  • Jake and Nicole are starting their family and building a home for themselves off the grid. Many of our audience wanted to have a video montage of the food we cook, eat, drink, prepare, dehydrate, forage, grow, and catch...THIS IS IT! This video shows about a 1 hour compilation of our favorite food dishes and methods of cooking from the past 6 months! We edited down the "vloggy" parts, talking, and other storylines in order to just focus on the food and many of our favorite ways of cooking everyday! Every month that goes by we are trying to get ourselves "off the food grid" and be totally self sufficient here at Komorebi. Subscribe and tune in to see if we can become self sufficient in terms of food, power, and travel by the end of 2021! We read all our comments so please leave a nice comment or question below! • LIVING OFF GRID - What...

    love you guys! I built a pizza oven a year ago, and i found that if i heat the oven enough, I actually pull all the coals out and then swab the floor with a wet mop. I get a better tasting pizza and breads without the smoke flavor and cooks more even. My oven will hold a nice temp for a very long time without a fire going inside.

    I grew up in the 80ties, in Soviet Union. On my grandma's farm. We cooked on the wood stove, our only source of water was well water, everything we ate, we grew. Starting from buckwheat, potatoes, apples, abundance of berry bushes. Our pillows were made of goose down, funny how that is a luxury today. Back then they were the softest thing on earth. We were completely off grid until I was 18. My grandma passed away, my parents slowly sold her farm, after being able to buy it with privatisation certificates and we moved to a small town. And then, years later to a capital city. My God, I sometimes wish I can go back in time and live there again. If there ever is a place I want to return, it's my grandma's farm. Back when I was a little girl. To me it was a paradise. Watching you brings back memories. But I also remember how incredibly hard we worked. All day and night. I remember my dad's hands all worn from cutting firewood, my mom's back aching from carying well water. Their precious bodies worn out from hard labour. I wish you both strength and a lot of health. Take care of yourself asny way you can. You work incredibly hard.

    You need to control the fire so when you're cooking its not like you are in a race with the fire. My family used to cook using fire all time back then cause we just cannot afford gas and burner. Take out some of the wood so the fire can stay low once it reach the suitable temperature for cooking. Charred food doesn't taste that good after so long. I remember how hard that times was. Such a blessed and happy times too.

    • @pureenergy5136
      @pureenergy5136 Před 3 lety +4

      Yes, I thought and wanted to say the same thing when I saw it before. At some stages of the cooking, one needs to 'control the heat'. And to control the heat...if one were cooking on a stove for instance...they would turn the knobs up or down, etc. So with a wood fire, since there are no knobs to use to control the heat. One has to think with this another way. Basically learn to think with and use other methods with which to control the fire. Control the fire...control the heat. So a new fresh fire...will give off lots of flames (hot flames) because the fire is fresh and has all that fresh wood/fuel to burn through. An 'established fire' typically possesses more heat...than it gives off big flames. So in this concept...it is a matter of timing. Timing your heat to your stages of cooking.
      The other part (also very important) is to learn how to manipulate and manage the 'fire'. Not the flames...the fire. When you have a big...raging fire like Jake had (cooking the curry and the chipati) it was obviously too big and out of control...for the purpose and performance that it was needed for. What you could do with that JakOle...is to do something that is called 'pulling the fire'. Pulling the fire literally means to take it apart. And just like you would turn the stove knob to semi-high, medium or low... You would pull the fire apart a little bit, a medium bit or a lot...for low. Taking the fire apart (as in disassembling it)... AKA 'pulling the fire is the way you could manage the strength and amount of heat needed or wanted. Keeping in mind that pulling the fire should be done only after the fire is well caught and adequately established. That way it will maintain its 'viability' and not go out, even when pulled apart a little bit. Also know that when and if you need increased/high heat again...the same way you pull the fire apart to modify or decrease the heat...pulling the fire back together (and adding more wood if you need to) will increase the concentrated heat again.
      Also, I totally get and appreciate how much you enjoy 'smoky flavour' and 'wood fire cooking' flavour, but be mindful of eating and how much you might be eating 'charred food'. Too much charred food isn't good for you. Nicely baked, brown/crunchy, OK, but charred/burned foods, not too much.
      And yes, I'm totally jealous. All that delicious baking and preparing going on...That yummy stone/wood oven baked bread...and cinnamon buns n stuff...OMG! And then you talk about how good it smells... Yes I know! I think I could smell it from here. (But give the dogs a little supp'm supp'm nuh. (Nuh...is a little Jamaican expression :). Pizza crust is delicious to them, and is good for their stomach). Thanks for the vid guys. You guys are awesome cooks... Or should I say Chefs? Burgeoning Chefs...Nice nice nice

      @@pureenergy5136 that is a looong way to describe it. Haha. Yes, we used to cook rice with just the ember cause rice need to cook slowly. But still we will get charred rice crust at the bottom of the pot. But my mom love those crust (but now when i think about it, she probably just said that cause she want us to eat the fluffy rice and just give her the leftovers). Me and my siblings not so much.

      @ac242 Před 2 lety +2

      They already have a flue for the smoke just in front of the oven's opening, and adding another one, maybe in the center of the oven, will result in a waste of wood and heat; the real error here is that they have the front open too big in regard of the oven height and the dimension of the base; the mouth should have been more or less half in height, and the overall height of the oven should have been 30% lower at least; with this design they loose a big amount of heat and they get an enormous amount of ashes, resulting in harmful food and bad breathability all around the place of the oven

You sound like you would be a twin to one of those lively crabs. This young couple has a wonderful love, companionship and compatible force and vision to take on such a project. Why don't you just go crawl under your rock and let the rest of us enjoy this wonderful vlog.
