Queens, NY is basically the melting pot food capital in the US. People from all over the world live here and that makes for rich and varied cuisine that puts a trip to Epcot to shame. I first discovered aji, a green, cilantro and mayo-based Peruvian sauce commonly served with rotisserie chicken, at a place across from my apartment. I became so hooked on this Peruvian Green Goddess-style sauce that I researched how to make a simple variation of it and then decided to make it a complete chicken and rice dish. To make things even easier and more economical, we're using pre-made rotisserie chicken with some simple rice. Peruvian Chicken & Rice will have you making it again and again.

Just a tip. It's called Aji because you use the aji peppers from peru. You can purchase them from Fiesta or a Hispanic food store. They come in a jar. They are Perus jalapeños.
Another bonus with getting a rotisserie chicken is eating the skin in prep!

When I buy those rotisserie chickens precooked, I start shredding it when it's still hot because it's a lotDelighted. & easier to work with than when it's cold and then store it in the fridge.
Came in handy when I made Jeffrey's cheesy chicken roll up recipe.

The dish looks fantastic and seriously easy. As to selling so many of your books during the pandemic, well thank goodness! There are many millennials, and gen x who have no clue how to cook…but the pandemic forced them to learn! So at least they got to eat tasty dishes.
In my local supermarket the cheese can be found in the latin section of the dairy aisle. They sell all types of dairy for latin diets - cotija, oaxaca cheese, all types and the chorizo and different tortillas.
That does look *really* good. Perfect for a leftovers dish when you roasted a chicken on Sunday.....this one I will definitely do.
I've got leftover turkey in the freezer. I'm in the UK and haven't seen that kind of cheese anywhere so I'll have to use parmesan. One to make later this week.

I'd recommend not getting that bagged version of Cotija. I've purchased that same exact brand and it says it's basically fake cheese substitute. I don't get it because they make blocks of Cotija, but it might be because it gets clumpy. Honestly just get the block version, same exact brand, squeeze chunks of it and it basically falls apart into the shredded version.

Making this tonight, but my husband loathes cilantro, so used half flat leaf parsley and half spinach with 4 jalapeños (1 with the seeds). BOOOOOMB SAUCE!!!

I live in Rochester, NY the birthplace of Wegmans. They have Peruvian chicken & that amazing green sauce. Should be fun to make my own!
That looks great. Im going to try the mayo instead of olive oil in the sauce. Also, sadly, it is a very real thing for most people who "hate" cilantro. There are a couple of olfactory receptor genes that make them super sensitive to the aldehydes in coriander leaves (cilantro) and makes it smell and taste like Irish Spring. Even in miniscule amounts. Very sad.
I have the same problem with FRESH cilantro, but interestingly enough, DRIED cilantro doesn't have that soap effect.

Well, Tops has rotisserie chicken on sale this week. How convenient!!! Hmmmm .......
Please figure out the Peruvian seasoning for the chicken! I get it in nyc at Flor de mayo and Pio Pio and it is delicious but I can’t figure out how they season it. It’s unique and wonderful. I appreciate the rice but please add the Peruvian chicken.
Do a quick google search for "Peruvian Chicken Seasoning". I've never had it, but it looks like it's a breeze to make the marinade, absolutely no exotic ingredients seem to be involved. Most of the dry stuff can probably be added to Jeff's Aji blender sauce and it would kick up the sauce flavor, and the minced up chicken gets blended with it anyway.
I'm one of those people that can't stand the taste of cilantro.
What vegetables would you serve with this? I’m in the UK so I guess I’ll be using Parmesan 😊

Why not use the Rice button on the IP?
Because I never do. I only use the pre-sets. The pot doesn’t know what kind of rice I’m using or how much.

@@PressureLuck I made this earlier in the week. It is so good. Never made anything with cilantro in it, but I loved it. Freezing some of it. It's just me here. Another recipe of yours that I absolutely love and didn't realize it was yours until I printed it off of Pinterest is Rattitoule, excuse me if I spelled it wrong. I've been making that for about 1-2 years. Just love your recipes. Makes me want to experiment more
