How To Make Chocolate Babka with Breads Bakery

- Edan Leshnick of Breads Bakery in NYC makes decadent chocolate babka in the Munchies Test Kitchen. Edan starts with the dough, made with whole milk, eggs, sugar, salt, vanilla, butter, yeast, and two kinds of flour. The mixture is blended slowly in a stand-up mixer to form the babka’s stretchy gluten texture.
After letting the it rest, Edan rolls the dough into a long, thin sheet, spreads on a layer of Nutella, and sprinkles in chocolate chips. Then, Edan rolls the dough tightly into a roulade to create lots of layers. After cutting his roulade in half, he braids the dough into its famous babka shape, places it into molds, and bakes. Finally, when the babkas come out of the oven, he covers the crust with his simple syrup resulting in a sweet, caramelized treat you won’t want to share.

for the dough:
3/4 cup|170 grams whole milk
30 grams fresh yeast
2 1/4 cups|325 grams bread flour, sifted
2 1/4 cups|325 grams pastry flour, sifted
2 large eggs, at room temperature
1/2 cup|110 grams granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
8 1/2 tablespoons|120 grams unsalted butter, at room temperature, cut into cubes
for the chocolate filling:
450 grams Nutella
1 1/3 cups|200 grams bittersweet chocolate chips

Leshnick (or a slight variety of this word) actually means HAZELNUT in most southern Slavic languages, so it's such a delight to see "Mr. Hazelnut" making hazelnut spread babka

Breads is my fav babka ANYWHERE. Lighter than the rest, wonderfully steamy, depth in a darker chocolate than others in NYC, and just the right "pull" when you tug and bite into it. 😍
I just had this at Breads Bakery. It was super good and has like a croissant bread texture with Nutella and dark chocolate. Not overly sweet 😋

Babkas remind me of that episode of "Perfect Strangers" where Balki was making Bibbi Babkas. So having never tasted one, it brings me back to my childhood.
Finally ...i tried this recepy....and im sorry...its totally fail...the final product is not like in your video...and if may i let you know about my opinion.. this is my opinion...i believe now that all the recepies in the you tube channel are 90% fail..they hide the truth recepies...thanks
@@khadijahmarrie4670 its not my recipe. You should try it a few more times. You expected perfection on the first time. That's never going to happen. Weather plays a huge factor in dough making.

Alright, I've never watched anyone else make babka, only made it myself from a paper recipe, and my dough has always been nice but I think my hydration has been just a hair low. His dough is more supple than mine, and doesn't shrink back as much. Very informative!
I have made babkas with just A.P. flour. I think since he uses some pastry flour it gives the dough less gluten and more "give".

I’ve heard wonderful things about the Breads Bakery Chocolate Nutella Babka recipe so I decided to try the recipe posted on the Breads Bakery web site but it came out more like dense bread instead of Babka… and now I see why. The posted Breads Bakery recipe is not at all what you show in your video. Different ingredients (milk vs water) among many other important differences. The recipe says to follow the Breads Bakery challah recipe (which I did) up to the braiding and filling part. For anyone reading this - don’t bother. It’s not very good. The dough is incredibly dense.
I was about to trash the Breads Bakery Nutella Babka recipe and move on to one that I typically follow (and love) for cinnamon Bab - just sub the filling with Nutella - but I will try your version first in case I am missing out on a truly magical Babka moment. :-)
