Jake you are so right man. Italians cook pizza, bread, calzones, and in the middle east today they still use the exact same type of oven to make bread. And they've use these techniques for hundreds of years. So it's quite silly for people to question how healthy it is to bake this way.
Dude in a couple years all those logs and wood chips (and even pine needles!) will break down to form the most incredible soil. That stuff just gets better with age. Cant wait to see how the garden progresses!

When you're kneading bread dough, every now and then, pick it up and slam it against the table/bench. My Mom, a professional Chef/Baker, as I am, always told me her bread came out best when she was maddest at my Dad. You can take out a lot of frustration, that way, lol. Next time you get to town, buy a sprayer and just before you add your loafs, give your oven a 5-6 fine sprays of water add your loafs, and then again about 5 minutes later. This keeps the bread crust from forming to soon, and allows further expansions of the loaf, This is called, "Oven Spring". This results in a bigger loaf and a thin, cracking crust. Like my Mom taught me, "Son, just do it until you get it right".

What a treat to get to visit with you for over an hour. It is fascinating to see how you do everything with such ease and determination. The food you cooked looked outstanding and it will be amazing to see all your trees, etc that you bought once they are matured...what a difference it will make on your property. Seeing Puma and Kai interact with you all is so heartwarming.....I would love it to be in a position to have dogs like them! What you all do makes me want to do the same but all I can do is enjoy what you do....thanks so much!
A very good point about us being too hygenic, clean and paranoid about general cleanliness. As kids, we used to eat dirt, worms and never ever washed our hands (except when mum told us to do just before dinner/tea!)...
I totally agree. I raised four sons. The more they are exposed to, the better their immune system will be. Mum's also pass on a ton of immunity if they nurse their kids at least for two weeks. Even the docs say all these antibiotic soaps are overdoing it. Washing with regular soap kills most germs. (Pre-covid) viruses don't like to kill off their hosts, so they morph into less lethal variants, like the common cold.

I may not be able to feel exactly what you feel, but I can remember how I would feel upon returning to home and I can also smell the air and taste the water there is no smell like the forest and even lake water is better than the best water we have in town, but spring water or chuckling, laughing water spilling over hard rocks, the damp, woody smell of wood chips turning into fertilizer, wood smoke and the mixture of all the scent of pine and cedar make lasting memories that live on and on in my mind.... but watching Nicole making bread and cookies and baking in your wood fired oven is the magic spell that helps me remember how it feels to come home to what you love....Thanks for all the things I can not purchase....
Hey you two, tips for Cinnamon Rolls, don’t liquefy your cinnamon‘butter’ before adding to your dough. Definitely add the sultanas etc at that time. To tell if your bread is cooked, hit the bottom of your loaf, it should sound hollow❤️✨

Yes, i do believe in big foot. I'm 63 and have lived in Washington State most of my life. I love the outdoors and have spent a fair amount of time in nature. I absolutely believe.
You guys are great is an understatment I've learned several thing just from watching.. Hope to be your neighbours one day... Anychance you can do a vlog of pre preparations one should start accumulating (from seeds, beans... Solar panels what tools(axes poterie etc) almost an inventory of what you took with you leaving society. I have two kids.. The nervousness of being able to set up camp in a timely manner is all to real. Mentally I'm off grid... Both mine and my wife job can be threatened by not getting the vaccine. We're still fighting to stay in society and I have no idea why.. You give hope! nothing excites me more than going back to primal Living. Leaving the 9-5 and start living...🖖🇨🇦❣️

I sent Sasquatch info months ago to give you a heads up??? Vancouver Island and British Columbia are well known hot spots, dating back hundreds of years. The First Nation's can certainly verify what I'm saying. They don't "play well" with dogs, and they are, for lack of a better word, attracted to human females. Keep an eye on both, Jake! I have, in the past recommend that you guys carry firearms. The bears, wolves and panthers are a good enough reason for that. I personally would not holster less than a 44 magnum. If you don't want to carry it, at least have it handy nearby where you happen to be working, etc. I am absolutely serious about everything I just said.

i do get very excited and amazed about decomposing or composting, watching you for some time now I burry every discarded food items, peelings, napkins, tooth picks, etc and it is amazing how I get peach trees and avocado trees quickly and strongly growing out of the compost piles, it is so nutritious for plants that decomposing environment that it'll be a crime not to do it.

You seem much different in your personalities when you still live in the apartment and going out and traveling to when you two sold everything and moved off grid. To be honest I only noticed the difference in you two because I started watching once you lived off grid for a while first. For Kai and Puma, would like to request you guys to get a dog bed for each of these two important members of your family to rest on, they deserve much better than the yurt floor.
For your 2 dogs' benefit, for their happiness and health, please do provide raw meat bones for them to chew on, and provide toys for them to play with.
Would be nice, if you can construct an outside shelter for them on the front porch, with their bowls for water & food in place.
With both of you being vegan, it raises concern from this owner of Siberian huskies, would like to know Kai & Puma's diet, what all do you feed them.

I'm always impressed by the amount of control and balance that animals have when shaking themselves off after a swim. If we tried the same, we'd fall flat onto our backside or have a concussion, maybe both!

I agree with you about people losing touch with the old ways of cooking. If they go camping though, they eat food cooked directly over the fire, there is ash in it, which for the most part is beneficial.
People have lost touch with where their meat comes from and do not respect the animals they eat.
Your outdoor oven is amazing! I hope it serves you for many years, it used to be how everything was baked. How was your learning curve for cooking. I lived a little of what you live now and I respect what you are achieving.
