🍩Ingredients
▪︎Doughnuts
• All-Purpose Flour 250g
• Active Dry Yeast 5g
• Sugar 40g
• Salt 3g
• Nutmeg 1/4tsp (can be omitted)
• Warm Milk 130g
• An Egg
• Softened Butter 20g
• Powdered Sugar (for dusting)
▪︎Milk Tea Cream
• An Egg Yolk
• Milktea 120g
• Cornstarch 5g
• Whipping Cream 200g
• Sugar 90g
• Vanilla Extract 1/2tsp
▪︎Tapioca
• Tapioca Pearls 150g
• Brown Sugar 60g
• Water 20g
Instructions
1. First let's make our dough. Stir together warm milk, a little amount of sugar, and yeast and let bloom for about 5 minutes.
2. Merge together the rest of the sugar, flour, nutmeg. knead until smooth about 7-8 minutes and then adjoin the butter and fully knead until just smooth.
3. Form the dough into a large ball and oil it to prevent the skin from forming. Then put it in a covered bowl and keep it in a warm place for about 1.5-2 hours.
4. Roll the dough into a log then equally cut yield about 8pcs of donuts but you can weigh in at 60g each for the perfect size. Roll the dough into a ball and flatten it in floured parchment paper separately. Let rise again for about an hour, until doubled or tripled in volume.
5. While waiting let's prepare the cream, in the pot put the egg yolk, sweetened milk tea, and cornstarch mix then put over medium heat fire.
6. When it starts to bubble, cook for an additional 30 seconds. It may look like it going to curdle, but keep stirring.
7. Transfer to a bowl and stir until silky and smooth. Cover with plastic wrap that touches the surface of the custard. This will keep it from getting a film. Let cool a bit, then put in the fridge to chill.
8. Now that we have the custard or creme patisserie part finished, we can make the diplomat cream. Whip the cold heavy cream to medium peaks. using a mixer. mix
9. take out the cream pastry out of the fridge and add the vanilla mix well and move all the mixture onto the diplomat cream. combine using a mixer, after combining move the mixture into the piping bag then set aside until ready to use.
10. Pour the boiled tapioca pearl into the pan add sugar and water, stir a bit then set on fire. Keep string the tapioca while cooking, cook until the sugar becomes caramelized.
11. Heat 1½ inches of oil in a heavy pot to 350F. To fry donuts, drop one at a time and allow to become golden before turning to the other side, about 1-2 minutes per side.
12. Transfer to paper towels or wire rack to drain. Let cool.
13. Cut a ring in the middle do not cut it through, only halfway and fill the brim with cream. sprinkle the donut using powdered sugar and put the tapioca pearls on top.
