      As a Ruby, Ruby and Aaron would not at all work as partners. But they would make great friends. Aaron’s tend to be unintentionally hilarious, and their hidden anger gains them some respect from the Ruby.

    Firstly I want to say I appreciate the longer versions and know there's so much time, effort and planning that goes into even a 30 second clip let alone longer. And yes yes yes there is always an ecosystem in the restaurants. Once the head chef has finished venting there always seems to be a certain calm or things go smoothly afterwards. It's a necessity really. Love this🤗

      Same here! Three weeks ago, one of our head chefs LITERALLY vented HARD on our GM who decided to vent right back at him (but she's a sweet lady, we were ALL having a REALLY bad day that day), and they went back and forth until my GM eventually corraled the cook into the office, they had their spat and they both came back out cool and (my brother says) calm as cucumbers like NOTHING HAPPENED. I turned to my ETC and said, "I've never seen a cook yell at a manager like that!" And she replied, "I have. It's not the first time those two have let into each other like that." And I was so shocked I had to sit down for a moment to process it!

    Ruby seems like she's gonna be the "numbers worker". The one who should be handling finances, inventory, and things to that nature. She sadly never gets her input sent through management but doesn't stop talking about it all.

      Issue is the numbers person also kinda super cheap, remember working with somebody who would only give 2 lamb lollipops for an event special because 'lamb by the rack is expensive' which granted would be, if we did lamb every night, nope this was a once a year thing for Valentine's day dinner event, fast forward to end of the night and we have a shit ton of extra lamb that all us workers had to take because just tossing it would've actually been a waste of money

      Usually, it's because the kitchen manager (or Chef) beats it into them. Certain items are just for markup and then others are actually quality and you should do everything in your power not to waste them. Things like escargot, beef tenderloin, swordfish; things that you probably run out of each night because they are not on special but sell extremely well anyway.
      My current restaurant buys as many mussels as we are allowed to, and still sells them all before Sunday.

    Here's what's lovely about this channel. People like me, who aren't in this particular industry can laugh and enjoy. But people like my brother who (humble brag) is a chef at a 2 michelin star restaurant. Can also laugh, but relate to it because of how authentic. You've found the sweet spot.

    I love this. Got my own kitchen recently and was determined not to be an asshole like my previous chefs. I'm not perfect but so far so good! Someone is always unhappy, can't please everyone, but the feedback I get is overwhelmingly positive. The owner is happy, the staff likes working with me, nobody is afraid to approach me, and shit gets done. For my longer lasting staff I request raises (which are always approved) and basically they're free-range. They know what needs done, they have freedom to decide what to do next, and I half keep an eye and might redirect them and will tell them what to do if they ask me, but usually they don't even need me. For my newer staff I say I will teach them anything if they ask me, I'm huge about training and sharing information. I'm training someone currently and I said what I always say, "I spent 45 thousand dollars on my degree and I see no reason why you should have to as well. I'll share." That's why we stopped requiring experience when I became the head baker. I convinced the owner that I could take the right someone with no degree or experience and proved it repeatedly. This current new person is SUPER excited to learn how to make croissants so I'm prioritizing that for them. Like I still need them to make cookie dough and less exciting stuff, but fuck yeah I'll teach them all about laminating dough! One of my bakers is fresh from highschool, one is a former marine, one was a teacher, one is also classically trained like me, etc. He even tried to tell me we should only take inexperienced people because I do so well with them and I laughed and was like, "lets not go that far." I've also refused experienced people in interviews, like I interviewed a guy with years of experience and this is a stage, a working interview, and he failed the second he walked across the kitchen with a knife blade up and out and not saying "sharp!" or "knife!" I was like, "If he didn't learn it yet I can't help him."

    So, my husband and I went out to a popular BBQ chain restaurant and had a server who was new - had only been a server for less than a month and he was killing it! He was fantastic. We told him that he absolutely had to watch your videos because he would totally relate to them. Love all your stuff! Keep it up!

    Watching this makes me think of my cousin. The guy is a chef, went to a really good culinary school. Helped set up new restaurants and and even ran one for 10 years before the owners pulled the plug. He is one of the chillest nicest people you can meet, outside of the kitchen. Inside the kitchen completely different person.

      No it's just how a toxic work environment functions
      Yelling at the servers is absolutely verbal abuse and the servers don't have to lie blaming the kitchen. This whole thing just facilitates everyone beings their worst selves
      In a decent work environment this doesn't happen and people are much happier. There's a reason most chefs are alcoholics and people are servers usually only for the money, it's because the environment is terrible, and it doesn't have to be

      I still have nightmares about waiting tables at Applebees and I’ve been out of food service for nearly ten years. Now I work in hospice care. I spend ten hours a day surrounded by people dying and the thing that haunts my sleep is that dream where I’m moving in slow motion and every table wants something from me and everything’s going to shit.

      I've done Valet at many Restuarants, never had that rude of customers as I just deal with them when they come in and when they leave, most of them drunk or buzzed at that point. The exception is the current restaurant I'm at, the management team allows the customers to walk all over the employees and feel like they own the place which has lead to customers being extremely entitled like cussing me out because I don't remember them when they've only Valeted Twice or demanding free dinner because I forgot to open the wife's Car Door. Really kills your self esteem when people treat you as a Disposable especially when your boss not only sees it happens but not only doesn't stand up for you, but is also Nice to that same customer immediately after

    Discovered these today.
    Very nice work very cathartic to watch as someone in the food service.
    It's an easy subject to just turn into mean takes and sarcasm and i'm glad you've avoided that. The reality is plenty toxic on it's own and this is a nice little escapism of "Thank god it's happening to someone else".
