I suggest adding the garam masala while cooking the onions, it will emulsify with the oil and will give the taste, especially the rice an overall beter taste.

Very few truly understands the way garam masala is to be used. While using the powder, NEVER add it before as the idea is to have a nice fragrance while eating. Adding it before will only bring out the slightly bitter taste and you’ll loose all the fragrance in the cooking process. Best way is to add it just before the liquid is drying, i.e. ~ 1min before finishing. Using the whole spices are a different thing altogether and calls for a different approach. Happy eating ...

Garam masala should always be added at the last, as the ingredients are already roasted and then ground, so adding them before will overcook it and it lose its taste and taste bitter.

So till now I have cooked this recipe about 20 times and I have used so many different things. First time I followed the recipe and made it with coconut milk after that I experimented with
Oat milk, Almond milk, Heavy Cream , Greek yogurt , Milk+Coconut oil , Cashew Paste + Water , Chicken stock. And bunch of different marination for chicken. Just play with the quantity a bit and It turns out amazing each time, such a bullet proof recipe❤️

So I made this last night. I added the briyani powder with the onions which is just a grounded mix of cardamom, cinnamon sticks, star anise, bay leaves etc. I added pre-boiled potatoes and finely chopped carrots with the onions. Then I added the garam masala when I added the coconut milk. I didnt have ghee so I poured a small amount of melted butter over the top. The dish came out fantastic!

They come from a place where no one uses coconut milk. 2. they're afraid if they use regular milk it might spoil the dish. 3. Also, they ask about rice because they aren't sure if a different rice would work. I'm from NorthEast and we have our own pulao and we don't use basmati rice and the texture is drastically different from the mainland pulao and biryani.. So I would like to know if I can use the rice at home and whether the different texture will affect the taste of this particular dish.

Also added curry leaves while cooking the chicken. And homemade coconut milk. Served with some raita - curd, salt, green chillies and coriander.

Just Mind boggling!!!! Superb process, very nicely cooked!! Just a little request to add garam masala and ghee, mix them well and just before finishing cooking, add these chopped coriander leaves and cover the lid. Before serving add 1 Tb spoon ghee just for aroma! :) However your cooking skill is really great!! :)

Today is my turn and I am lil nervous as this is the first time that I would be making biriyani and also because people have expectations, but most importantly mine needs to be better than his or atleast the same . Wish me luck 😅😅
