🍗 SMOKED TURKEY HALVES ON THE WEBER KETTLE 🍗
The Mop:
2 cups distilled white vinegar
1/4 cup brown sugar (or granulated sugar)
2 thin orange or lemon slices
1 tbsp black pepper
2 tsp cayenne pepper
1/2 tsp red pepper flakes
Combine ingredients in a saucepan and bring to a simmer on the stove. Cook until the sugar has dissolved. Remove from heat and let cool completely. Throw away the orange slices.
The Turkey:
Split your turkey in half and cover both sides with your favorite BBQ rub or seasoning. Place in the fridge until it is time to cook.
Set up your charcoal grill for indirect cooking, You will want the coals on one side and the meat on the other. Be sure to use an aluminum pan with some water to help control heat levels inside the grill.
Use enough charcoal to keep your grill temps around 300 degrees for 3-4 hours. When the grill is ready, take the turkey from the fridge and lay both halves on the grill, SKIN SIDE DOWN.
After one hour, flip the turkey and start basting with the mop. Cover and cook for another hour. After two hours, flip the turkey again and baste with the mop. Cover and continue to cook, mopping the turkey every hour until internal temp of the breast reaches 160 degrees and thighs reach 175. Remove from grill and let rest at least 30 minutes. I would definitely use the mop again, it was really good and I don't mind some spice! 😉 For charcoal I was just using some no name brand I picked up from Home Depot. I think I just needed to load up more in the beginning so I didn't lose momentum as the cook went on.
Our gator has been making an appearance almost every day for the last week or so, in fact she's out there right now as I'm trying this!
