This was a really special video. Can I say "magical". Of all the projects I have watched come together at Komorebi the pizza oven feels to me that you, Jake and Nicole, are now permanently connected to your land. Yeah, I know, I am probably just mistaking several tons of brick, clay and concrete for feelings of connectiveness. Yet.. I do feel the oven is a special step in the Komorebi journey.

I'm a roofer not a mason, but, it's not easy. If it was everyone would do it. You're doing a good job.
Roofing don't look easy when I see roofers sweating and working with hot oil or the metal roofing.i do traditional Pueblo masonry.truck loads of lava rock for the foundation then sandstone truck loads for the wall.digging a knee deep trench for the foundation..mixing mud and moving those heavy lava around like a puzzle.once it's all done and you have a foundation up three feet past ground level then you can start mixing more mud and doing the walls(windows,door frames)then hauling the wood beams ontop..for a traditional roof(if you like the zigzag pattern or just straight sticks)you put them ontop of the beams..add dry flattened yucca plants..then layer's of dirt.plastering and chinking the walls is fun.
The oven is art...Its also a puzzle and made to exercise the mind . That's as deep as I go...looks great

I made a cob pizza oven years ago together with Christo, an American guy.
I remember we did a layer of straw 5 cm thick with only some very wet clay in between the inner dome and the outer cob layer.
Eventually the straw will burn away and so leave an insulating layer of air and some loose clay structure.
Very important for the bread baking when the fire is taken out. Otherwise it cools too quickly!
Won't the cob layer itself do that? It's mostly straw and clay.
We were told that it was done for the sake insulation. And that makes sense to me, because it is the air pockets created give that effect.
Sure there is some insulation in the straw but it will not be enough to keep the oven hot enough.

Jake, have you guys considered a business growing and selling foraged fungi, or your vegetables to local restaurants at all ? Am thinking you could set up a couple patches with different wood species as appropriate to grow them in quantities.

That was a lot of work building that pizza oven! FYI - Outdoor pizza ovens that use either wood or charcoal can be bought for less than $500 online.
You know with all those stream sources, you should look into off grid hydro power generators. Through gravity and streams you generate electricity.

That’s crazy.I just got my EB 240 today.I got it for backup in case the power goes out in the winter.I need it to run the NG fan on my home heater.Very heaven.I also bought a set of solar panels to charge it if power goes off for an extended period of time.

These ovens usually have openings that are not as tall also the exhaust exit inside the oven is lower to trap more heat, and have more efficient insulation, like ceramic wool or rock wool that are fixed by wire or a metal net and then plastered over.

I’m curious why you didn’t put a chimney on the pizza oven? Wouldn’t have to deal with all the smoke coming out the front. The Chimney also helps with the air flow or draw as it’s called. As the hot air exit through the chimney it draws in air from the front opening. This helps provide oxygen on the fire. Looks like you where having a little issue keeping the fire going. Yes I know there are ovens all over Italy without chimneys, but those are built my masters with the correct dome height to opening ratios. You could still build a brick flue on the front to help with the smoke. Check out Forno Bravo’s forum, there is a ton of information on there with people building ovens all over the world. Looking to build my oven next year.

I don't understand your putting Solar panels on your truck yet right above you are power lines, and in many of the videos when you do aerial shots we see another SWR power line, and the amount of power tools you use you must be on grid

You are the only off grid that I've seen with a pizza oven. Great idea. You can also use drying fires to warm up while outside. The wooly worms are all black this year that translates to a severe winter. Sorry if I'm the one to break the news but its better to be prepared as you well know.
