it could look better.

Instead of putting your sliced mushrooms in the IP, you should have just put them in a food processor!! You absolutely pulverize those poor mushrooms! You could have deglazed the pot with a couple tablespoons of the stock and then added the mushrooms to cook. Gads!!
